After making more of these pound cakes than I can count over the holidays, I've decided to share this fabulous recipe. This is my grandmother's, and it definitely packs on the pounds! Don't leave this lying around your house, because you will eat it all! I also decorate the top with colored sugars depending on the holiday or event.

1 cup unsalted butter, softened
3 cups white sugar
6 large eggs, at room temperature
3 cups all-purpose flour
¼ teaspoon baking soda
1 (8 ounce) container sour cream, at room temperature
1 teaspoon vanilla extract
1 teaspoon almond extract
2 tablespoons powdered sugar, or to taste

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Grease and flour a 10-inch tube pan.
  • Beat butter with an electric mixer until soft and creamy, scraping the sides of the bowl as you go, about 2 minutes. Gradually add in sugar on medium speed. Add eggs one at a time, beating after each addition until the yellow disappears from the previous one.
  • Combine flour and baking soda in a bowl. Add sour cream to the creamed butter mixture alternately with the flour, ending with sour cream. Beat in vanilla and almond extract just until combined. Pour batter into the prepared cake pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour and 20 minutes. Cool on a wire rack for 5 minutes. Run a table knife around the edges to loosen. Invert carefully onto a serving plate or cooling rack. Let cool, about 30 minutes. Dust with powdered sugar.

2 eggs
1 (20 ounce) can crushed pineapple with juice
2 cups all-purpose flour
1 cup white sugar
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon vanilla extract
½ cup packed light brown sugar
½ cup chopped walnuts
½ cup butter
½ cup white sugar
½ cup evaporated milk
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix the eggs, undrained crushed pineapple, flour, 1 cup of the white sugar, baking soda, salt, and 1 teaspoon of the vanilla together and stir until just combined. Pour batter into one ungreased 9x13 inch baking pan.
  • Combine the light brown sugar and the chopped nuts. Sprinkle over the top of the cake batter. Bake in preheated oven for 25 to 35 minutes or until cake tests done. Remove cake from oven and pour topping over hot cake.
  • To Make Topping: In a small saucepan combine the butter or margarine, the evaporated milk, the remaining 1/2 cup of the white sugar, and 1 teaspoon of the vanilla. Cook over medium low heat, stirring occasionally until sugar is dissolved. Mixture will be thin. Pour over hot cake.

This is my Granny's pound cake. One year my dad took one to work with him. All of the men he worked with were asking him if they could buy a cake from Granny. She sold those cakes for $20 each and had to tell my dad she wasn't making any more before they left her alone. That's how she got her Christmas money that year, and it was a very good Christmas. She passed away about 2 years ago, and I thought this recipe was lost. Fortunately my Grandma had it and now I have it. Here it is.

1 cup margarine, softened
1/2 cup shortening
3 cups sugar
1 cup condensed milk
3 cups all-purpose flour or 3 cups cake flour
6 large eggs, at room temperature

Steps:

  • DO NOT PREHEAT THE OVEN.
  • Mix butter and shortening until lightly mixed.
  • Mix sugar in one cup at a time.
  • Mix eggs in one at a time.
  • Mix milk and flour in alternately.
  • Grease bunt pan and pour in batter.
  • Put your batter in a COLD oven.
  • Bake at 300 degrees for 1 hour and 30 minutes, or till toothpick comes out clean.
  • Remove from oven and then from pan.
  • "Sweat" the cake, by wrapping it in wax paper and tinfoil, until it cools. This will make it moist. It won't be anywhere near as good if you don't do this.

But what if we told you that you could have your bananas Foster baked into cake and glazed with that same sauce? This slightly dense, buttery cake is delicious warm, and super moist. Take care when flambéing - keep a lid nearby to smother any flames - or skip it altogether: Bypass adding the alcohol in Step 3 and simply reduce the sauce on the stovetop. And don't forget to add that scoop of ice cream and a dollop of fresh whipped cream. You'll thank us later.

1 cup/225 grams unsalted butter (2 sticks), at room temperature
3 cups/375 grams self-rising flour

4 ripe bananas

1 nip bottle/50 milliliters dark liquor (such as cognac, bourbon or whiskey) or buttermilk (about a scant 3 1/2 tablespoons)

Steps:

  • Heat oven to 325 degrees and generously coat a 10-inch/12-cup Bundt cake pan with nonstick cooking spray.
  • Make the bananas Foster filling: Peel the bananas and cut them crosswise into 1/2-inch slices. Melt butter in a medium (10-inch) skillet over medium heat. Stir in the brown sugar and cinnamon, then add the sliced bananas. Cook, stirring occasionally, until a sugary syrup forms, 2 to 3 minutes.
  • Turn off the flame (or if using an electric stove, pull the skillet off the heat) and add the liquor, if using. Return pan to the heat and, if using a gas stove, slightly tilt the pan near the flame to flambé. (If using an electric stove, light the liquid with a long-reach lighter.) Let the flames die down, swirling the pan until the alcohol burns off. Reduce heat to low and stir briefly with a wooden spoon. (Alternatively, skip adding the alcohol, add buttermilk and cook sauce just until the liquid reduces slightly.) Strain liquid from bananas into a medium bowl to separate bananas and sauce; set both aside.
  • Make the cake: In a stand mixer or with a hand-held mixer on medium speed, cream together granulated sugar and butter until light and fluffy, about 4 to 5 minutes.
  • Sift the flour into a medium bowl. In a small bowl or liquid measuring cup, mix together the sour cream and buttermilk.
  • Once the butter is creamed, add 1 egg at a time and mix until each is fully incorporated, scraping down the sides of the bowl after each addition.
  • Add half the flour and mix on low speed until fully incorporated. With the mixer running, add the buttermilk mixture in a slow, steady stream and mix until fully incorporated. Add the remaining flour and mix.
  • Once fully combined, add the vanilla and mix to incorporate. By hand, fold in strained bananas.
  • Pour the batter into the prepared pan and smooth evenly. Bake for 65 to 80 minutes, until a toothpick or cake tester comes out clean.
  • While the cake cools, prepare the glaze: Sift the confectioners' sugar into the bowl with the reserved banana sauce and whisk to combine. If the glaze is too thick, thin with water (or buttermilk), 1 tablespoon at a time, until it's smooth, drizzles easily and coats the back of a wooden spoon.
  • Once cake has cooled, invert it onto a large serving plate, and spoon the glaze over. Slice the cake and serve with ice cream or whipped cream and candied pralines, if desired.

True pound cake doesn't include leavening, meaning that it gets all its lift from eggs and the air that is incorporated into the batter when creaming the butter and sugar. For best results, bring the ingredients to room temperature before you begin. Granny's old-fashioned pound cake is true to its name, calling for a pound each of butter, eggs, flour, and sugar. Proof that "plain" can be a beautiful thing.

Yield makes one 10-inch bundt or tube cake/serves 10 to 12

2 1/2 cups sugar (about 1 pound)
1 pound (4 sticks) unsalted butter, softened
1/2 teaspoon kosher salt
7 large eggs (about 1 pound)
3 1/2 cups all-purpose flour (about 1 pound)
3/4 cup heavy cream
1 tablespoon pure vanilla extract
1/4 teaspoon freshly grated nutmeg

Steps:

  • Preheat the oven to 325°F. Lightly grease and flour a 10-inch Bundt or tube pan. Have all the ingredients at room temperature before you begin.
  • Cream the sugar, butter, and salt in a large bowl with an electric mixer until light and fluffy, about 3 minutes (see Know-how, page 315). Add the eggs one at a time, beating well and scraping down the sides of the bowl after each addition.
  • Add the flour to the butter mixture in thirds, alternating with the cream and beginning and ending with the flour, stopping to scrape down the bowl several times and stirring just until all is incorporated. Do not overmix. Add the vanilla and nutmeg and stir to combine.
  • Spoon the batter into the prepared pan and spread evenly. Give the pan a rap on the counter to settle the batter and get rid of any air bubbles. Place the pan on the center rack of the oven and bake for 1 hour, undisturbed. Check the cake, rotate the pan, and bake for another 15 to 20 minutes, or until the cake is golden brown and a wooden skewer inserted in the center comes out clean.
  • Remove the cake from the oven and cool in the pan for 15 to 20 minutes. Run a small knife around the outer and inner edges of the pan before turning the cake out onto a baking rack to cool. Slice and serve warm or at room temperature.
  • This sticky-sweet treat brings out the kid in everyone, especially when served with a cool, tall glass of milk.
  • Makes 1 sandwich
  • Take 2 thin slices of Granny Foster's Simple Pound Cake (recipe above) and spread 1 slice with your favorite creamy caramel sauce. Sandwich the slices together and lightly coat the exterior of each with soft unsalted butter.
  • Place the sandwich in a hot skillet and cook until the cake is toasted and light golden on both sides and the caramel is gooey and warm in the center. Serve warm topped with soft vanilla or dulce de leche ice cream.
  • The first step in making most butter-based cakes, quick breads, and cookies is to cream butter and sugar until light and fluffy before beating in the eggs. This deceptively easy process-in which, essentially, lots of air is mixed into the batter-actually plays an important role in giving baked goods lots of lift and a nice, soft crumb. This is especially important in recipes like this pound cake, where eggs and air are the only leavening agents and must do all the "heavy lifting" on their own. Here's the idea: cream the butter and sugar on high speed until the texture turns from creamy and grainy to fluffy and smooth and the color lightens by a shade or two. This takes a good 3 minutes or more, so don't rush this part of the process. A general rule of thumb is that the more you beat the sugar, butter, and eggs, the better-but as soon as you add the flour, it's a completely different story. Once the flour is in the picture, the batter should be mixed as little as possible so it doesn't toughen.
