This old-fashioned Icebox Fruitcake recipe is a traditional holiday dessert that's overflowing with decadent ingredients, like Graham cracker crumbs, pecans, maraschino cherries, and mini marshmallows.

1 cup pecans
1 jar maraschino cherries (10 oz)
1 tablespoon cherry juice
1 cup raisins
1 cup shredded coconut (firmly packed)
1 1/2 cups mini marshmallows
1 can sweetened condensed milk (14 oz)

Steps:

  • Finely crush graham crackers and coarsely chop pecans and drained cherries.
  • Combine all ingredients in a large mixing bowl and mix well.
  • Turn out into a lightly buttered 9x13 baking dish and press flat into the pan with your hands. Chill for at least 6 hours.

3 pints strawberries
4 ripe bananas
2 cans crushed pinapple
1 quart heavy cream
1/4 cup sugar
1 tablespoon vanilla extract
Use a glass pyrex dish or brownie pan

Steps:

  • Whip in a medium bowl all of the cream, when whipped add sugar and vanilla extract. Drain pinapple. Wash and slice strawberries. Peel and slice bananas. Layer in whipped cream, cookies, fruit, whipped cream, cookies, fruit until the dish is almost filled to the top (about 4 or 5 layers). Chill for a few hours and serve.;

1 cup chopped pecans
1 cup chopped walnuts
1 cup chopped raisins
1 (4 ounce) jar maraschino cherries, drained and chopped
1 (14 ounce) can sweetened condensed milk
1 (12 ounce) package vanilla wafers, crushed

Steps:

  • In a medium bowl, stir together the pecans, raisins, walnuts, cherries, condensed milk and vanilla wafers. Dough will be very thick, you will need to use your hands.
  • Form dough into a ring shape on top of a dinner plate. Wrap in many layers of plastic wrap and/or aluminum foil. Allow to age in the refrigerator for at least a week. The flavors will have a chance to blend and all of the milk will be absorbed into the cake.

My family doesn't really like the traditional fruitcake, but will eat this like crazy. The thing I like most about it is that it freezes really good. You can make it a month in advance, freeze, defrost and serve later. Cook time is actually chill time.

1 (13 1/2 ounce) box graham cracker crumbs
1 cup raisins
1 cup pecans, chopped
1 cup walnuts, chopped
1 (10 ounce) container chopped candied fruit
2 (14 ounce) cans sweetened condensed milk

Steps:

  • Mix graham cracker crumbs and milk until well blended.
  • Add remaining ingredients until well blened.
  • Mixture will be very stiff.
  • Pack into a Christmas mold, which has been sprayed with oil, or form into logs and wrap with wax paper.
  • Cover and keep refrigerated.
  • Remove from mold just before serving.

3-1/4 cups dried currants
2-2/3 cups raisins
1 cup chopped walnuts
2/3 cup chopped candied citron or candied lemon peel
4 cups all-purpose flour, divided
1 cup butter, softened
2 cups packed brown sugar
4 large eggs, room temperature
1 cup molasses
1 teaspoon baking soda
1 teaspoon each ground cinnamon, nutmeg and cloves
1 cup strong brewed coffee

Steps:

  • Preheat oven to 300°. Grease and flour three 9x5-in. loaf pans. Line bottoms with waxed paper; grease and flour the paper. Combine currants, raisins, walnuts, candied citron and 1/4 cup flour. Toss to coat; set aside., Cream butter and brown sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in molasses. In another bowl, whisk baking soda, cinnamon, nutmeg, cloves and remaining flour; add to creamed mixture alternately with coffee. Stir into currant mixture and mix well., Transfer to prepared pans. Bake until a toothpick inserted in the center comes out clean, 1-1/4 to 1-1/2 hours. Cool in pans 10 minutes before removing to wire racks to cool completely. Wrap tightly and store in the refrigerator for at least 2 days to blend flavors. Slice and bring to room temperature before serving. Refrigerate leftovers.

This is the only fruitcake I'll eat. Grandma stopped making this a few years ago when she became too frail and I recently started making it for the family in her place. For me and my family, this is a taste of christmas! Don't forget to save cherries and nuts for the tops of your loaves, it makes it really pretty and festive. You can use green cherries if you want. This recipe originally called for 3 pounds of unshelled brazil nuts

1 lb graham cracker, finely crushed
1 lb candied red cherries
1 lb raisins
1 lb brazil nut, shelled
3/4 cup milk, scalded
1 lb small marshmallow

Steps:

  • Crush graham crackers and mix with raisins and cherries.
  • Add brazil nuts.
  • Scald milk in double boiler and add in marshmallows.
  • Stir until melted.
  • Remove from heat.
  • Add cracker mixture to hot marshmallow mixture and blend thoroughly.
  • Line loaf pans with wax paper or foil.
  • Spoon in mixture, press down firmly.
  • Decorate top with reserved cherries and brazil nuts.
  • Age 1 month in fridge.
  • Wrap cake in foil to keep moist.
  • This freezes very well after the initial aging of cake.
  • If you're lucky, like I am, you can find shelled brazil nuts at a health food store. I find mine at an amish grocery store.

4 cups all-purpose flour
2 cups white sugar
¼ cup unsweetened cocoa powder
2 tablespoons cornstarch
2 teaspoons baking soda
1 teaspoon salt
2 teaspoons ground cinnamon
2 teaspoons ground cloves
3 cups unsweetened applesauce
¾ cup vegetable oil
1 cup raisins
1 cup chopped pitted dates
1 pound candied mixed fruit
2 cups chopped walnuts
½ cup walnut halves
1 cup halved candied cherries

Steps:

  • Preheat the oven to 300 degrees F (150 degrees C). Grease a 9 inch tube pan and one 9x5 inch loaf pan.
  • Sift the flour, sugar, cocoa, cornstarch, baking soda, salt, cinnamon and cloves into a large bowl. Stir in the applesauce and oil, then mix in the raisins, dates, mixed fruit and 2 cups of walnuts. Pour into the prepared pans. Pans should be about 3/4 full if using mini pans, or an assortment.
  • Bake for 1 hour in the preheated oven, or until a toothpick inserted into the crown of the cake comes out clean.
