8 chicken drumsticks or thighs
1 tablespoon sesame oil
3 heaping teaspoons toasted sesame seeds
2 heaping tablespoons brown sugar (sub coconut sugar for paleo, omit for Whole30)
1 heaping teaspoon powdered ginger
1 teaspoon salt
2 cloves garlic (finely minced)
Optional: 1 teaspoon cayenne pepper

Steps:

  • Preheat your oven to 425 degrees. Line a baking sheet with parchment paper
  • Place the chicken in a medium-sized bowl and toss with the sesame oil. In a small bowl, combine all the remaining ingredients. Sprinkle over the chicken and toss to coat.
  • Place chicken on the prepared baking sheet, skin-side up, and bake for 45 minutes, or until the top is brown and crispy, and the chicken is no longer pink inside.
  • Get ready to lick your fingers!

Not something you would ever find in a fast food restaurant, these chickies pack a punch of flavor, and are very pretty too, on their bed of fresh spinach. For couth guests only! ;-) Note: I get the greatest grated ginger (how's that for alliteration?) by freezing the ginger root first and then grating it on a Microplane zester.

3 large egg whites (sometimes I just use two eggs)
1/4 cup soy sauce
2 tablespoons sesame oil
1 teaspoon grated fresh ginger
1 scallion, finely chopped
1 lb raw chicken breast (cut into bite-size pieces, but you can make them larger if you want, I'm not going to force you)
2 tablespoons grated fresh ginger
1/4 cup soy sauce
2 tablespoons dry sherry (drinking, not cooking)
1 teaspoon chopped fresh garlic
1 teaspoon sesame oil
1/2 teaspoon red chili pepper flakes
2 scallions, finely chopped
1 lemon, juice of (about 2 tablespoons)
1 orange, juice of (about 1/4 cup)
4 tablespoons sesame seeds, mixed with 4 tablespoons black sesame seeds (don't drive yourself crazy getting the black seeds, just double the white ones)
1/4 cup canola oil
1 lb fresh spinach, washed, dried, and stems removed

Steps:

  • Prepare the marinade first:.
  • Combine egg whites, soy sauce, sesame oil, ginger, and scallion. Whisk together until frothy.
  • Add the chicken and marinate, refrigerated, 30 to 40 minutes.
  • Meanwhile, prepare the Ginger Dressing:.
  • Combine the ginger, soy sauce, sherry, garlic, sesame oil, chili flakes, scallions, lemon juice and orange juice in a saucepan and bring to a boil.
  • Reduce the heat and simmer 5 minutes.
  • Remove from the heat and set aside while preparing the chicken.
  • Sesame coating:.
  • Mix the two types of seeds together. That's it.
  • Cooking the chicken:.
  • Drain the excess liquid from the chicken and dip them in the sesame seed coating, covering them completely on all sides.
  • Place the chicken pieces on a tray in the refrigerator about 30 minutes before cooking to allow the coating to dry.
  • This would be a good time to start preheating your oven to 350 degrees F.
  • Heat the canola oil in a heavy pan.
  • Saute chicken on each side until crispy on the outside. Use tongs to turn them.
  • Transfer them to a cookie sheet (I cover the sheet with parchment paper first) and place in the oven 3 minutes to make sure they are fully cooked in the center. (Yes, you preheated an oven for all of 3 minutes baking. Do you want salmonella? Just do it!).
  • Serve the chicken nuggets on a bed of raw spinach leaves and drizzle the Ginger Dressing over the top or put in a bowl to serve on a platter.

8 ounces skinless, boneless chicken breast
1 cup dry white wine
2/3 pound Kirby cucumbers
2 cloves garlic
Enough fresh or frozen ginger to yield 1 tablespoon coarsely grated
2 tablespoons Asian sesame paste
1 1/2 tablespoons reduced-sodium soy sauce
1 teaspoon sugar
2 teaspoons Asian sesame oil
1 teaspoon hot-chili oil
1 tablespoon rice vinegar
1 tablespoon white wine or dry vermouth
8 ounces very thin Chinese noodles or Italian spaghettini
2 scallions
Few sprigs cilantro to yield 2 tablespoons chopped
10 cherry tomatoes

Steps:

  • Bring some water to boil in a covered pot for the pasta.
  • Poach the chicken breasts in 1 cup of white wine, adding water if necessary to cover, for 10 to 15 minutes; drain, then shred.
  • Wash, trim and coarsely shred cucumbers; mince garlic; grate ginger. Combine with sesame paste, soy sauce, sugar, sesame oil, hot-chili oil, rice vinegar, and wine or vermouth; mix thoroughly.
  • Cook noodles according to package directions.
  • Wash, trim and slice scallions. Mix scallions with cucumber mixture, and chicken.
  • Wash, dry and chop cilantro.
  • When noodles are cooked, drain and mix with chicken and sauce, and sprinkle with cilantro. Decorate with tomatoes.

1/8 teaspoon salt
1/8 teaspoon pepper
2/3 cup sesame seeds
2 tablespoons peanut oil

4-1/2 teaspoons minced fresh gingerroot
2 garlic cloves, minced
4-1/2 teaspoons soy sauce

1 cup heavy whipping cream

Steps:

  • Flatten chicken to 1/2-in. thickness; sprinkle with salt and pepper. 24 ounces fresh Chinese thin egg noodles or fresh linguine
6 cloves garlic, minced
2 tablespoons minced fresh ginger
1/2 cup Oriental sesame paste
5 1/2 tablespoons low-sodium soy sauce
1 tablespoon sugar
1 tablespoon hot chili oil
3 tablespoons Oriental sesame oil
3 tablespoons rice vinegar
3 tablespoons white wine or dry vermouth
6 scallions, sliced
6 tablespoons chopped fresh coriander

Steps:

  • Preheat the oven to 375 degrees.
  • Divide the breasts in half, remove the cartilage and place them in a roasting pan. Roast for 25 minutes. Remove from the oven and cool.
  • Cook the noodles in boiling water until done, about two minutes. Drain and run cold water over them. Drain.
  • Combine the garlic, ginger, sesame paste, soy sauce, sugar, chili oil, sesame oil, rice vinegar and wine; mix well. Toss with the noodles and scallions.

1 large egg
