"We like to fix these generous sandwiches whenever we have leftover turkey in the house," Jean Graf-Joyce writes from Albany, Oregon. "They're easy to make and a perfect choice for a light meal on the deck or patio."

1/4 cup plain yogurt
1/4 cup chopped seeded peeled cucumber
1/4 teaspoon lemon-pepper seasoning
1/4 teaspoon dried oregano
1/8 teaspoon garlic powder
1/4 pound cooked turkey breast, cubed
2 whole pita breads, warmed
1 small tomato, sliced
2 slices red onion, halved
2 pitted Greek olives, sliced
2 pepperoncini, sliced
1/2 cup shredded lettuce
2 tablespoons crumbled feta cheese

Steps:

  • In a small bowl, combine the first five ingredients. Stir in the turkey. Cover and refrigerate for at least 1 hour., Spoon turkey mixture onto each pita; top with tomato, onion, olives, pepperoncini, lettuce and feta cheese. Fold in half.

3/4 pound uncooked turkey breast
2 tablespoons butter
2 garlic cloves, minced
1-1/4 cups heavy whipping cream
2 tablespoons minced fresh basil or 2 teaspoons dried basil
1/4 cup grated Parmesan cheese
Dash pepper
3 to 4 cups hot cooked pasta

Steps:

  • Cut turkey into 2-in. x 1/4-in. pieces. In a large skillet, saute turkey in butter until turkey is browned and no longer pink, about 6 minutes. Add garlic; cook 1 minute longer., Add the cream, basil, cheese and pepper; bring to a boil. Reduce heat; simmer for 3 minutes, stirring frequently. , Stir in pasta and toss to coat.

1 (16 ounce) package rigatoni pasta
¼ cup butter
¼ cup all-purpose flour
1 cup turkey stock
½ cup pasta sauce
1 cup water
½ (1 ounce) package dry onion soup mix
1 teaspoon crushed garlic
salt and pepper to taste
⅓ cup shredded Monterey Jack cheese
⅓ cup shredded sharp Cheddar cheese
1 pound cooked turkey breast, cubed

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • In a large saucepan or deep skillet, melt the butter over low to medium heat; blend in flour. Slowly add turkey stock, pasta sauce, and water. Mix well. Stir in onion soup mix and garlic; season with salt and pepper.
  • Sprinkle in the Monterey Jack, Cheddar cheese and turkey. Stir until the cheese is melted and the meat is heated through. Spoon sauce over pasta and serve.

1 package (20 oz) lean (at least 90%) ground turkey
1 small onion, chopped (1/4 cup)
1/2 cup sliced ripe olives
1 can (14.5 oz) diced tomatoes with basil, garlic and oregano, undrained
1 can (8 oz) tomato sauce
1 teaspoon dried oregano leaves
1/2 teaspoon garlic salt
1/2 medium cucumber, thickly sliced, slices quartered (about 1 cup)
1/2 cup crumbled feta cheese (2 oz)

Steps:

  • Cook and drain pasta as directed on package.
  • Meanwhile, in 12-inch skillet, cook turkey and onion over medium heat 8 to 10 minutes, stirring occasionally, until onion is tender and turkey is no longer pink; drain.
  • Stir in olives, tomatoes, tomato sauce, oregano, garlic salt and cucumber. Reduce heat to low. Simmer uncovered about 15 minutes, stirring occasionally, until hot. Serve over pasta; sprinkle with cheese.

8 ounces fettuccine
1 lb turkey cutlets
1 teaspoon all purpose Greek seasoning or 1 teaspoon italian seasoning, divided
1/4 cup all-purpose flour
5 tablespoons olive oil, divided
1/2 cup red onion, chopped
1 (14 1/2 ounce) can diced tomatoes with balsamic vinegar basil and oil, undrained
1 (3 7/8 ounce) can sliced black olives, pitted and drained
1/2 cup feta cheese, crumbled
chopped fresh parsley, garnish

Steps:

  • Prepare pasta according to package directions.
  • Meanwhile, sprinkle cutlets with 3/4 t Greek seasoning or dried Italian seasoning.
  • Dredge in flour.
  • Cook half of cutlets in 1 1/2 T hot oil in a large nonstick skillet over medium-high heat 3 minutes on each side or until done.
  • Repeat procedure with remaining cutlets and 1 1/2 T oil.
  • Remove from skillet, reserving drippings in skillet.
  • Heat remaining 2 T oil in skillet with drippings; add onion and remaining 1/4 t Greek seasoning, and saute over medium heat 2-3 minutes or until tender.
  • Stir in tomatoes and olives, and cook 1 minute or until thoroughly heated.
  • Remove from heat and toss in hot cooked pasta until blended.
  • Transfer pasta mixture to a large serving bowl, and sprinkle with half of feta cheese.
  • Top with cutlets and remaining feta cheese.
  • Garnish, if desired, with fresh parsley.
  • Serve immediately.
