Honey Garlic Chicken image

The mellow flavor of chicken pairs well with honey, orange juice and garlic. Broiling for a few minutes gives the chicken a little golden color.

4 boneless skinless chicken breast halves (4 ounces each)
2 tablespoons honey
2 tablespoons orange or lemon juice
1 tablespoon canola oil
1/2 teaspoon salt
Dash pepper
1 to 2 garlic cloves, minced

Steps:

  • Place chicken in a greased 13-in. x 9-in. baking pan. In a small bowl, combine the remaining ingredients; pour over chicken., Bake, uncovered, at 400° for 15 minutes. Broil 4 to 6 in. from the heat for 5-7 minutes or until juices run clear, basting occasionally with sauce.

Chicken breasts bathed in a tangy, citrus honey marinade, then baked. This is a great marinade for chicken breasts. For a more low-fat recipe, try reducing the amount of oil. As far as I can tell, it's just used to 'glue' the marinade to the chicken.

¾ cup orange juice
2 tablespoons fresh lemon juice
¼ cup olive oil
½ cup honey
1 teaspoon salt
½ teaspoon ground black pepper
1 teaspoon curry powder
½ teaspoon paprika
4 skinless, boneless chicken breast halves

Steps:

  • To Marinate: In a nonporous glass dish or bowl, combine the orange juice, lemon juice, oil, honey, salt, pepper, curry powder and paprika. Mix well, then add chicken breasts and toss to coat. Cover dish and refrigerate to marinate overnight.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Remove chicken from marinade, discarding of any remaining marinade, and place in a lightly greased 9x13 inch baking dish.
  • Bake at 350 degrees F (175 degrees C) for about 20 to 25 minutes, or until chicken is cooked through and juices run clear.

I found this online when I was looking for new ways to cook chicken leg quarters, and the menfolk at my house loved it. I love the way it fits into my budget. Although I have not tested it yet, I see no reason why you couldn't make this a dump recipe for OAMC. I have also used the leftovers for some yummy fried rice.

1/2 cup ketchup
1/4 cup soy sauce
1/4 cup honey
2 garlic cloves, minced
3 lbs chicken leg quarters (about 4)

Steps:

  • In a gallon size freezer bag, combine the ketchup, soy sauce, honey, and garlic. Put chicken in bag and squoosh around to coat in sauce mixture.
  • Marinate for an hour, or overnight, if desired. Turn the bag from time to time to coat the chicken evenly with the sauce. (Or freeze at this point, and let the chicken marinate as it thaws overnight.).
  • When you are ready to bake the chicken, arrange it on a well oiled baking sheet. If there is any sauce left in the bag, pour it evenly over the chicken in the pan. Throw the bag away (ewwww, raw chicken bag, bad for reusing!).
  • Bake the chicken at 375 degrees for 45-60 minutes.
  • NOTE: You could, of course, grill this recipe as well. Or use other bone-in pieces, or boneless pieces (although the cook time would be less for boneless).

This chicken dish combines elements from three of my favorite chicken recipes: chicken curry, chicken tagine, and a Creole-style smothered chicken. The braising liquid is rich and delicious, getting its yellow golden color from turmeric and saffron and its intense flavor from a low-and-slow simmer. Serve over buttery mashed potatoes, rice, or noodles. Ladle the sauce over top, and garnish with sliced green onions and minced jalapeños.

4 (12 ounce) chicken leg quarters
2 teaspoons kosher salt, plus more to taste
1 tablespoon olive oil
1 cup diced onion
½ cup diced celery
½ cup diced jalapeño pepper
2 teaspoons ground cumin
1 teaspoon smoked paprika
¼ teaspoon ground coriander
¼ teaspoon ground turmeric
½ teaspoon freshly ground black pepper
⅛ teaspoon cayenne pepper
⅛ teaspoon ground cinnamon
3 cloves garlic, crushed
1 tablespoon tomato paste
3 tablespoons white wine vinegar
2 ½ cups cold water
1 teaspoon saffron threads, crushed
1 teaspoon dried currants
1 teaspoon chicken bouillon base

Steps:

  • Place chicken leg quarters on a work surface with the skin facing up. Make a cut into the thickest part of each drumstick, all the way down to the bone. Then make two cuts, about 1 inch apart, right in the center of each thigh. Season both sides generously with 2 teaspoons kosher salt.
  • Heat oil in a large skillet over high heat. Add chicken, skin-side down, and sear until skin is nicely browned, 5 to 6 minutes. Flip and sear for 2 more minutes. Turn off the heat and remove chicken to a plate, leaving any rendered fat in the skillet.
  • Turn the heat back on to medium; add onion, celery, jalapeño, and a pinch of salt to the skillet. Sauté until onion turns translucent and veggies have softened, 5 to 7 minutes. Add cumin, paprika, coriander, turmeric, pepper, cayenne, cinnamon, and garlic; cook and stir until garlic has cooked a bit and spices are toasted, about 2 minutes.
  • Stir in tomato paste, vinegar, water, and saffron. Increase heat to high and stir in currants and chicken base; bring to a simmer.
  • Add chicken to the skillet, skin-side up, and reduce heat to low. Baste chicken with the liquid. Cover and cook over low or medium-low heat at a gentle simmer for 1 hour.
  • Flip chicken, cover, and simmer gently until the meat is fork-tender and almost falling off the bone, about 30 more minutes.
  • Flip and baste chicken again. Increase heat to medium and cook, uncovered, until chicken is very tender and the braising liquid has reduced a bit, 20 to 30 minutes more.
  • Taste the braising liquid and adjust seasoning if needed before serving.

This chicken turns out so good and it's pretty simple. I've made it for Easter Dinner several years.

Number Of Ingredients 8

4 lbs whole chickens
1/2 cup honey
1/2 cup dry white wine
6 tablespoons soy sauce
1 1/2 cups water
4 tablespoons water
2 teaspoons cornstarch
salt & pepper

Steps:

  • Pre-heat oven to 400F.
  • If chicken comes with neck and giblets them pull out and discard. Also, pull out fat from inside of chicken, and rinse.
  • Set chicken in roasting pan, Roast for 20 minutes.Meanwhile, mix 6 tablespoons honey with the wine, soy sauce and pepper in a small bowl.
  • Remove chicken from oven and brush all over with honey mixture. Add 1/2 cup of water to roasting pan. Roast chicken 20 more minutes.
  • Turn chicken over and brush all over with honey mixture. If it's browning to fast, cover with foil. If pan is dry, add a few tablespoons of water. Roast 10 - 20 minutes longer or until juices run clear. Move chicken to a cutting board.
  • To make sauce, pour the juices from the bottom of the pan to a small sauce pot. Skim off the fat. Add in any unused honey mixture. Bring to a boil.
  • Mix corn starch with 4 table spoons of cold water and wisk into chicken juices. Return to a boil. Simmer 1-2 minutes until thickened. Remove form heat and stir in remaining 2 tablespoons of honey. Season with salt & pepper.
  • Carve chicken and serve with sauce.

1 1/2 kg chicken
1 piece gingerroot, size of small walnut
1 spring onion
1 cup water
1 cup light soy sauce
3 tablespoons dark soy sauce
1 tablespoon shaoxing wine or 1 tablespoon dry sherry
1 tablespoon hoisin sauce
1 tablespoon honey
1 teaspoon sesame oil
2 whole star anise
1 bay leaf
2 teaspoons brown sugar

Steps:

  • Wash chicken well and pat dry with paper towels.
  • Place ginger and spring onion in the cavity of the chicken.
  • Bring the sauce ingredients to the boil in a saucepan large enough to hold the chicken. Make sure honey and sugar dissolve completely.
  • Place the chicken in the saucepan with the sauce. Bring back to the boil, basting the sauce over the chicken, then reduce heat to a low simmer.
  • Simmer the chicken for 15 minutes; the sauce should be just bubbling. Turn the chicken over to cook for another 15 minutes, then return the chicken to its back again for a final 25-30 minutes of low simmering.
  • The chicken is cooked when the flesh on the drumstick has shrunk back from the bone.
  • Remove the chicken to cool to room temperatures, then chop into pieces, chinese style, for serving.
  • To serve, spoon about 3 tablespoons of the reheated sauce over the chicken and garnish attractively with fresh spring onion curls.
