Grilled Bruschetta Chicken with Zoodles image

Perfectly grilled chicken topped with melted mozzarella cheese, fresh tomato bruschetta, and drizzled with a sweet, tangy balsamic glaze. Serve this over zoodles, pasta, or a salad!

4 boneless, skinless chicken breasts, (approximately 1 1/2 lbs)
1/4 cup olive oil
1/4 cup lemon juice, (freshly squeezed)
1 1/2 tsp salt, (more or less, to taste)
1/2 tsp pepper, (more or less, to taste)
1 tbsp dried Italian seasoning
1/2 tsp garlic powder
1-2 tbsp olive oil (for sauteeing chicken)
6 roma tomatoes, (stem removed and sliced, remove seeds if preferred)
2 tbsp lemon juice, (freshly squeezed)
1/3 cup chopped red onion
2 cloves garlic
1/4 tsp salt, (more or less, to taste)
1/8 tsp pepper, (more or less, to taste)
10-12 basil leaves, (roughly chopped)
4 oz fresh mozzarella ball, (sliced into 4 slices)
1 tsp minced garlic
4 large zucchini, (spiralized)
Freshly chopped basil
Lemon wedges
Balsamic glaze

Steps:

  • Combine all ingredients for the marinade into a large ziploc bag (or bowl). Add the chicken, seal the bag and toss to thoroughly coat.Allow to marinade for at least 15 minutes.
  • While the chicken is marinating, combine all of the ingredients for the bruschetta topping. Gently toss to combine. Spiralize the zucchini into zoodles.Set both aside.
  • Place a large grill pan or cast iron skillet over medium-high heat. Once the pan is hot, add 1-2 tablespoons of olive oil and then add the chicken (discarding any leftover marinade).Grill/cook 3-4 minutes and flip to cook 3-4 minutes on the other side. Top with the mozzarella cheese, allowing time for it to melt.Cook chicken until the internal temperature of the thickest part reads 165 degrees F using a meat thermometer. Remove to a plate and cover with foil to keep warm.
  • Place the same pan back over medium-high heat. Add the teaspoon of minced garlic and saute for 30 seconds. Add the zoodles and saute for 2-3 minutes, stirring a few times.
  • Saute until the zoodles just begin to soften. Create a small space to return the chicken breasts to the pan to re-warm.
  • Top each chicken breast with the bruschetta topping and remove from heat. Serve garnished with a drizzle of balsamic glaze, additional basil, a squeeze of lemon juice, and parmesan cheese.Top dishes off with any leftover bruschetta for extra flavor!

1/2 cup balsamic vinegar
1-1/2 cups chopped and seeded plum tomatoes
2 tablespoons finely chopped shallot
1 tablespoon minced fresh basil
2 teaspoons plus 3 tablespoons olive oil, divided
1 garlic clove, minced
16 slices French bread baguette (1/2 inch thick)
Sea salt and grated Parmesan cheese

Steps:

  • In a small saucepan, bring vinegar to a boil; cook until liquid is reduced to 3 tablespoons, 8-10 minutes. Remove from heat. Meanwhile, combine tomatoes, shallot, basil, 2 teaspoons olive oil and garlic. Cover and refrigerate until serving., Brush remaining oil over both sides of baguette slices. Grill, uncovered, over medium heat until golden brown on both sides., Top toasts with tomato mixture. Drizzle with balsamic syrup; sprinkle with sea salt and Parmesan. Serve immediately.

Steps:

  • Combine 2 tbsp olive oil, balsamic vinegar, sea salt, black pepper, garlic and basil.
  • Add to a large plastic bag with the chicken and marinate for up to 8 hours. I would recommend at least an hour.
  • Before grilling the chicken, combine all of the tomato basil bruschetta ingredients in a medium bowl. (ingredients from the roma tomatoes, down).
  • Place in the refrigerator until ready to serve the bowls.
  • Remove the chicken from the marinade and place on a grill over medium heat for 10-12 minutes per side.
  • While the chicken is grilling, add the remaining 1 tbsp olive oil to a large skillet, then add the zucchini noodles and saute 3-5 minutes.
  • Divide the zucchini noodles between two bowls. Once the chicken is grilled, slice it up and place on top of the zoodles. Spoon the bruschetta over the chicken and zoodles.

1/4 cup sun-dried tomato vinaigrette dressing, divided
4 small boneless skinless chicken breast halves
1 tomatoes, finely chopped
1/2 cup shredded mozzarella cheese

Steps:

  • Place large sheet of foil over half of grill grate. Pour 2 T of the dressing over chicken in resealable plastic bag and seal. Turn bag over several times to evenly coat chicken with dressing. Refrigerate 10 minutes to marinate. Remove chicken from marinade and discard marinade bag.

  • Place chicken breasts into a large ziplock bag or shallow tupperware. Pour 1 cup of dressing on top and make sure it covers every inch of chicken. Seal up and refrigerate for 2 – 24 hours. I always aim for at least 8 hours for the best flavor.
  • Combine the chopped tomatoes, basil leaves, minced garlic, and 2 Tablespoons remaining Italian dressing. Add salt and freshly ground pepper to taste. Cover tightly and refrigerate for 2 – 24 hours.
  • In a large skillet, heat 1 Tablespoon of olive oil over medium heat. Add the marinated chicken and cook for 15 minutes, turning once. You want the chicken nice and browned on the outside while fully cooked inside. Remove the chicken from the skillet; do not clean out skillet.
  • Add 1 Tablespoon of olive oil to the skillet, followed by the zucchini noodles and 3/4 cup of the bruschetta topping. Cook for 5-6 minutes, stirring occasionally. The noodles will cook down, absorbing all the flavor. Remove from heat and place chicken on top of the noodles– or, if using a serving dish, place noodles on first and top with chicken.
