CREAM CHEESE-FILLED BAGEL BALLS
These cream cheese-filled bagel balls are perfect for breakfast and are super easy to make! The dough requires no yeast, and is a healthier alternative to regular dough! Two-ingredient dough is packed with protein thanks to the yogurt, and is free of the preservatives and artificial ingredients found in many prepared doughs. Once made, you can work with it immediately. That means you don't have to spend time waiting for the dough to proof before you make a meal.

Steps:
- Preheat the oven to 450 degrees F (230 degrees C). Grease a baking pan.
- Mix 1 cup flour, baking powder, and 1/2 teaspoon salt together. Mix in Greek yogurt and knead until all flour is mixed in; if dough is sticky, add more flour.
- Cut dough into 8 equal pieces. Roll each piece into a ball and press each ball into a flat circle; they should look like mini pizzas.
- Scoop cream cheese into the center of each circle. Fold the edges up and pinch closed so you have a round ball of dough with cream cheese inside. Make sure you seal the edges so the cream cheese doesn't spill out during baking. Place seam side down on the prepared baking pan.
- Mix egg, half-and-half, and a pinch of salt in a small bowl. Brush egg wash on top of each dough ball and sprinkle with bagel seasoning.
- Bake in the preheated oven until golden brown, about 10 minutes. Remove from the oven and brush with melted butter before serving.

- Line a strainer with two layers of cheesecloth. In a medium bowl, mix together the yogurt, salt, pepper and garlic.
- Pour into the cheesecloth lined strainer. Place the strainer over another bowl to catch the liquid, and refrigerate for 1 to 2 days, until all of the liquid has drained off. Empty the drainage bowl occasionally so you can see when the cheese has stopped draining.
- Transfer cheese to a covered container, and store in the refrigerator for up to two weeks.

- Set a mesh strainer over a large bowl. The bowl should be deep enough so that there are at least a few inches of space between the bottom of the bowl and the strainer.
- Line the strainer with a fine mesh nylon straining bag (or 2 layers of cheesecloth.) I like nylon bags instead of cheesecloth because they last forever and are so much easier to clean. They can be rinsed and laundered over and over again.
- Pull the fabric up around the yogurt and twist it tightly so liquid starts dripping into the bowl (you can use a clip if you like to hold it tight.) Place a small plate on top, and then weight it down with a brick or heavy can. Set this in the fridge for 24 hours. Check it once or twice to make sure that it's draining. If not, increase the pressure, and make sure the yogurt is sitting above the liquid. The longer you let it drain, the thicker the cheese will become. It can go up to 48 hours, but usually 24 hours is sufficient.

- To prepare these amazing yogurt balls, you need to drain all the excess water from the yogurt. Lay a piece of muslin (loosely woven cotton fabric) on a workbench and place the yogurt in the centre. Gather up the muslin sides and tie with string; place on a drainer over a large bowl and leave to drain in the fridge for 12-14 hours.
- Remove the muslin and place the yogurt in a large bowl. Add the fresh herbs, the lemon zest and lime zest and blend. Roll the yogurt into golf-sized balls, lay on a baking tray and put them in the fridge for another 2-3 hours.
- Drizzle with extra virgin olive oil and serve with some cherry tomatoes and crackers aside as a delicious snack. Enjoy!
