CACCIATORE-STYLE CHICKEN



Cacciatore-Style Chicken image

A hot and hearty Italian dish, cacciatore showcases chicken, tomatoes and mushrooms.

3 boneless skinless chicken breast halves (3/4 to 1 lb)
1 tablespoon olive or vegetable oil
1 medium onion, chopped (1/2 cup)
2 cloves garlic, finely chopped
1/2 cup chopped green bell pepper
3/4 cup sliced zucchini or yellow summer squash
3/4 cup sliced mushrooms
1 can (14.5 oz) diced tomatoes, undrained
1/2 teaspoon Italian seasoning
1/8 teaspoon pepper
2 cups uncooked farfalle (bow-tie), radiatore (nugget) or rotini pasta

Steps:

  • Cut each chicken breast half crosswise into 3 pieces. In 10-inch skillet, heat oil over medium-high heat. Cook chicken in oil about 5 minutes, stirring frequently, until brown; move chicken to one side of skillet.
  • Add onion, garlic, bell pepper, zucchini and mushrooms to other side of skillet. Cook vegetables about 3 minutes, stirring occasionally, until crisp-tender.
  • Stir tomatoes, Italian seasoning and pepper into vegetables and chicken. Heat to boiling; reduce heat. Cover and simmer 25 minutes. Meanwhile, cook and drain pasta as directed on package.
  • Uncover chicken mixture and simmer 5 minutes longer. Serve over pasta.

1 (20 ounce) package Simply Potatoes® Shredded Hash Browns
1 (26 ounce) jar marinara sauce
1 (24 ounce) package frozen bell peppers, strips
1 lb boneless skinless chicken thighs
pre-shredded mozzarella cheese

Steps:

  • Place the marinara, peppers and chicken in a slow cooker on low for 6-8 hours.
  • Shred the chicken.
  • Prepare the hashbrowns according to package directions.
  • Ladle prepared sauce onto hashbrowns.
  • (Optional) Melt the mozzerella cheese on top of the dish! You can do this on an individual dish basis. Just make sure your plates are oven safe and remember that they will be hot when you take them out!

  • Rinse chicken and pat dry. Season the chicken with 1 teaspoon of salt and 1/4 teaspoon of pepper. Dredge the chicken in gluten free flour to coat lightly. Heat oil in a dutch oven or wok over a medium-high heat. Add the chicken in batches and braise on both sides. Remove and set aside.
  • Add garlic and cook about 30 seconds being careful not to burn the garlic. Then return chicken to the pot.
  • Pour tomato sauce into a separate bowl. Add oregano, salt and pepper to taste. Stir and pour over chicken.
