Grandma's Recipe - Apple Shortcake image

Delicious Apple Shortcake, the one you remember from your childhood

Number Of Ingredients 9

170 grams Butter, room temperature
1 Cup White Sugar, 205 grams
2 Eggs
1 teaspoon Baking Soda *
3 Cups Plain White Flour, 390 grams
2 teaspoon Cream of Tarter* (can replace with 3 teaspoons of baking powder (omit BOTH the baking soda and cream of tarter if you do this) )
pinch of Salt
Apple Filling = I use a pre-prepared can of Apple Pie Filling or use fresh or stewed apple, see recipe link within my blog post.
*If you do not have cream of tarter simply replace both the baking soda and cream of tarter with 3 teaspoons of baking powder

Steps:

  • Preheat Oven to 180C Bake- 355F
  • Cream the butter and the sugar in a food mixer until pale, approximately 4 minutes
  • Add eggs and blend well, then sift the dry ingredients and combine until the dough comes away from the side of the bowl. (If you know me from this blog you know I never sift anything so up to you!)
  • Gently knead into a ball and fridge in plastic wrap for 30 minutes (at least).
  • Roll out half of the dough on a well floured bench into desired shape and using rolling pin to carefully transfer the dough to the prepared greased dish and gently press in - trim off excess if needed.
  • Sprinkle a small amount of white sugar and cinnamon onto the dough and then spoon the apple mixture onto the base.
  • Repeat with the remaining dough - roll and gently lay on top of the apple mixture then gently press down - trim the edges until they are tidy.
  • Feel free to make a pretty pattern or simple marks with a fork for added effect once cooked.
  • Cook for 25-30 minutes until golden brown on top
  • The most important aspect of cooking times for this recipe is that the bottom is cooked well - which is why I like to use a clear glass baking dish - the bottom needs to begin to brown. So if in doubt give it a few minutes longer so that it does not fall apart when you slice it.
  • Remove from oven and allow to cool before slicing into squares, dust with icing sugar to serve.

1 teaspoon baking soda
1 teaspoon kosher salt
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1-1/2 cups vegetable or canola oil
2 cups sugar
3 large eggs, room temperature
2 teaspoons vanilla extract
1 teaspoon fresh lemon juice
3 medium apples, peeled and thinly sliced
1 cup chopped walnuts, toasted
1 cup confectioners' sugar
2 teaspoons fresh lemon juice

Steps:

  • Preheat oven to 300°. Line bottom of a 10-in. springform pan or a 13x9-in. baking pan with parchment; grease parchment. In a bowl, whisk together flour and next 5 ingredients. In a large bowl, beat oil, sugar and eggs until pale and slightly thick, about 2 minutes. Beat in vanilla and lemon juice. Add dry ingredients; stir just until moistened. Fold in apples and walnuts (batter will be thick). , Transfer to prepared pan. Bake until a toothpick inserted in center comes out clean, 55- 60 minutes. Cool cake in pan on rack. , For glaze, mix confectioners' sugar and lemon juice; drizzle over cake.

A light and fully apple shortcake with a beautiful apple filling. This dessert is perfect for dinner parties because it's quick and easy to make!

115 g butter (1/4lbs/4oz softened)
95 g caster sugar (1/4lbs/4oz, or just over 1/2 cup )
1 egg
225 g self-raising flour (1/2 lbs/8oz)
1 tsp vanilla
500 g apple pie filling (20oz can or homemade )

Steps:

  • Cream butter and sugar in a large bowl (stand or hand mixer), until smooth. There should be minimal lumps of butter
  • Add egg and vanilla and mix for 30 seconds until the egg is just combined.
  • Add flour, small bits at a time, making sure to scrape down the sides with a spatula to incorporate all ingredients.
  • Turn the dough onto a piece of plastic wrap/cling wrap, and shape into a ball. Cover and refrigerate for 30 minutes.
  • Preheat oven to 190C/350F
  • Grease a 23cm/9inch round cake tin
  • Divide dough into equal halves.
  • Flour your hands.
  • Press half of the dough into your greased pan as evenly as possible. Use your hands to work the dough to the edges.
  • Top with the apple pie filling.
  • Roll the other half of the dough into a rough round that fits the size of the pan. Place the dough on top of the pie filling and use your hands to gently press the dough into any missing gaps. It doesn't matter if it's not perfect because you can flip the cake when it's cooked and no one will see the bottom!
  • Bake for 25-30 minutes in a fan forced ovenm or 35-40 minutes in non-fan forced, or until top is browned and cake it cooked through.
  • Cool for 20 minutes in the tin, then turn out onto a wire rack and cool completely.
  • Transfer to a plate and serve with a dusting of icing sugar and some cream and/or ice cream.

1/4 cup margarine or 1/4 cup butter
1 cup white sugar
1 egg
1 cup flour
1 teaspoon baking soda
1 teaspoon baking powder

This recipe is a family favorite, we even serve it for birthdays, just add a dusting of powdered sugar! My Grandmother Marguerite L.C. Seelhorst made this every time we came to visit. It is easy to make, and feeds a large gathering.

3 c chopped apples, granny smith, or your favorite baking apple.
1 c chopped nuts, either walnuts or pecans. may be omitted.
1 c vegetable shortening, or half butter and half shortening.
3 c sugar
3 eggs
DRY INGREDIENTS
2 1/2 c all purpose flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt

Steps:

  • 1. Grease and flour a 9 X 12 X 3 pan and set aside.
  • 2. Peel and chop apples. You may add 1 tsp. of lemon juice to the apples to prevent browning. Chop nuts. Set aside.
  • 3. Cream together the shortening and sugar. Add the eggs and combine.
  • 4. In a large bowl sift together the flour, baking powder, soda and salt.
  • 5. Add the dry ingredients to the creamed mixture a little at a time. Fold in the 3 cups of apples and the chopped nuts. The batter will be STIFF!
  • 6. Place in the greased and floured pan. You will need to use a spoon or your hands to push the batter evenly into the pan. Don't worry, it will come out beautifully even though it looks lumpy!
  • 7. Bake for 1 hour at 350 degrees. Cake is done when it is nicely browned and a toothpick inserted in the center of the cake comes out clean.
  • 8. Allow to cool on a rack. This cake is delicious served warm with ice cream! Let it cool a bit first though. It also travels well, allow it to cool completely.

I have cut the sugar down to 1 cup, as most modern apples are sweet enough to not need the original 2 cups called for. I like to replace 1 cup of all purpose flour with 1 cup whole wheat flour.

1 cup sugar
4 cups sliced apples
2 cups all purpose flour
1 1/2 teaspoons baking soda
1 teaspoon table salt
2 teaspoons cinnamon
2 beaten eggs
3/4 cup vegetable oil
2 teaspoons vanilla extract
1/2 cup walnuts, coarsely broken

Steps:

  • Sprinkle sugar over apples in your largest mixing bowl. Sift dry ingredients together twice, then add to apples. Add remaining ingredients, and stir until well mixed. Batter will be very thick.
  • Spread into a greased 9" X 13" cake pan or pyrex dish.
  • Bake at 350 degrees F for 30 to 45 minutes, until cake springs bakc when touched lightly, and apples are tender when pierced with a skewer.
  • Cool and serve. Cover leftovers tightly with foil to retain moisture.

6 cups sliced fresh strawberries
1/2 cup sugar
1 teaspoon vanilla extract
SHORTCAKE:
3 cups all-purpose flour
5 tablespoons sugar, divided
3 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup cold butter, cubed
1-1/4 cups buttermilk
2 tablespoons heavy whipping cream
TOPPING:
1-1/2 cups heavy whipping cream
2 tablespoons sugar
1/2 teaspoon vanilla extract

Steps:

  • Combine strawberries with sugar and vanilla; mash slightly. Let stand at least 30 minutes, tossing occasionally., Preheat oven to 400°. For shortcakes, whisk together flour, 4 tablespoons sugar, baking powder, baking soda and salt. Cut in butter until crumbly. Add buttermilk; stir just until combined (do not overmix). Drop batter by 1/3 cupfuls 2 in. apart onto an ungreased baking sheet. Brush with 2 tablespoons heavy cream; sprinkle with remaining 1 tablespoon sugar. Bake until golden, 18-20 minutes.   • Make the Dough. On a chopping board, cut the 4 ounces (50 grams) of butter into half-inch cubes. I prefer to use cold butter. Put the cubes into your mixing bowl.
  • Roll Out the Dough. Tear two pieces of baking paper off a roll about 2 feet long. Cut the shortcake mixture in half so that you have enough for the top and bottom.
  • Press the Dough Into the Pan. Once rolled thinly, gently pull the top piece of baking paper off. You'll find it difficult to release the shortcake mix into the bottom of your aluminium pan.
