SAM'S NO.3 KICKIN' GREEN CHILI



Sam's No.3 Kickin' Green Chili image

Number Of Ingredients 13

25 fresh Anaheim green chiles or five 4 1/2-ounce cans green chiles
3 sticks (12 ounces) butter or margarine, plus more for sauteing pork
3 pounds pork, cut into 1/2-inch cubes
2 large white onions, cut into 1/2-inch dice
1 tablespoon plus 1 teaspoon salt
1 3/4 teaspoons ground black pepper
1 3/4 tablespoons ground dry mustard powder
2 teaspoons dried oregano
2 teaspoons granulated garlic
6 large tomatoes, cut into 1/2-inch dice
Two 14 1/2-ounce cans diced tomatoes
3 fresh jalapenos, diced, optional for added heat
1 cup flour

Steps:

  • If roasting your own chiles: Preheat an outdoor grill to high. Place the Anaheim chiles on the grill and cook, turning to cook evenly, until the skins blister and blacken. Remove from the grill and place in a plastic bag. Seal the bag and let the chiles stand for 5 to 10 minutes. Remove the skin, stems and seeds and chop into 1/4-inch pieces.
  • Heat some butter in a large pot and add the cubed pork. Cook about15 minutes, and then add the onions and spices. Cook on low heat, stirring occasionally. When the pork has cooked through, add the fresh tomatoes, canned tomatoes, green chiles and jalapenos, if using. Stir occasionally.
  • After 5 minutes, add 8 cups water. Bring to a low boil. Stir occasionally. Increase the heat and bring the chili to a rolling or high boil.
  • In separate pan, melt the butter or margarine and whisk in the flour, stirring until creamy.
  • Slowly add the roux to the chili, stirring constantly, and shut off the heat. Continue to stir so that the roux is evenly distributed. (Roux amount can be adjusted depending on desired consistency or thickness.)
  • Let stand 5 minutes and serve in a bowl or smothered!

1 ½ pounds extra lean ground beef
1 tablespoon minced garlic, or more to taste
1 cup chopped green bell pepper
1 cup chopped red onion
1 cup chopped carrot
1 cup chopped zucchini
1 cup chopped celery
1 tablespoon ground cumin
1 tablespoon chili powder
1 ½ teaspoons dried oregano
1 ½ teaspoons ground coriander
¼ teaspoon ground black pepper, or to taste
1 (28 ounce) can diced tomatoes
1 (14 ounce) can whole kernel corn, drained
1 (10.75 ounce) can condensed tomato soup
1 (4.5 ounce) can sliced mushrooms, drained
¼ cup barbeque sauce
1 package taco seasoning mix, or to taste
1 (19 ounce) can black beans, drained and rinsed
1 (19 ounce) can garbanzo beans, drained and rinsed
1 (19 ounce) can red kidney beans, drained and rinsed
1 (15 ounce) can baked beans in tomato sauce
½ cup chopped fresh cilantro, or to taste
1 tablespoon lime juice

Steps:

  • Cook and stir ground beef and garlic in a large non-stick pot over medium-high heat until beef is no longer pink, about 10 minutes. Stir bell pepper, red onion, carrot, zucchini, and celery into beef mixture; cook and stir until vegetables soften, about 5 minutes.
  • Stir cumin, chili powder, oregano, coriander, and black pepper into beef mixture; cook for 1 minute. Stir tomatoes, corn, tomato soup, mushrooms, barbecue sauce, and taco seasoning into chili; bring to a boil. Reduce heat to low; cover and simmer, stirring occasionally, for 20 minutes.
  • Stir black beans, garbanzo beans, kidney beans, and baked beans into chili; simmer until heated through, about 15 minutes. Remove chili from heat; stir in cilantro and lime juice.

6 to 7 large fresh green bell peppers, seeded and chopped
3 large ribs fresh celery, chopped
1/2 pound butter
10 pounds fresh choice ground beef
5 pounds fresh sweet yellow onions, chopped (6 to 8 jumbo), plus more for serving
1/4 cup salt, plus more for seasoning
1/4 cup ground black pepper, plus more for seasoning
1/3 cup chili powder
1 gallon premium diced tomatoes in juice
1 gallon chili sauce
2 gallons dark red kidney beans with juice
Freshly grated Cheddar
Hot pepper sauce of choice

Steps:

  • Put the chopped green peppers, chopped celery and butter in a large skillet over medium heat. Cover and saute for 20 minutes, stirring several times during the cooking.
  • Chunk the ground beef with your hands and put it into a frying pan over medium heat.
  • Add the chopped onions, and season with the salt and pepper, to taste. Cook until the meat has browned and is fully cooked, about 1/2 hour. In a large soup pot or kettle, add the beef and onions, celery and peppers, the chili powder, diced tomatoes with juice, chili sauce, kidney beans with all the juice, the 1/4 cup salt and 1/4 cup of pepper. Stir to combine, then bring to a boil over medium heat. Lower the heat, cover, and simmer the chili for 45 minutes.
  • It will lose its chunkiness and mellow in flavor the longer you cook it. Keep it on all day, if you like, stirring it from time to time.
  • Serve in a large bowl garnished with grated Cheddar and freshly chopped onions. Add your favorite pepper sauce for some heat.

1 can (14-1/2 ounces) stewed tomatoes
2 cans (4 ounces each) chopped green chilies
2 cups diced peeled potatoes
2 cups water
1/2 teaspoon salt

Steps:

  • In a Dutch oven or soup kettle, cook ground beef with onion until the beef is no longer pink; drain. Stir in the tomatoes, green chilies, potatoes, water and salt. Simmer, uncovered, 45 minutes or until the potatoes are tender.
