GOOEY GOUDA PUFF-PASTRY BITES

Gooey Gouda Puff-Pastry Bites image

These cheesy and easy four-ingredient appetizers will remind you of brie baked 'en croûte'-which is the French term for anything baked in pastry. Here, the delicious handheld parcels are made from storebought puff pastry and filled with nutty Gouda cheese. Topped off with a dollop of lingonberry jam for sweetness, they'll be the first to go on the buffet table!

Provided by Greg Lofts

Categories     Food & Cooking     Appetizers

Time 1h

Yield Makes 24

Number Of Ingredients 5

Unbleached all-purpose flour, for dusting
1 sheet (about 14 ounces) all-butter puff pastry, thawed
2 tablespoons Dijon mustard
1/2 pound Gouda, rind removed, cut into 24 approximately 3/4-inch cubes
Lingonberry jam and freshly ground black pepper, for serving

Steps:

  • Preheat oven to 425°F. On a lightly floured surface, roll out pastry to an approximately 11-by-16-inch rectangle. Trim edges straight to a 10-by-15-inch rectangle. With the tines of a fork, prick pastry all over at 1/2-inch intervals. Cut into twenty-four 2 1/2-inch squares (a 4-by-6 grid). Press each square into the cup of a mini muffin tin. Spoon 1/4 teaspoon Dijon into bottom of each pastry shell. Refrigerate until pastry is firm, at least 15 minutes.
  • Bake until pastry cups are puffed, golden along edges, and beginning to set, about 15 minutes. Working quickly, remove from oven and press a cube of cheese into center of each pastry with the handle of a wooden spoon. (Cheese should depress pastry to reach bottom of cup.)
  • Continue baking until pastry is golden brown and cheese is melted, 8 to 10 minutes more. Let cool in tins a few minutes. Transfer to a serving tray, top with jam, and sprinkle with pepper. Serve warm.

PUFF PASTRY BITES WITH CARAMELIZED ONIONS AND GOUDA

Puff Pastry Bites with Caramelized Onions and Gouda image

Sweet, savory and perfectly bite-sized for entertaining, these puff pastry squares are filled with caramelized onions, Gouda cheese and fruit spread. Great for a holiday celebration....or for any regular old Saturday night.

Provided by Jess Smith via Inquiring Chef

Categories     Appetizer

Time 1h

Number Of Ingredients 8

1 sheet Puff Pastry ((about 10"x10" and 8 oz))
1 Tbsp Cooking Oil
1 medium Onion, halved and sliced
1 Tbsp Butter
1 tsp Brown Sugar
1/2 tsp Salt
1/4 cup Fruit Spread, jam or jelly ((any kind will work, but I used a triple berry fruit spread))
3 oz Gouda Cheese, grated

Steps:

  • Defrost puff pastry according to package directions. (Most need to defrost at room temperature for 40 minutes, until they can be easily rolled out.)
  • While puff pastry defrosts, caramelize onions (you can also do this up to a week ahead). Heat oil in a large saute pan over high heat. Add onions and stir to coat in oil. Cook onions over high heat until they start to soften and break down, ~5 minutes. Reduce heat to medium and continue to cook onions, stirring every few minutes, until deep golden brown, ~30 minutes more. (If onions appear dry while cooking, add an extra splash of oil.) Stir in butter, sugar and salt and continue cooking until sugar is fully dissolved.
  • Heat oven to 400 degrees F.
  • Spray a mini muffin tin (this makes 24 pastry bites, so bake in rounds if your mini muffin tin only has 12 spaces) with nonstick cooking spray. Slice puff pastry into 24 even squares.
  • Place one puff pastry square into each space in the mini muffin tin.
  • Fill each pastry square with 1/2 tsp fruit spread, 2 tsp of grated cheese and then 1 tsp caramelized onions (no need to be super precise about these measurements, just don't overfill the puff pastry because it will expand as it cooks).
  • Bake until pastry is golden brown and cheese is melted, 15 to 17 minutes.
  • Let pastry bites cool completely before serving. Enjoy!

PUFF PASTRY BITES WITH GOUDA AND SPICED RUM CRANBERRY SAUCE

Puff Pastry Bites with Gouda and Spiced Rum Cranberry Sauce image

These bite-sized appetizers are the perfect holiday snack! They're filled with melty gouda cheese, homemade cranberry sauce spiked with spiced rum, and it's all nestled into a perfectly flaky pastry nest.

Provided by Stephanie Simmons

Categories     Appetizer

Number Of Ingredients 11

1/2 cup water
1/2 cup granulated sugar
2 cups fresh or frozen whole cranberries (If using frozen, don't thaw them)
2 tbsp real maple syrup
2-3 tbsp Blue Chair Bay Spiced Rum
1 tsp orange zest
1 pinch allspice
6 ounces gouda, grated
1 sheet puff pastry (thawed according to package directions)
1 large egg, for egg wash
fresh rosemary, for garnish (optional )

Steps:

  • Prep: Make sure your puff pastry is thawing while you start on the cranberry sauce!
  • Make the Spiced Rum Cranberry Sauce: Add the sugar & water to a medium saucepan over medium high heat. Bring this to a boil, and then reduce the heat to medium, stirring constantly until the sugar is dissolved (this will only take a couple of minutes). Once the sugar is dissolved, lower the heat to a simmer over low heat, and add the cranberries. Bring the mixture to a boil again, and then reduce the heat to a simmer over medium low heat. Cook, stirring occasionally, until the cranberries are mostly broken down - about 10 minutes. (Don't' freak if the cranberries aren't breaking down - just turn up the heat a bit, and keep cooking them until they're mostly all broken down.)Next, stir in the maple syrup, spiced rum, allspice, and orange zest. Taste and add more rum or any of the other mix-ins if desired. Stick your pot of cranberry sauce in the fridge to chill and thicken up while you get the rest of the recipe ready. (You can scrape it into a smaller bowl if your fridge is too full to stick the pot in).
  • Assemble the Puff Pastry Bites: Preheat your oven to 375 degrees F. Roll your thawed puff pastry out on a lightly floured counter until it's about 14 x 12. Cut into 12 equal (doesn't need to be perfect) squares. Spray a muffin tin well with nonstick spray. Place one square into each of the muffin cavities. Add about 1 tablespoon of gouda to each, and top with 1 tablespoon of the chilled cranberry sauce. Beat the egg in a small bowl and brush the exposed parts of the puff pastry with the egg.
  • Bake: Bake the bites for 21 to 23 minutes. The puff pastry will be golden brown and the cranberry sauce and cheese will be bubbly. Let cool in the pan a few minutes, then use a butter knife to loosen and pop them out of the muffin tin.
  • Serve + Store: Enjoy immediately! These are best while fresh the first day, but leftovers can be stored in an airtight container in the fridge for 1-2 days.

MAC AND CHEESE IN PUFF PASTRY

Mac and Cheese in Puff Pastry image

This recipe screams COMFORT FOOD at its finest! What's not to love about your favorite mac and cheese recipe, and that puff pastry, the light and crispy crust that we all know and love? START WITH YOUR FAVORITE MAC AND CHEESE RECIPE. I LIKE OOEY GOOEY MAC AND CHEESE BY SAMANTHA JACOBS. I WILL LINK HER RECIPE. THIS TIME, I USED COOKED BACON, PEPPERJACK, HORSERADISH CHEDDAR, SHARP CHEDDAR, AND GOUDA..
BEFORE BAKING, I TOPPED WITH A SPRINKLE OF SMOKED PAPRIKA AND FRENCH'S FRIED ONIONS.
1 pkg pepperidge farm puff pastry sheets
1 egg, beaten

Steps:

  • 1. Make your mac and cheese like you normally would. Allow it to cool and "set-or firm up". Here is the link to Samantha Jacobs Mac and Cheese that is my GO-TO recipe. https://www.justapinch.com/recipes/main-course/pasta/ooey-gooey-mac-and-cheese-2.html
  • 2. Preheat oven to 400F.
  • 3. Thaw the puff pastry dough. Lightly flour a board and lightly roll dough. Cut into 4 sections (or more if you want little bite-sized appetizer pieces).
  • 4. Beat the egg in a little dish. This is your "glue" that will hold the dough together.
  • 5. Cut a section of your mac and cheese and place on top of the puff pastry section. (I'm guessing I used a little more than 1/4 cup).
  • 6. Brush egg wash around all sides of the puff pastry and fold each side up to meet. Pinch together, turn over and put "pretty side" up (seam sides down). Brush the top with egg wash.
  • 7. Bake in the preheated oven for 15 minutes or until the puff pastry is golden brown and slightly crispy-flaky.
  • 8. Serve immediately with a light salad or a veggie garnish.

  • Preheat the oven to 400 degrees F, and line one large or two small baking sheets with parchment paper.
  • Cut the puff pastry sheet in half. On a clean, lightly floured surface, thin out each piece of dough with a rolling pin until both sections are large enough to fold around the cheese. Place the dough onto the prepared baking sheet.
  • Place a wheel of gouda in the center of the dough. Fold the excess dough around the cheese in a circular pattern so that no cheese is visible. Pinch the puff pastry to seal, trimming away excess dough with kitchen sheers if necessary. Flip the wheel over so that the pinched dough is on the bottom. Repeat with the remaining cheese and dough.
  • Brush the top of the puff pastry with egg wash and poke a few holes in the dough with a knife or fork.

  • Baked Brie with Figs, Pistachios and Orange. We've tasted many baked Bries in our day, but none compares to this recipe. And despite how fancy it looks, it only takes 30 minutes to cook to melty perfection.
  • Skillet Mushroom and Gouda Fondue. Skillet fondue, we think we love you. Scratch that—we know we love you. Dip your heart out with sliced baguette, apples or soft pretzels.
  • Honey Ricotta Dip. Orange zest gives this simple dish a touch of citrusy brightness. Serve it warm with plenty of French bread or crackers or dipping (natch).
  • Boursin Cheese with Caramelized Onions and Bacon. All you have to do here is buy the cheese at the store and whip up the easy topping: zingy balsamic onions and shatteringly crisp bacon.
  • Cranberry-Brie Puff Pastry Pops. It's basically the grown-up version of a lollipop. There's no better time to dole them out than at the start of Christmas dinner.
  • French Onion Cups. And you thought the world's coziest soup couldn't get any more comforting. Think Gruyère-topped French onion soup baked into doughy clouds of puff pastry.
  • Bacon-Wrapped Cheese Straws. We abide by a golden rule: Everything tastes better with bacon. The recipe calls for frozen puff pastry dough, so you'll only need three ingredients total to pull these off.
  • Rodney Scott’s Pimento Cheese. A quintessential Southern dish that will blow your guests away. The key to its silky texture is shredding the cheese yourself, since pre-shredded cheese contains additives to prevent clumping.
  • Baked Brie with Cranberries and Pomegranate. Proof that a flourish of pomegranate arils can make any dish look sophisticated (even one that only takes a few minutes to bake).
  • Apple Focaccia with Blue Cheese and Herbs. Want to up the charcuterie-inspired ante? Crown the bread with delicately placed slices of prosciutto. Microsoft and partners may be compensated if you purchase something through recommended links in this article.
