Look for moist, translucent tuna that's shiny pink or red; avoid fish with any hint of browning.

4 one-inch-thick tuna steaks, (about 4 ounces each)
Coarse salt and freshly ground pepper
2 tablespoons extra-virgin olive oil, plus more for grill
Zest and juice of 1 lemon
6 anchovy fillets, cut into thirds
1 medium clove garlic, finely chopped
1 tablespoon coarsely chopped fresh oregano
1 tablespoon coarsely chopped fresh basil

Steps:

  • Preheat a ridged stovetop grill pan or outdoor grill. Season tuna with salt and pepper. Brush grill pan or grill with oil. Grill tuna until well browned but still rare, about 2 minutes per side; the flesh will be firm and tight. For medium rare, cook 1 minute more, until the flesh begins to pull apart. For medium, cook 2 minutes more, until the flesh flakes apart.
  • Meanwhile, in a small saucepan, combine lemon zest and juice, anchovies, oil, and garlic. Bring to boil over medium heat, remove from heat, and stir in oregano and basil. Serve immediately with sauce spooned over tuna.

Steps:

  • Season the tuna steaks with salt and cayenne pepper.
  • Melt the butter with the olive oil in a skillet over medium-high heat. Cook the peppercorns in the mixture until they soften and pop, about 5 minutes. Gently place the seasoned tuna in the skillet and cook to desired doneness, 1 1/2 minutes per side for rare.

2 tablespoons butter
2 teaspoons cajun seasoning
8 ounces tuna steaks
2 pinches salt
1/2 teaspoon black pepper (optional)

Steps:

  • Melt the butter in a bowl or plate large enough to hold the tuna steak Place tuna steak in bowl, coating both sides with butter Sprinkle half of cajun seasoning on each side of steak For an extra spicy treat, add black pepper.
  • I recommend cooking this outdoors on your grill.
  • Cooking indoors will generate excessive smoke.
  • Heat your grill to the highest possible temperature Turn off burners (to avoid flame up) then immediately add steak Cook for 2 minutes on first side Flip and cook on other side for 1 minute.
  • (The steak will be very pink inside - yum!) Remove and serve immediately as it will cool quickly.
  • I recommend serving over garlic mashed potatoes with either wasabi mustard or wasabi mustard/mayo mix.
  • Enjoy!

1 tablespoon olive oil
2 garlic cloves, minced
2 teaspoons minced fresh thyme or 1/2 teaspoon dried thyme

1/4 teaspoon pepper

Steps:

  • In a large resealable plastic bag, combine the lemon juice, oil, garlic and thyme. Add the tuna; seal bag and turn to coat. Refrigerate for up to 30 minutes, turning occasionally., Remove tuna from bag; sprinkle with salt and pepper. Drain and discard marinade. Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack. , Grill tuna, covered, over medium-hot heat or broil 4 in. from the heat for 3-4 minutes on each side for medium-rare or until slightly pink in the center.

Steps:

  • To grill the tuna, get a charcoal or stove-top cast-iron grill very hot. Brush the fish with olive oil, and sprinkle with salt and pepper. Grill each side for only 2 to 2 1/2 minutes. 1 lemon, juice of
1/4 cup cilantro, chopped

3 shallots, minced
2 teaspoons chili powder

Steps:

  • Combine lemon juice, cilantro, garlic, shallots, chili powder, cumin and salt. Mix well.
  • Place tuna fillets in a large resealable bag.
  • Pour marinade in bag and work it around until the steaks are covered. Refrigerate for 1 hour.
  • Spray your grill with some non-stick cooking oil.
  • Place the steaks on the grill and cook on high heat. Grill for 4 to 5 minutes per side (4 to 5 minutes total if using a George Forman grill) or until they reach the desired doneness (they should still be pink in the middle).

1/8 c balsamic vinegar
/8 c rice vinegar
2 cloves garlic pressed
4 TBSP fresh cilantro, chopped fine
2 TBSP ground ginger root
2-3 oz ahi tuna steaks
Homemade cocktail sauce:
ketchup, mayo, sambal olek, horseradish and fresh lemon juice (to emulate over the counter cocktail sauce)

Steps:

  • In a medium bowl, mix together olive oil, lime juice, vinegars, garlic, ginger and cilantro. Add tuna steaks, cover and marinate up to 4 hours in refrigerator. Drain steaks and discard marinade. Preheat grill, high heat, with sprayed rack. NOTE: We grilled at 450 @ 2 min/side. When grill is hot, reduce to low and place steaks on grill. Close lid and cook for 2 minutes flip and cover again for about 2 min. Open lid and continue cooking until barely done. Ahi is best with a warm pink center.
