CHARLENE'S "GRANDMA'S COOKIES"

I received these as part of a Christmas bake exchange. Charlene was kind enough to share the recipe with me! This makes a huge recipe but these freeze very well.

Ingredients

2 large eggs
2 cups sugar
1 cup shortening, no substitutes
1 cup milk
5 teaspoons baking powder
1 teaspoon baking soda (scant)
1 teaspoon lemon flavoring or 1 teaspoon almond flavoring
1/4 teaspoon salt
5 cups flour, to make fairly stiff dough (I use approx 5 cups)

Steps:

Cream shortening, add sugar and eggs, beat well.
Then add alternately the flour sifted with the baking powder, soda, salt with the milk.
Roll out and cut with cookie cutter or glass top, bake at 375°F until done.

or try using crushed candy canes and drizzle with chocolate.

Grandma Abbey made these cookies for my MIL (her granddaughter) when she was a child in the 1930's. They're my husband's favorite. With a delicate nutmeg flavor, they stand up nicely to frosting. Grandpa Boskat, my MIL's father, always preferred his with sugar sprinkled on top, but Grandma Boskat frosted the rest for her children.

Ingredients

1 cup butter, softened
1 ½ cups white sugar
2 eggs
1 teaspoon ground nutmeg
½ teaspoon salt
½ teaspoon baking soda
2 teaspoons baking powder
1 cup buttermilk
3 cups all-purpose flour, or as needed

Steps:

Cream together butter and sugar in a large bowl. Add eggs and beat until light and fluffy. Combine the nutmeg, salt, baking soda, and baking powder in a small bowl. Stir in the buttermilk and add this mixture to the creamed ingredients. Gradually stir in the flour one cup at a time. If dough is still too sticky to roll, gradually add more flour until you can form the dough into a ball. Cover and chill dough for at least an hour.
Preheat oven to 350 degrees F (175 degrees C). Roll dough out to 1/4 inch thickness on a lightly floured surface. Cut into shapes and place on ungreased cookie sheet.
Bake until no indentation remains when cookies are lightly touched, about 10 minutes. Cool cookies on rack.

Buttery and rich, this old-fashioned oatmeal cookie is fantastic. They're crunchy and crisp around the edges and chewy in the middle. Coconut adds tons of flavor and texture. It's what makes this different from other oatmeal cookies. We opted to add a 12oz bag of chocolate chips along with the coconut and loved these. If you love oatmeal cookies, give these a try. We've been sneaking "just one" all day!

1 cup(s) butter, room temperature
1 cup(s) white sugar
1 cup(s) brown sugar, firmly packed
2 large eggs, well-beaten
1 teaspoon(s) vanilla
1 teaspoon(s) salt
1 teaspoon(s) baking soda
1 1/2 cup(s) all-purpose flour
3 cup(s) quick oatmeal
2 cup(s) coconut (or you choice of nuts, raisins, date, chocolate chips, etc.)

Steps:

Cream together butter, white sugar, and brown sugar in a large bowl.
Add beaten eggs and vanilla.
In a separate bowl mix together salt, baking soda, flour, oatmeal, and coconut.
Add the dry ingredients to the butter mixture and mix until combined.
At this time you can fold in the optional nuts, chocolate chips, raisins, or dates.
Use a cookie scoop, drop dough onto a baking sheet (making sure not to overcrowd the pan) and bake immediately. Or, form the dough into 2" rolls in plastic and refrigerate until chilled then slice.
Bake at 375 for 10-12 minutes.
