GRANDPA'S PIZZA BREAD
My grandmother made this pan bread often but never wrote down the recipe. Eventually, my dad experimented until he came up with precise measurements. Our kids loves Grandpa's Pizza Bread.

- In a large bowl, dissolve the yeast in 1/2 cup warm water. Add sugar; let stand for 5 minutes. Add 4 teaspoons of oil, salt, remaining water and 2 cups flour. Beat until smooth. Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down. Brush a 13-in. x 9-in. baking pan with 1 tablespoon oil. Press dough into pan. Brush with the remaining oil and sprinkle with salt and pepper. Cover and let rise in a warm place until doubled, about 45 minutes. , Bake at 375° for 20-25 minutes or until lightly browned. Cut in squares; serve warm, or at room temperature.

GRANDMA'S PIZZA

Steps:
- For the dough: Combine the flour, salt and yeast in the bowl of a stand mixer fitted with a dough hook attachment. Stir to combine, then add 1 cup water. Mix on low speed until the dough comes together into a rough ball. Continue mixing at medium-low speed until the dough forms a smooth, silky ball, about 10 minutes. Form the dough into a tight ball, set in the bottom of the mixer bowl, cover tightly with plastic wrap and set aside in a warm place until the dough has roughly doubled in size, about an hour.
- Position an oven rack in the center of the oven and preheat to 450 degrees F.
- Cut the dough in half; you should have enough for two 9-by-13-inch baking sheets. You can make both pizzas now, or hold the dough in the refrigerator for up to 3 days.
- Lightly oil one or two 9-by-13-inch baking sheets. Add the dough and press down on it to spread it toward the edges. You won't be able to get it all the way to the edges, so spread it as much as you can without tearing. If the dough isn't stretching well, cover and let rest at room temperature for 30 minutes, then stretch again.
- For the sauce: Put the tomatoes, olive oil, basil, garlic and some salt in a blender and puree until smooth.
- For the topping: Spread the sauce all the way to the corners of the dough. Top the sauce with the mozzarella and sprinkle with black pepper and chile flakes if using. Bake until the dough is crisp and the cheese is melted, 10 to 12 minutes. Top with the basil and some Parmesan and serve.
GRANDPA'S BREAD
This is a simple recipe for a hardy bread that our Grandpa taught us. This is best eaten right out of the oven, with butter! We use a food processor to mix the dough, but I'm sure it could be mixed by hand.

Steps:
- Put dry ingredients in a food processor; turn on processor to mix.
- Add warm water till dough binds.
- Place dough on a floured board and knead 3-4 times.
- Shape dough into a ball, put in a warm bowl and cover with plastic wrap; let rise for ½ hour.
- Knead dough again approximately 10 times; return to a warm covered bowl for two hours.
- Sprinkle corn meal on a cookie sheet.
- Knead dough until smooth, form into a loaf shape, place on the cookie sheet that has been sprinkled with cornmeal; cover with a warm damp towel and let rest for 30 minutes.
- Remove towel, score top of loaf several times with a sharp knife.
- Bake in a preheated 400-degree oven for about 30 minutes.

- Preheat the oven to 450°F (230°C).
- Arrange the frozen garlic toast on the prepared baking sheet.
- Make the pepperoni garlic bread pizza: Top 2 slices of garlic toast with the pizza sauce, mozzarella, and pepperoni.
- Make the veggie lovers garlic bread pizza: Top 2 slices of garlic toast with the pizza sauce, mozzarella, bell pepper, zucchini, mushrooms, and olives.
- Make the bacon jalapeño garlic bread pizza: Top 2 slices of garlic toast with the ranch, mozzarella, crumbled bacon, and pickled jalapeño slices.
- Make the margherita garlic bread pizza: Top 2 slices of garlic toast with the tomato slices and mozzarella.
- Bake for 8-12 minutes, until the bread is crispy and warmed through and the cheese is melted. Garnish the margherita garlic bread pizzas with the basil.

GRANDMA-STYLE PIZZA DOUGH
Grandma-Style Pizza Dough

Yield Makes enough dough for 1 pie (about 6 servings)

Steps:
- Combine 1 envelope active dry yeast (about 2 1/4 teaspoons) and 1 1/2 cups warm water (105-110°) in a large bowl; let stand until yeast starts to foam, about 10 minutes.
- Mix in 2 tablespoons olive oil, then 2 cups all-purpose flour and 2 teaspoons kosher salt. Add another 2 cups all-purpose flour, a cup at a time, mixing until incorporated and a shaggy dough forms.
- Turn out dough onto a lightly floured surface and knead until soft, smooth, and elastic, 10-12 minutes. Place dough in a lightly oiled bowl and cover with plastic wrap. Chill 24 hours.
- Coat an 18x13" rimmed baking sheet with 1/2 cup olive oil.
- Gently and gradually stretch dough until it reaches the edges of baking sheet. (If dough springs back or is stiff to work with, let it rest 10 minutes before continuing. You may need to let it rest more than once.)
- Cover dough on baking sheet tightly with plastic wrap and let sit in a warm place (but not too warm!-about 70° is ideal for yeast to grow) until it is puffed and full of air bubbles, 30-40 minutes.
GRANDPA MCANDREW'S IRISH SODA BREAD
My mom bugged grandpa for this recipe but he told her he didn't have one. So, when he made the bread one day she captured each ingredient in a bowl and measured it and put it in the bowl he planned to mix it in!

- Preheat the oven to 350 degrees F (175 degrees C). Grease a cast iron skillet.
- In a medium bowl, mix together the flour, baking soda and sugar. Toss the raisins with the flour mixture until coated. Make a well in the center and add the egg, buttermilk, and melted margarine. Stir until all of the dry ingredients are absorbed. Turn the dough out onto a floured surface and knead for a few quick turns just to even out the dough. Handle the dough as little as possible. Pat into a flat circle, and place into the prepared pan.
- Bake the bread for 40 to 45 minutes in the preheated oven, or until the edges are golden.

- Combine water and yeast in a bowl; let stand until foamy, about 5 minutes. Add flour, salt, sugar, and oil, stirring until a ragged dough forms.
