An amazing, creamy chocolate cheesecake!

3½ tablespoons butter
1 cup finely crushed wafer cookies
2 tablespoons granulated white sugar
32 ounces cream cheese, (at room temperature)
1 cup granulated white sugar
4 large eggs
1½ cups sour cream
2 teaspoons vanilla extract
1 cup miniature semi-sweet chocolate chips
8 ounces chopped semi-sweet chocolate, (melted)
fresh raspberries and chocolate curls, (for garnish (optional))

Steps:

  • Heat butter in a saucepan until melted. (Alternately, you can melt it in a bowl in the microwave). Remove from heat and stir in the cookie crumbs and sugar. Pat the crumb mixture over the bottom of a 9-inch springform pan that has been sprayed with nonstick spray. Place the crust-lined pan in the freezer.
  • Preheat the oven to 275°F.
  • In a large bowl, use an electric mixer to beat the cream cheese and sugar until creamy. Add the eggs 2 at a time, beating well after each addition. Stir in the sour cream and vanilla. Fold in the chocolate chips and the melted chocolate.
  • Spread the cheesecake batter over the frozen crust. Sprinkle a few extra chocolate chips on top. Tap the pan on the countertop to break apart any large air bubbles. Wrap the bottom and side of the pan with a double layer of heavy-duty foil.
  • Place the springform pan in a larger baking pan and fill the baking pan with enough water to measure 2 inches (this is a water bath). Bake for 1½ to 2 hours or just until the center is almost set. Remove the foil and place the pan on a wire rack. Let cool for 45 minutes.
  • Chill, covered, on the rack for 5 hours or longer. Garnish with raspberries and chocolate curls.

This is the most fabulous cheesecake! It is creamy, full of chocolate.. and the chipotle powder is my secret ingredient. It's just enough to add a more complex taste, but not overwhelm your senses with the heat. Super easy to do - this will be your new "go to" dessert!

24 chocolate creme stuffed cookies - crushed
1/4 c melted butter
1 tsp chipotle powder
18 oz cream cheese, room temperature
1/2 c sugar
1 Tbsp flour
1 tsp vanilla extract
1/2 tsp chipotle powder
4 oz semi-sweet baking chocolate
1/4 c raspberry flavored rum
2 extra large eggs
drizzle of chocolate syrup
1/2 c raspberries
1/3 c powder sugar sifted

Steps:

  • 1. Preheat oven to 325ºF.
  • 2. Combine cookie crumbs, chipotle powder, and butter. Press in the bottom of 8x8-inch foil-lined pan. Bake 10 min.
  • 3. Beat cream cheese, sugar, flour, vanilla, and chipotle powder until well blended. Mix in chocolate and rum. Slowly add eggs on low speed. Pour mixture into pan.
  • 4. Bake cheesecake for 45 minutes or until center is almost set. Cool completely and then refrigerate overnight.
  • 5. Decorate dessert plate with chocolate syrup. Carefully place cheesecake slice on plate; top with raspberries and sifted powder sugar.

I was looking for a dessert to bring to my friend's Mexican-themed party, so I decided to spice up a basic chocolate cheesecake recipe, and it was a hit! Garnish however you like - I used dried jalapenos.

1 tablespoon butter, melted (for preparing pan, or nonstick spray with flour in it like Baker's Joy)
18 cream-filled chocolate sandwich cookies, crushed to make about 1 1/2 cups crumbs (like Oreos)
1/2 teaspoon cinnamon
1 teaspoon dried chipotle powder
2 tablespoons unsalted butter, melted
8 ounces semisweet chocolate, melted and cooled (1 1/3 cup)
4 (8 ounce) packages cream cheese, room temperature
1 cup granulated sugar
1 1/2 teaspoons cinnamon
2 teaspoons dried chipotle powder
1/4 teaspoon cayenne pepper
3/4 teaspoon instant espresso powder (optional)
1 tablespoon pure vanilla extract
2 tablespoons all-purpose flour
4 large eggs, room temperature
8 ounces semisweet chocolate, chopped into small pieces (or use chips)
2/3 cup whipping cream (heavy)
1 tablespoon granulated sugar
12 jalapenos, dried (for garnish)

Steps:

  • Preheat oven to 350 degrees F. Prepare one 9 inch round springform pan with 3-inch sides by lining the bottom with a parchment paper circle.
  • Crust:.
  • Crush or grind the whole cookies, including the cream filling, to make crumbs. Mix with the cinnamon, chipotle powder, and butter, and pour the mixture into the springform pan. Using the bottom of a flat measuring cup or drinking glass, press the crumb mixture firmly and evenly across the bottom of the pan.
  • Bake 10 minutes. Remove from oven and place on a wire cooling rack to cool. When completely cooled, wrap bottom and sides of pan in a double layer of heavy duty aluminum foil to prepare for the water bath.
  • Reduce oven to 325 degrees F.
  • Chocolate Filling:
  • In top of a double boiler over hot water, melt the semisweet chocolate. Set aside to cool slightly.
  • In a large bowl, add the cream cheese, sugar, cinnamon, chipotle powder, cayenne pepper, and instant espresso powder (if using); mix on medium low speed with an electric mixer until smooth and creamy, 1 to 2 minutes.
  • Scrape the mixture off the paddle and scrape down the sides and bottom of the bowl with a rubber spatula so the mixture blends evenly and there are no lumps.
  • Add the vanilla and flour; beat until mixed. Add the melted chocolate; continue beating on medium low speed until thoroughly combined, about 1 minute.
  • Add the eggs, 2 at a time, beating until thoroughly combined, about 1 minute, scraping the bowl between additions.
  • Tip: Do not overbeat the cheesecake batter. Blend the ingredients quickly to add as few air bubbles as possible. The ingredients must be well blended, but excessive beating creates too many air pockets which can cause the cheesecake to puff up too much during baking, and then crack during the cooling process.
  • Let the filling rest about 5 minutes, or lightly tap on the counter, to allow air bubbles to rise to the surface.
  • Brush the melted butter around the sides of the cooled springform pan, and pour the cheesecake filling into the cookie crust.
  • Bake:
  • Set the foil-wrapped springform pan in a larger pan or roasting pan and transfer to the oven. Carefully pour HOT water into the roasting pan to come halfway up the sides of the springform pan, and close the oven door.
  • Bake 65 to 70 minutes.
  • Tip: The cheesecake is done when the edges are set but the center 2 to 3 inches are still a pool of liquid batter. The cake should look as though it has puffed a little and just barely beginning to brown. The center will still be soft and jiggly when the pan is lightly jarred or tapped with a spoon.
  • Remove from oven, place springform pan on a wire cooling rack to cool.
  • When the cheesecake is completely cooled, remove the sides of the pan, cover the cheesecake, and refrigerate for 12 to 24 hours before serving.
  • Chocolate Topping:
  • In a medium heavy-bottom pan, combine the chocolate, whipping cream, and sugar. Heat and stir over low heat until chocolate is melted and topping is smooth. Remove from heat and set aside to cool about 20 minutes or until starting to cool and thicken like pudding.
  • Pour over center of cheesecake; use a small offset spatula to spread the chocolate to the edges, letting some of the topping drip down the sides of the cheesecake.
  • Refrigerate the cheesecake until the topping is set, 20 to 30 minutes.
  • When ready to serve, garnish with chocolate shavings, dried jalapeno peppers, or whipped cream. Refrigerate leftovers.

This chicken casserole is a warm, gooey way to eat enchiladas without having to roll each one out. Perfect for cold evenings or just when you have a craving for enchiladas.

2 tablespoons salted butter
4 each jalapeno peppers, divided, or to taste
3 each poblano peppers, divided, or to taste
3 breast half, bone and skin removed (blank)s skinless, boneless chicken breasts, cut into large chunks
3 cloves garlic, minced
½ lime
1 (28 ounce) can green enchilada sauce (such as El Paso®)
10 each corn tortillas
2 cups shredded Mexican cheese blend
1 tablespoon chopped fresh cilantro, or to taste

Steps:

  • Melt butter in large skillet over medium heat. Roughly chop 1 jalapeno pepper and 1 poblano pepper; add to the skillet with chicken and garlic. Squeeze lime over mixture and add lime rind to the skillet. Cook, covered, until chicken is no longer pink and juices run clear, stirring occasionally, 20 to 25 minutes. Remove from heat and let cool.
  • Meanwhile, set an oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking sheet with aluminum foil. Place remaining jalapeno and poblano peppers onto the prepared baking sheet.
  • Cook peppers under the preheated broiler until the skin of the peppers has blackened and blistered, 5 to 8 minutes. Lower oven temperature to 375 degrees F (190 degrees C).
  • Chop cooked chicken into small pieces and place into a bowl. Add hot peppers to the bowl, cover, and let steam for 10 minutes. Peel skin from peppers, remove seeds, and slice.
  • Place small amount of enchilada sauce on the bottom of a 9x13-inch pan, just enough to cover the bottom. Place 5 tortillas on on top. Place 1/2 of the sliced poblano and jalapeno peppers on top of tortillas. Lay out 1/2 of the chicken and 1/2 of the Mexican cheese on top of the peppers. Spoon 1/2 of the remaining enchilada sauce on top of cheese layer. Repeat layering steps. Top with chopped cilantro.
  • Bake in the preheated oven until cheesy is melted and browning, about 25 minutes.

1 cup Gold Medal™ all-purpose flour
1/2 cup butter or margarine, softened
1/4 cup sugar
1 egg yolk
5 packages (8 oz each) cream cheese, softened
1 3/4 cups sugar
3 tablespoons Gold Medal™ all-purpose flour
1 tablespoon grated orange peel
1 tablespoon grated lemon peel
1/4 teaspoon salt
5 eggs
2 egg yolks
1/4 cup whipping cream
3/4 cup whipping cream
1/3 cup slivered almonds, toasted, if desired

Steps:

  • Heat oven to 400°F. Lightly grease 9-inch springform pan with shortening; remove bottom. In medium bowl, mix all crust ingredients with fork until dough forms; gather into a ball. Press one-third of the dough evenly on bottom of pan. Place on cookie sheet. Bake 8 to 10 minutes or until light golden brown; cool. Assemble bottom and side of pan; secure side. Press remaining dough 2 inches up side of pan.
  • Increase oven temperature to 475°F. In large bowl, beat cream cheese, sugar, flour, orange peel, lemon peel and salt with electric mixer on medium speed about 1 minute or until smooth. Beat in eggs, 2 egg yolks and 1/4 cup whipping cream, beating on low speed until well blended. Pour into baked crust. Bake 15 minutes.
  • Reduce oven temperature to 200°F. Bake 1 hour longer. Cheesecake may not appear to be done, but if a small area in the center seems soft, it will become firm as cheesecake cools. (Do not insert a knife to test for doneness because the hole could cause cheesecake to crack.) Turn off oven; leave cheesecake in oven 30 minutes longer. Remove from oven and cool in pan on cooling rack away from drafts 30 minutes.
  • Without releasing or removing side of pan, run metal spatula carefully along side of pan to loosen cheesecake. Refrigerate uncovered about 3 hours or until chilled; cover and continue refrigerating at least 9 hours but no longer than 48 hours.
  • Run metal spatula along side of pan to loosen cheesecake again. Remove side of pan; leave cheesecake on pan bottom to serve. In chilled small bowl, beat 3/4 cup whipping cream with electric mixer on high speed until stiff. Spread whipped cream over top of cheesecake. Decorate with almonds. Store covered in refrigerator.
