OUR FAVORITE TIRAMISU



Our Favorite Tiramisu image

Layers of espresso-soaked pound cake and cream cheese custard come together with chocolate. Tiramisù means "pick-me-up" in Italian-and this certainly does.

Yield 8.

Number Of Ingredients 8

8 ounces semisweet chocolate
1 cup sugar
4 egg yolks
1 1/2 teaspoons vanilla
8 ounces cream cheese, cut into pieces, room temperature
1 3/4 cups chilled whipping cream
1 tablespoon instant espresso powder diluted in 1 1/4 cups hot water, cooled
1 12 ounce prepared pound cake, cut into 3 1/2x1x1/2-inch strips

Steps:

  • Finely chop chocolate in processor. Set aside. Mix sugar and egg yolks in processor 30 seconds. Add vanilla and process until pale yellow, about 1 minute. Add cheese in batches and blend until smooth. Transfer to medium bowl. Cover and chill 1 hour. Beat whipping cream until stiff. Fold into cream cheese mixture. Cover and refrigerate until well chilled, about 1 hour. (Can be prepared 2 days ahead.) Pour espresso into large shallow dish. Dip cake strips in espresso, turning to coat all sides lightly. Arrange strips on bottom of 10-cup shallow dish, smoothing with fingers to mold together. Sprinkle with half of chocolate. top with chilled cheese mixture. Sprinkle remaining chocolate over. Cover and refrigerate at least 2 hours. (Can be prepared 1 day ahead.)

2/3 cup espresso, strong brewed
1/4 cup brandy (optional)
1 1/2 cups heavy whipping cream
1/3 cup sugar
2 teaspoons vanilla extract
1 lb mascarpone cheese, softened to room temperature
1/2 lb ladyfinger
cocoa powder

Steps:

  • For the SYRUP, combine water and sugar in a small saucepan.
  • Bring to a simmer, stirring occasionally to dissolve sugar.
  • Remove from heat, cool.
  • Add coffee and optional brandy.
  • For the FILLING, whip cream with sugar and vanilla until soft peaks form.
  • Fold cream into softened mascarpone.
  • ASSEMBLE a layer of the ladyfingers (or sponge cake slices) in the bottom of a shallow 2-quart baking dish or gratin dish.
  • Sprinkle with half the syrup.
  • Spread with half the filling.
  • Repeat with remaining ladyfingers, syrup and filling, spreading the top smooth, using a metal spatula.
  • Cover with plastic wrap and refrigerate for up to 24 hours before serving.
  • Immediately before serving place cocoa in a fine strainer and shake a light coating on surface.

1 ½ cups white sugar
1 ½ cups boiling water
1 cup brewed coffee
½ cup vanilla citrus liqueur (tuaca)
2 cups powdered sugar
1 (8 ounce) container mascarpone cheese
¼ cup vanilla citrus liqueur (tuaca)
1 teaspoon vanilla extract
2 cups whipping cream
1 (14 ounce) package ladyfinger cookies
1 tablespoon grated semisweet chocolate

Steps:

  • Start syrup: Combine white sugar and boiling water in a medium bowl; stir until sugar dissolves. Set aside.
  • Prepare filling: Combine powdered sugar, mascarpone cheese, 1/4 cup tuaca, and vanilla extract in a bowl; whip with the whisk attachment of an electric mixer until smooth. Gradually add whipping cream and whip until soft peaks form.
  • Continue syrup: Mix coffee and tuaca into the sugar-water mixture.
  • Assemble tiramisu: Line the bottom of a 9x13-inch glass baking dish with ladyfingers. Pour 1/2 of the syrup over top, then layer with 1/2 of the filling. Add another layer of ladyfingers and cover with remaining syrup and filling. Smooth with the back of a spoon and sprinkle with grated chocolate. Refrigerate for at least 4 hours before serving.

Tiramisu is a classic Italian dessert. Ladyfinger cookies are dipped in coffee, then layered with mascarpone (a rich Italian cream cheese) and dusted with cocoa powder. It might become your new favorite dessert!

6 egg yolks
1 cup white sugar, divided
1 pound mascarpone cheese
6 egg whites, stiffly beaten
¼ cup heavy cream
3 tablespoons kirschwasser
1 ¼ cups strong brewed coffee, cold
25 ladyfingers
1 tablespoon unsweetened cocoa powder

Steps:

  • In a medium bowl beat together the egg yolks and 1/3 cup of sugar. Using a wooden spoon stir in mascarpone cheese, beaten egg whites, cream and kirschwasser; stir until smooth. Set aside.
  • Dissolve remaining 2/3 cup sugar in coffee. Quickly, to avoid complete saturation, dip ends of ladyfingers in coffee mixture. Place ladyfingers in a single layer in a 9 x 13 inch glass baking dish. Spread a layer of cheese mixture over the ladyfingers; repeat layers, ending with cheese mixture.
  • Cover and refrigerate for several hours. Sprinkle with cocoa just before serving.
