Sweet/savory hybrids can be tricky sometimes but I think this worked beautifully. We are talking about bacon, cheese, and onions after all, so it wasn't that big of a shock. The way the chipotle-spiced maple syrup brought everything together was a risk well rewarded.

8 ounces bacon, chopped
½ cup thinly sliced green onions
1 ¼ cups all-purpose flour
¾ cup cornmeal
1 tablespoon baking powder
¾ teaspoon salt
1 pinch ground black pepper
1 pinch cayenne pepper
1 ⅓ cups milk
2 ounces sharp Cheddar cheese, grated
2 large eggs, beaten
2 tablespoons butter, melted
1 tablespoon white sugar
1 cup warm maple syrup, or to taste
⅛ teaspoon chipotle chile powder, or to taste
1 teaspoon vegetable oil
1 teaspoon butter

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, stirring occasionally, until evenly browned, about 10 minutes; remove from heat. Stir green onions into bacon and saute in hot fat until slightly softened, 1 to 2 minutes. Transfer bacon mixture to a strainer to drain, retaining drippings.
  • Whisk flour, cornmeal, baking powder, salt, black pepper, and cayenne pepper together in a large bowl. Add drained bacon mixture, milk, Cheddar cheese, eggs, melted butter, and sugar to flour mixture; whisk until batter is smooth. Let batter rest for 10 minutes.
  • Combine maple syrup and chipotle chile powder together in a small bowl; whisk until chile powder is completely dissolved.
  • Heat 1 teaspoon bacon drippings, 1 teaspoon oil, and 1 teaspoon butter on a griddle over medium-high heat. Drop batter by 1/4-cupful onto the griddle and cook until bubbles form and the edges are dry, 3 to 4 minutes. Flip and cook until browned on the other side, 2 to 3 minutes. Repeat with remaining batter. Transfer pancakes to plate and top with maple syrup.

Water, vegetable oil and eggs called for on cake mix box
Large tray or cardboard covered with wrapping paper and plastic food wrap or foil
1 container Betty Crocker™ Whipped fluffy white frosting
1 cup flaked or shredded coconut
1 large black gumdrop
1 large green gumdrop
3 pieces red shoestring licorice
4 semisweet chocolate chips
2 chocolate wafer cookies

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pans). Make, bake and cool cake as directed on box for two 8-inch or 9-inch rounds, or use one 8-inch round pan and one 9-inch round pan.
  • On tray, arrange cake rounds as pictured. Frost with frosting. Sprinkle with coconut, pressing gently so it sticks.
  • Carefully cut black gumdrop for nose and eyebrows, cut green gumdrop for eyes, use licorice for mouth and muffler and chocolate chips for buttons. Place cookie on each side of head for earmuffs; attach across top of head with licorice. Store loosely covered.

An excellent and simple recipe, these will make some delicious green onion cakes that are addictive and are just as good, if not better, than the store bought ones.

3 cups bread flour
1 ¼ cups boiling water
2 tablespoons vegetable oil
salt and pepper to taste
1 bunch green onions, finely chopped
2 teaspoons vegetable oil, or as needed

Steps:

  • Use a fork to mix flour and boiling water in a large bowl. Knead dough into a ball. Cover bowl with plastic wrap; let dough rest for 30 to 60 minutes.
  • Evenly divide dough into 16 pieces. Roll each piece into a 1/4 inch thick circle. Brush each circle with oil, season with salt and pepper, and sprinkle with about 1 teaspoon of green onions. Roll up, cigar style; coil each pancake and pinch open ends together to form a disc. Roll each circle flat to about 1/4 inch thickness.
  • Heat 2 teaspoons oil in a large skillet. Fry cakes until golden brown, about 2 minutes on each side. Add more oil between batches, if necessary.

3 ounces unsweetened chocolate
1/2 cup butter
2 cups sugar
3 eggs
1 teaspoon vanilla
1 teaspoon green food coloring
2 1/4 cups all-purpose flour
2 teaspoons baking soda
1 cup sour cream
1 cup boiling water
cooking spray
1 (16 ounce) container frosting
decorative candies (candy corns, sprinkles)

Steps:

  • You will need 2 (9-inch) round cake pans.
  • Preheat oven to 350 degrees.
  • Melt Chocolate in small saucepan over low heat. Allow to cool.
  • Put butter, sugar, and eggs in a large mixing bowl. Beat with electric mixer on medium speed until light and fluffy.
  • Add vanilla and the melted, cooked chocolate.
  • Add green food coloring. Beat on low speed for about 1 minute until batter is blended.
  • Sift flour and baking soda into second. Add to batter alternately with sour cream, mixing with with long wodden spoon.
  • Add boiling water to batter and mix again.
  • Batter will be runny.
  • Spray bottom of baking pans with cooking spray. Lightly flour. Pour batter into pans and bake for about 35 minutes. Cool for 15 to 20 minutes. Frost and decorate.

1/3 cup canola oil
1 large egg, room temperature
1/2 cup plus 2 tablespoons all-purpose flour

3/4 cup chopped peeled mango
1/4 cup chopped pecans

Steps:

  • In a small bowl, beat the sugar, oil and egg until well blended. In another bowl, combine the flour, baking powder, salt, cinnamon and nutmeg; gradually beat into sugar mixture and mix well. Fold in mango and pecans., Transfer to a greased 6-in. round baking pan. Bake at 375° for 25-30 minutes or until a toothpick inserted in the center comes out clean. These chewy fried Chinese flatbreads are delicious! They are common at fairs and festivals in Edmonton, Alberta, Canada where I lived for 5 years. They are commonly served with fiery hot Chinese chili garlic sauce that you can find at most grocery stores. If you're not into spicy food, you can serve this with plum sauce or sweet and sour dipping sauce instead. Although, these are lengthy instructions, the green onion cakes are pretty easy to make and well worth the effort. If you don't want to cook them all at once, you can freeze the uncooked cakes, then thaw and fry them as needed. If you freeze them, separate each cake with a small piece of wax paper.

2 cups all-purpose flour
3/4 cup hot water
1 cup green onion, finely chopped
1 teaspoon honey
1/2 teaspoon salt
2 tablespoons vegetable oil

Steps:

  • Add salt to flour in a mixing bowl and mix throughly.
  • Add honey to hot water in a separate cup or dish until the honey melts and mixes with the water.
  • Slowly add water/honey mixture into the flour while stirring the flour.
  • Knead the mixture until smooth (approximately 5 minutes). If it is too dry add a little extra water. If it is too wet, add a little flour.
  • Cover with plastic wrap and refrigerate for at least 1 hour.
  • After at least an hour remove mixture and roll into a sausage shape and divide into 10 equal portions. You will work with one cake at a time so cover the others so they don't dry up.
  • For each portion of dough, roll into a ball between the palms of your hands, then on a floured surface roll the dough out into a thin round pancake.
  • Sprinkle the surface of the dough with green onions.
  • Roll the pancake into a sausage shape, trapping all the green onions inside the dough.
  • Roll the dough again along the length of the sausage to make a coil shape.
  • With the coil still standing up on your counter top flatten it with the palm of your hand (if you flatten it with the coil lying flat on your counter, the onion cake will open up while cooking).
  • Roll the dough into a circle about 5 inches in diameter and place to the side while you make the rest of the cakes.
  • Heat up the oil in a frying pan or skillet at a medium heat and fry each cake, one side at a time, until it is light brown.
  • Cut into quarters and serve with chili garlic dipping sauce.

1 cup water
1/2 cup butter
1 cup all-purpose flour
4 large eggs
FILLING:
2 packages (3.4 ounces each) instant vanilla pudding mix
3 cups cold whole milk
1 package (8 ounces) cream cheese, softened
TOPPING:
1 carton (8 ounces) frozen whipped topping, thawed
Chocolate sauce
Chopped nuts

Steps:

  • In a saucepan, bring water and butter to a boil. Add flour all at once and stir until mixture forms a ball. Remove from heat and cool slightly. Add eggs, one at a time, beating well after each addition., Spread on a greased 15x10x1-in. jelly roll pan. Bake at 400° for 30 minutes. Cool but do not prick, leaving surface with its "moon-like" appearance. , Meanwhile, for filling, beat pudding and milk until thick. Add cream cheese; blend well. Spread on crust; refrigerate 20 minutes. Top with whipped topping. Drizzle chocolate sauce over top and sprinkle with nuts.
