1 cup shortening
2 cups sugar
2 large eggs, separated, room temperature
1 cup buttermilk
5 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons baking soda
Pinch salt
Juice and grated zest of 2 medium navel oranges
ICING:
2 cups confectioners' sugar
1/4 cup orange juice
1 tablespoon butter
1 tablespoon grated orange zest

Steps:

  • Preheat oven to 325°. In a bowl, cream shortening and sugar. Beat in egg yolks and buttermilk. Sift together flour, baking powder, soda and salt; add to creamed mixture alternately with orange juice and zest. Add egg whites and beat until smooth. , Drop by rounded teaspoonfuls onto greased cookie sheets. Bake until set, about 10 minutes. Remove to wire racks to cool completely., For icing, combine all ingredients and beat until smooth. Frost cooled cookies.

My Grandmother used to make these for my mother and me for years. We took it for granted that she would always be here to do so. My mother and I played with the ingredients until we think we have duplicated Grandma's recipe. The light coating of powdered sugar makes these stand out from the other cookies in the tin.

4 ½ cups sifted all-purpose flour
1 teaspoon baking soda
2 teaspoons cream of tartar
½ teaspoon salt
1 cup margarine, softened
1 cup butter, softened
1 ½ cups white sugar
2 eggs
2 teaspoons vanilla extract
2 cups ground pecans
1 cup confectioners' sugar, or more as needed

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C).
  • Stir the sifted flour, baking soda, cream of tartar, and salt together in a bowl.
  • Beat the margarine, butter and sugar together with an electric mixer in a large bowl until smooth. Add one egg, and continue beating until completely incorporated; add the remaining egg along with the vanilla extract, and beat on low speed until incorporated. Mix the flour mixture into the butter mixture until just incorporated. Gently mix the pecans into the dough with your hands.
  • Roll the dough into 1-inch balls; arrange onto baking sheets about 2 inches apart.
  • Bake in the preheated oven until the edges are golden-brown, 8 to 9 minutes. Allow the cookies to cool on the baking sheet for 8 minutes. Place confectioners' sugar into a bowl, and lightly dip both sides of each warm cookie into the sugar. Tap of excess, and allow cookies to finish cooling.

1 cup shortening or 1 cup butter
1 1/2 cups sugar
2 eggs
1 teaspoon vanilla
1 teaspoon orange zest
4 cups flour
1/2 teaspoon salt
1 teaspoon baking powder
6 tablespoons milk

Steps:

  • Cream shortening with sugar.
  • Add eggs, vanilla and orange zest.
  • Alternate flour and mix into the mix until incorporated.
  • Roll out with a lightly flour pin and cut into fun shapes.
  • Bake at 375F for 10 - 12 minutes or until golden brown on edges.
  • Frost with Royal Icing.

3/4 cup butter, unsalted, softened
1/2 cup sugar
1 egg
1 tablespoon fresh lemon rind, finely grated
1 teaspoon vanilla
1/4 teaspoon salt
2 1/4 cups flour, unsifted
1 -2 tablespoon water
3 egg whites
1 lb powdered sugar
2 -3 teaspoons water
food coloring, sprinkles, etc, as desired

Steps:

  • Beat together butter and sugar in small bowl with electric mixer until light and fluffy. Beat in egg, lemon peel, vanilla and salt.
  • Gradually beat in flour until thouroughly incorporated. Add water, a few drops at a time, only until dough starts to come away from side of bowl.
  • Wrap dough in plastic wrap. Refrigerate until firm, about 2 hours.
  • Preheat oven to 350 degrees Fahrenheit. Lightly grease 4 cookie sheets.
  • On lightly floured surface, roll out dough to 1/8" thickness. Cut out various shapes using cookie cutters or homemade cardboard patterns, or free-hand. Reroll scraps and cut out.
  • Make small holes with wooden pick if planning to hang cookies. Bake for 12 to 15 minutes or until beginning to brown around edges.
  • Remove cookies to wire rack to cool before decorating.
  • Prepare icing: Beat egg whites in small bowl with electric mixer until foamy. Slowly beat in the powdered sugar. Continue to beat until thick and creamy.
  • Add just enough water to get a good spreading consistency. Tint with food coloring, if you wish. Spread evenly over cookies.
  • Decorate with glitter, sprinkles, or cinnamon red hots, or as desired.
