OVEN-BRAISED BEEF WITH TOMATO SAUCE AND GARLIC



Oven-Braised Beef with Tomato Sauce and Garlic image

Yield Makes 6 servings

Number Of Ingredients 4

1 (28-oz) can whole tomatoes, including juice
1 (3- to 31/2-lb) boneless chuck roast
1 head garlic, separated into cloves (unpeeled)
Accompaniment: orzo

Steps:

  • Preheat oven to 300°.
  • Coarsely chop tomatoes with juice in a food processor. Put roast in an ovenproof 4- to 5-quart heavy pot or a casserole dish with a lid. Pour tomatoes over roast and scatter garlic around it. Season with salt and pepper. Braise in middle of oven, covered, until very tender, 3 to 4 hours.
  • Cut roast into 1/4-inch-thick slices and serve with sauce and garlic.

Next time you have roast beef, try this delectable sauce instead of brown gravy. Lower in fat and calories than gravy too.

3 tablespoons beef drippings
3 tablespoons flour
2 teaspoons prepared mustard
2 teaspoons Worcestershire sauce
1 teaspoon salt
1 (10 3/4 ounce) can beef consomme
1 cup Burgundy wine
4 green onions, thinly sliced

Steps:

  • In a saucepan blend hot drippings with flour (if you don't have 3 tablespoonfuls make up the difference with melted butter).
  • Add mustard, Worcestershire sauce, and salt; blend well.
  • Add consommé a small amount at a time, blending well after each addition.
  • Stir in wine.
  • Cook, stirring constantly, until thickened.
  • Cook slowly for 10 minutes.
  • Add green onions and continue cooking 5 minutes longer.
  • This makes appoximately 2 cups.

This sauce was like heaven had come to my lips. I used it on a freshly peppered steak which was an experience. This is now my favourite sauce. It is more of a gourmet sauce and is not sickly so you can serve large quantity's on a single piece of meat.

1/2 diced tomato
salt
pepper
1 tablespoon dry sherry
2/3 cup tomato sauce
1/3 cup water
2 teaspoons paprika
oil

Steps:

  • Place the oil in the bottom of a saucepan.
  • Cook the diced tomatoes in saucepan on low heat.
  • Continually stir them.
  • Add pepper and salt early on in the cooking of the tomatoes.
  • When the tomatoes are nearly cooked add the dry sherry.
  • Now leave the tomatoes for 1 minute so that all the sherry is absorbed in the tomatoes.
  • Add the tomato sauce and stir in and then add the paprika.
  • Add the water slowly so that the thickness is what you desire.
  • Serve on top of steak or as part of a fancy dish.

⅛ teaspoon salt

Steps:

  • In a small bowl, mix together mayonnaise, French dressing, sweet pickle relish, white onion, white sugar and salt. Cover and refrigerate 6 hours, or overnight, stirring occasionally, before serving.
