CHEWY STRAWBERRY SUGAR COOKIES

We were given a lot of strawberries and I had to figure out what to do with them so they didn't go bad. So I came up with this recipe. I hope everyone likes it as much as my kids did. I prefer fresh strawberries over strawberry extract because it gives it a more fruitful flavor. But the extract is good as well. You decide.

1 ½ cups white sugar
1 cup butter, softened
1 egg
3 tablespoons strawberry puree
2 ¾ cups all-purpose flour
1 teaspoon vanilla extract
½ teaspoon baking powder
½ teaspoon salt
½ cup white sugar
1 teaspoon red colored sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  • Beat 1 1/2 cups white sugar and butter together in a bowl with an electric mixer until creamy, about 3 minutes. Beat egg into butter mixture. Add strawberry puree.
  • Stir flour, vanilla extract, baking powder, and salt into strawberry mixture with a spoon until flour is completely incorporated into dough.
  • Stir 1/2 cup white sugar and red sugar together in a shallow bowl.
  • Roll dough into walnut-sized balls, roll each ball in red sugar mixture, and place each ball 1 1/2 inches apart onto prepared baking sheets. Lightly press each dough ball down to flatten.
  • Bake cookies in the preheated oven until lightly browned, 10 to 15 minutes. Cool.

Gooey Strawberry Cookies made with cream cheese and a cake mix, these cookies are great to take to school, work or for home!

15.25 oz strawberry cake mix
8 oz cream cheese ((softened))
1/2 cup butter or margarine ((softened))
1 egg
1 1/2 tsp vanilla
1 cup powdered sugar

Steps:

  • Mix cream cheese and butter with a mixer on low speed until mixed well.
  • Add egg and vanilla and blend.
  • Add strawberry cake mix and stir by hand. Batter will be thick.
  • Roll the dough into 1 inch balls.
  • Roll each ball into the powdered sugar to coat the outside.
  • Place on an ungreased cookie sheet and bake for 7-10 minutes @ 375*.
  • Please note Halfway in the cooking time, you will want to take a spatula and finish pressing the cookies down, flattening them.

2 cups finely chopped fresh strawberries
¼ cup white sugar
1 ½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 cup regular rolled oats
½ cup butter, softened
¾ cup packed brown sugar
¼ cup white sugar
1 egg
¼ cup milk
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Combine the strawberries with 1/4 cup sugar in a medium bowl. Toss gently to blend, and set aside.
  • Combine the flour, baking soda, and cinnamon in a large bowl. Stir in the rolled oats and blend evenly; set aside.
  • Beat the butter, brown sugar, and white sugar in the large mixing bowl of an electric mixer at medium speed until fluffy. Add the egg, milk, and vanilla, and continue beating until smooth. Stir in the flour mixture, and mix well to blend. Combine the strawberries with the flour mixture, and stir to blend. Drop by teaspoonfuls onto ungreased baking sheets.
  • Bake in preheated oven until slightly brown, about 8 minutes. Cool on baking sheets. Store in an airtight container.

Reminiscent of classic gooey butter cakes, these bars are packed with plenty of butter, made easy with sugar cookie mix, and finished with whipped cream and juicy strawberries.

1 pouch (1 lb 1.5 oz) Betty Crocker™ sugar cookie mix
1/2 cup butter, softened
1 package (8 oz) cream cheese, softened
3 1/2 cups powdered sugar
2 eggs
1 teaspoon vanilla
1/3 cup butter, melted
3 cups coarsely chopped strawberries (about 1 lb)
2 tablespoons powdered sugar
2 teaspoons fresh lemon juice
1 cup heavy whipping cream, whipped

Steps:

  • Heat oven to 350°F. Spray bottom of 13x9-inch pan with cooking spray.
  • In large bowl, stir cookie mix and 1/2 cup softened butter until mixture forms coarse crumbs. Spread mixture evenly in pan; press lightly.
  • In large bowl, beat cream cheese, 3 1/2 cups powdered sugar, eggs and vanilla with electric mixer on low speed until blended; scrape bottom and side of bowl. Beat on high speed until smooth. Beat in 1/3 cup melted butter until blended. Pour over cookie mixture; spread evenly.
  • Bake 30 to 35 minutes or until golden brown. Cool completely, about 2 hours.
  • Just before serving, in medium bowl, mix strawberries, 2 tablespoons powdered sugar and the lemon juice. Let stand 10 minutes, stirring occasionally. To serve, cut bars into 5 rows by 3 rows. Top each with strawberries and a dollop of whipped cream. Cover and refrigerate any remaining bars.

4 large eggs, divided
1 (8 ounce) package cream cheese, softened
1 (16 ounce) box confectioners' sugar
3/4 cup chopped fresh strawberries
sweetened whipped cream, garnish
strawberry, garnish

Steps:

  • Preheat oven to 350°.
  • Lightly grease a 13x9-inch baking pan.
  • In a large bowl, combine cake mix, butter, and 1 egg.
  • Press mixture into bottom of prepared pan.
  • In a separate large bowl, beat cream cheese and 3 eggs at medium speed with an electric mixer until smooth.
  • Gradually beat in confectioners¹ sugar until combined.
  • Stir in strawberries.
  • Spoon mixture over cake mixture; bake for 35 to 40 minutes, or until center is set.
  • Cool completely; cut into squares to serve.
  • Garnish with sweetened whipped cream and strawberries, if desired.
