1 medium green pepper, chopped
1 small onion, chopped
3 tablespoons butter
4 cups fresh corn (about 9 ears of corn)
1/4 cup hot water
1 jar (2 ounces) diced pimientos, drained
1 tablespoon honey
1 teaspoon salt
Dash pepper
1/2 cup shredded cheddar cheese
4 bacon strips, cooked and crumbled

Steps:

  • In a large skillet, saute green pepper and onion in butter until tender. Add the corn, water, pimientos, honey, salt and pepper., Bring to a boil. Reduce heat; simmer, uncovered, for 8-10 minutes or until corn is tender. Sprinkle with cheese and bacon.

6 slices bacon
8 large ears corn (preferably white), husks and silk removed
Kosher salt and freshly ground pepper

Steps:

  • In a large skillet (seasoned cast iron does well here), cook the bacon over medium-high heat until crisp. Transfer to a paper towel-lined plate; reserve the drippings in the pan.
  • Cut the stalk ends of the corn to make a flat surface, then stand the ears up and shave the corn from the cobs with a chef's knife, leaving about half of each kernel on the ear. With the back of the knife, scrape the cobs over a shallow dish to extract as much liquid as possible. (You should have equal parts kernels and liquid; add water if necessary.) Return the skillet to medium-low heat and add the kernels and liquid.
  • Season the corn mixture lightly with salt and pepper and cook until creamy, stirring often, 30 to 45 minutes (add water if the pan gets too dry). Serve warm or at room temperature. Crumble the bacon on top.

1/3 cup, plus 3 tablespoons, extra-virgin olive oil
2 large leeks, white and light green parts only, cut into 1/8-inch slices (about 2 cups)
1 pound mixed dark greens (chard, lacinato kale, spinach), washed, stems removed and cut into broad ribbons
2 teaspoons kosher salt
4 scallions, white and light green parts only, thinly sliced
2 tablespoons finely chopped dill
3 tablespoons roughly chopped flat-leaf parsley
2 ounces kefalograviera, kefaloteri or kasseri cheese, grated (about a heaping 1/2 cup)
1/2 cup ricotta cheese
1/2 cup manouri or feta cheese
2 eggs, lightly beaten
1 1/4 cup whole milk
1 cup cornmeal
All-purpose flour, as needed
Greek yogurt, for serving

Steps:

  • Preheat the oven to 375 degrees. Grease a 10-inch straight-sided skillet or baking pan with 2 tablespoons of the olive oil. In a deep-sided sauté pan at least 12 inches wide, heat 1/3 cup olive oil over medium heat. Add the leeks and cook, stirring occasionally, until they have softened but not colored, about 10 minutes. Add as many of the greens as can fit in the pot, along with 1 teaspoon salt. Stir and cover until the greens have wilted, 2 to 3 minutes. Add the remaining greens, stir, and cover until they have wilted, another 2 to 3 minutes. Remove from the heat and stir in the scallions, dill and parsley. Transfer the mixture to a colander set over a bowl and let cool to room temperature.
  • Meanwhile, in a large bowl, mix the kefalograviera, ricotta and manouri. Squeeze excess liquid from the cooled greens and add them to the cheeses. Season to taste with salt and pepper. Stir in the eggs and set aside.
  • In a small saucepan, heat the milk over medium heat until it starts to bubble. Whisk in the cornmeal and 1 teaspoon salt. Continue stirring as the mixture thickens into an almost unstirrable paste. Remove from the heat. With lightly floured fingers, press half of the mixture into a thin layer across the bottom of the prepared pan. Top with the greens and cheese filling, spreading each evenly to the edges. Stir about 1/2 cup water into the remaining cornmeal to make a milkshake-thick batter (there will be a few lumps). Pour the thinned batter across the filling (some greens will poke through). Drizzle the remaining tablespoon of olive oil across the top of the pie. Bake until firm and golden brown around the edges, about 1 hour.
  • Serve warm or at room temperature, with Greek yogurt on the side.

This is my favorite gift to give during the holidays. (When I give it away in holiday tins the tins keep coming back for refills =) This makes a large batch...enough to fill 5-6 one-gallon storage bags.

Number Of Ingredients 8

1 cup white popcorn
2 cups margarine (1 lbs)
4 cups light brown sugar (2 lbs)
1 cup light corn syrup
1 1/2 teaspoons salt
2 teaspoons baking soda
2 teaspoons vanilla (pure)
2 lbs mixed nuts (optional)

Steps:

  • Pop corn and place in large shallow baking pans.
  • (I use an air popper) Preheat oven to 225- 250 F In a large pot, melt butter and stir in brown sugar.
  • (pot must be large enough for that when the mixture boils it has room to double when you add the baking soda) Add salt and syrup and over medium heat stir until the mixture come to a rolling boil.
  • Boil five minutes without stirring.
  • Add vanilla and baking soda.
  • Stir with a long handled wooden spoon until mixture doubles and the soda is evenly distributed Remove from heat and immediately pour over popcorn distributing caramel mixture evenly.
  • Stir and bake for 45 minutes stirring every 15 minutes.
  • Remove from oven and immediately turn corn out on a clean work surface Cool and break up.
  • Add mixed nuts and package in air-tight containers.

1 (15.25 ounce) can whole kernel corn, drained
1 (15.25 ounce) can white or shoepeg corn, drained
1 (8 ounce) can water chestnuts, drained and chopped
1 (4 ounce) jar diced pimientos, drained
8 medium (4-1/8" long)s green onions, thinly sliced
2 stalk (blank)s celery ribs, chopped
1 medium green pepper, chopped
½ cup vinegar
½ cup sugar
¼ cup vegetable oil
1 teaspoon salt
¼ teaspoon pepper

Steps:

  • In a large bowl, combine the first eight ingredients.
  • In a small bowl, combine vinegar, sugar, oil, salt and pepper; whisk until sugar is dissolved. Pour over corn mixture; mix well. Cover and refrigerate for at least 3 hours. Stir just before serving; serve with a slotted spoon.
