GRILLED LAMB GREEK SALAD WRAP

1/4 cup olive oil
2 tablespoons lemon juice
1 tablespoon finely chopped lemon zest
4 cloves garlic, coarsely chopped
2 tablespoons coarsely chopped rosemary leaves
1 1/2 pound lamb tenderloin
4 pocketless pitas or Lavash
1 cucumber, peeled and cut into 1/2-inch dice
2 tomatoes, cut into 1/2-inch dice
1 small red onion, finely sliced
2 tablespoons mint chiffonade
Salt and freshly ground pepper
1 cup yogurt, drained
1/4 cup crumbled feta cheese
1/4 teaspoon cumin
1 tablespoon lemon juice
2 cloves garlic, finely chopped

Steps:

  • Whisk together olive oil, lemon juice, zest, garlic and rosemary in a medium shallow baking dish, add lamb and turn to coat. Marinate in refrigerator for 2 hours. Preheat grill. Grill lamb on both sides for 3 to 4 minutes for medium doneness. Let sit 10 minutes and slice into 1/4-inch thick slices.
  • Tomato Salad: Mix all ingredients together and let sit at room temperature for 30 minutes.
  • Feta Yogurt Sauce: Place 4 slices of lamb in the center of each pita. Top with tomato salad and drizzle with yogurt sauce.

  • Spread tortillas with hummus.
  • Toss remaining ingredients in medium bowl.

1 large vine ripened tomato
50cm piece of cucumber
6 kalamata olives , optional
2 very large soft tortilla wraps
50g feta cheese
2 heaped tbsp hummus

Steps:

  • Roughly chop the tomato, cut the cucumber into sticks and split and stone the olives (if using).
  • Now heat the tortillas. If you have gas, put each one for 10 seconds on a lit gas ring - you have to be a little bit brave - then turn it over quickly, using tongs, and heat the other side for another 8 seconds or so. The tortillas will be slightly charred in places, which adds a fantastic flavour. If you don't have gas, warm a pan to a medium heat before quickly tossing in your tortillas one at a time. You don't need to have any oil on the pan.
  • Make a row of tomato, cucumber, feta and olives down the centre of each warm tortilla. Now spread the hummus around the top and sides of the tortilla. Fold in the sides to seal in the ingredients and roll up tightly to make a big cigar. Cut in half and eat with your fingers.

1 teaspoon finely grated lemon zest plus 2 tablespoons lemon juice
1/4 teaspoon finely grated garlic
4 whole-wheat pitas
2 small cucumbers, very thinly sliced crosswise
1 cup grape tomatoes, halved
1/2 small red onion, thinly sliced
3 ounces reduced-fat feta cheese, crumbled (3/4 cups)
1/3 cup pitted Kalamata olives, coarsely chopped
1/3 cup coarsely chopped fresh flat-leaf parsley

Steps:

  • Preheat oven to 375 degrees. Stir together yogurt, lemon zest, and garlic. Arrange pitas on a baking sheet; bake until warmed and pliable, about 3 minutes.

  • In a large bowl add, spring salad mix, cucumbers, Kalamata olives, tomatoes, scallions and feta cheese. Drizzle salad dressing on top and toss to combine. Season with salt and pepper to preference. Set aside.
  • Fill a pie pan with warm water. Submerge 1 rice paper into the hot water for about 2-4 seconds. Transfer wet rice paper on to a flat damp towel (flour sack towel works best). Lay one piece of butter leave lettuce down, leaving about 1/2-inch border all the way around. Spread 1 -2 tablespoons of hummus on top. Layer with salad mixture. Fold the bottom of the rice paper over the filling. Next fold both sides in towards the center. 3. Roll it up, while making sure that along the way, the filling is being tucked and pressed into a tight cyclinder. Cut in half if serving immediately. If lettuce rolls are being saved for a later time, wrap each one individually with plastic wrap.
