Steps:
- Mix butter, peanut butter, and powdered sugar until well blended. More or less powdered sugar can be used to make mixture more or less dry.
- Make 1 inch balls and freeze for about 20 minutes or until firm.
- Microwave chocolate chips for 60 seconds, stopping every 15 seconds to check and stir. Adding some vegetable shortening can make the chocolate thinner and easier work with.
- Remove balls from freezer and dip most of the way into the chocolate, coating all but a small circle on top. Using a toothpick for this works well but simply dipping it in and pulling it out with a fork also works. Place completed buckeyes on wax paper and allow to harden. Refrigerate if needed.
- Enjoy!

Steps:
- In a medium bowl, use a hand mixer to mix together the peanut butter and powdered sugar, scraping the bowl as needed. Mix until well combined.
- Roll the peanut butter filling into 24 equal sized balls. Set aside.
- Combine butter, milk, sugars, and cocoa powder. Cook over low heat until butter melts, stirring occasionally. Do not turn up heat to make the process go by faster.
- Once boiling, turn heat up to medium, stirring constantly.
- Continue boiling for 1 minute and then take off heat. (Set a timer to prevent overcooking.)
- Add in peanut butter and vanilla extract and stir.
- Add in oats and stir again.
- Add in chopped dark chocolate and give a quick stir (Don't mix it in completely. You want a little bit of a chocolate swirl.)
- Drop onto parchment lined sheet pan. I get 24 cookies.
- Place a peanut butter ball in the center and press down slightly.
- In a small microwave-safe bowl, melt the chocolate wafers in 20-30 second increments, stirring between each interval. This should take less than 2 minutes total to melt, but melt it slowly.
- Spoon melted chocolate overtop each cookie.
- Allow the cookies to rest until the chocolate is set.
- Store in an airtight container at room temperature.

GRANDMA'S CLASSIC NO-BAKE COOKIES
This is the first cookie I ever learned to make as a child. They're very delicious with the peanut butter and oatmeal. You can eat them fresh out of the pan in a bowl with a spoon, which is delicious with a glass of milk besides. This no-bake cookie recipe was my grandmother's, and my mother taught it to her children, and I will to mine. I hope you have as much fun making this either by yourself or with your children, as I did with my mom. Separate cookies with waxed paper if putting in a tin or baggie to prevent sticking.
