This is a great summer salad that can be prepared ahead of time so you can enjoy the day.

4 green onions, thinly sliced
1 large carrot, shredded
1 red bell pepper, cut into 1/2 inch pieces
½ pound sugar snap peas, halved
2 cups chopped, cooked chicken breast meat
½ cup fresh cilantro leaves
½ cup blanched slivered almonds, toasted
2 tablespoons white sugar
2 tablespoons distilled white vinegar
1 ½ tablespoons sesame oil
1 tablespoon teriyaki sauce
1 tablespoon ground dry mustard

Steps:

  • In a large bowl, mix together the onions, carrot, red pepper, peas, chicken, cilantro and almonds. Set aside.
  • In a small bowl, whisk together the sugar, vinegar, sesame oil, teriyaki sauce and dry mustard until smooth. Pour over salad mixture and toss until coated. Serve in pita pockets or on a bed of lettuce.

4 (6 ounce) skinless, boneless chicken breast halves
teriyaki marinade
8 green onions, chopped
1 teaspoon salt
1 teaspoon pepper
½ cup sugar
¾ cup rice vinegar
1 cup olive oil
½ (14 ounce) package wonton wrappers
oil for frying
1 head iceberg lettuce, chilled, and torn into bite-size pieces
1 (4 ounce) can sliced water chestnuts, drained
¼ cup toasted sesame seeds
½ cup toasted sliced almonds
1 (10 ounce) can mandarin orange segments, drained

Steps:

  • Place chicken breasts in a bowl, pour teriyaki sauce over them, and coat well. Cover, and refrigerate for 1 hour.
  • Preheat an outdoor grill for direct heat.
  • For the dressing, place green onions, salt, pepper, and sugar in a blender. Pour in olive oil and rice vinegar. Blend until smooth. Remove to a bowl, cover, and refrigerate until ready to serve.
  • Grill chicken, turning, until done. Remove to a cutting board, and cut into strips.
  • In a large skillet or wok, warm oil over medium-high heat. Cut wonton wrappers into strips. Fry wonton strips until crisp. Remove to paper towels.
  • In a large bowl, toss together lettuce, water chestnuts, sesame seeds, sliced almonds, and mandarin oranges. Pour dressing over salad, and toss gently. Top with fried wontons and grilled chicken strips.

⅛ teaspoon garlic powder

2 celery stalks, sliced

8 slices bread, toasted
4 tablespoons mayonnaise
4 large red leaf lettuce leaves
1 ripe tomato, sliced

Steps:

  • Whisk together 1 cup of mayonnaise, pepper, garlic powder, and celery salt until combined. Combine the chicken, celery, cranberries, and cashews in a large bowl. Pour the mayonnaise mixture over the chicken mixture and stir until evenly combined.

¼ cup cider vinegar
2 tablespoons honey
2 teaspoons white sugar
1 ½ teaspoons poppy seeds

3 tablespoons teriyaki sauce
2 medium boneless chicken breasts
2 cups baby spinach, torn into bite-sized pieces

½ cup toasted pecans

Steps:

  • Combine olive oil, vinegar, honey, sugar, poppy seeds, salt, mustard, and grated onion in a blender. Transfer dressing to a bowl or jar and refrigerate at least 1 hour before serving.
  • Combine Italian dressing and teriyaki sauce in a sealable container and add chicken. Seal and marinate at least 30 minutes to 1 hour before grilling.
  • Preheat an outdoor grill for medium heat and lightly oil the grate.

2/3 cup plus 2 tablespoons olive oil, divided
1/4 cup finely chopped shallots
1/4 cup champagne vinegar or white wine vinegar
1 teaspoon salt, divided
1/2 teaspoon pepper, divided
1/2 pound sliced baby portobello mushrooms
1/2 pound sliced fresh mushrooms
4 boneless skinless chicken breast halves (6 ounces each)
6 cups fresh baby arugula or baby spinach
1/2 cup shredded Parmesan cheese

Steps:

  • In a small bowl, whisk 2/3 cup oil, shallots, vinegar, 1/2 teaspoon salt and 1/4 teaspoon pepper until blended. Reserve 3 tablespoons for dressing. Pour remaining vinaigrette into a large bowl; add mushrooms and toss to coat. Let stand 5 minutes., Using a slotted spoon, remove mushrooms from vinaigrette. Transfer to a grill wok or basket; place on grill rack. 1/4 cup chardonnay vinegar
1 tablespoon Dijon mustard
1 tablespoon whole grain mustard
Salt and freshly ground black pepper
1/3 cup extra-virgin olive oil, plus more if needed
3 Fresno chiles
Canola oil
Salt and freshly ground black pepper
2 cups green seedless grapes, roughly chopped
2 cups red seedless grapes, roughly chopped
2 to 3 tablespoons chardonnay vinegar
2 to 3 tablespoons extra-virgin olive oil
3/4 cup apricot jam
3 tablespoons chardonnay vinegar
4 (6-ounce) boneless, skinless chicken breasts, pounded thin
Canola oil
Salt and freshly ground black pepper
1/4 cup roughly chopped fresh thyme
1 bunch watercress, for serving
1/2 cup sliced skin-on almonds, lightly toasted, for serving

Steps:

  • For the vinaigrette: Whisk the vinegar, the mustards and salt and pepper, to taste, in a bowl. Slowly whisk in about the olive oil and until emulsified. Taste; whisk in a few more tablespoons olive oil, if desired.
  • For the grape salad: Prepare the grill for direct grilling.
  • Brush the chiles with oil and season with salt and pepper. Grill until charred on all sides. Remove to a bowl, cover and let steam for 15 minutes. Remove the skins and coarsely chop. Transfer to a bowl and add the grapes, chardonnay vinegar and olive oil. Season with salt and pepper.
  • For the chicken: Whisk together the apricot jam and vinegar. Season with salt and 1/4 teaspoon black pepper.
  • Brush the chicken on both sides with oil and sprinkle with salt and pepper. Grill until the first side is golden brown, about 2 1/2 minutes. Turn, brush with the glaze and sprinkle on the thyme. Cook until just cooked through, another 2 to 3 minutes. Remove to a serving platter.
  • To serve, top with the grape salad, then the watercress and finally the almonds. Drizzle with the vinaigrette.

1/4 teaspoon paprika
1/2 teaspoon salt (to taste)
1/3 cup vegetable oil, such as canola
4 boneless skinless chicken breast halves, grilled and cooled
6 cups salad greens, plus more for plating presentation (preferably half romaine and half baby arugula leaves)
2 roma tomatoes, cored and diced (Italian plum tomatoes)
2 ripe Hass avocadoes, peeled, seeded and diced
1 cup sugar-glazed hazelnuts (recipe follows)
1/4 cup minced sweet onion
salt and pepper, to taste
2 ripe pears, cored and sliced
tomatoes, wedges
2 hard-cooked eggs, peeled and sliced (optional)
1 cup coarsely chopped lightly roasted and skinned hazelnuts

Steps:

  • For the Toasted Sesame-Poppy Seed Vinaigrette: In a blender or food processor, combine the vinegar, sugar, sesame and poppy seeds, Worcestershire sauce, paprika, salt and 1 tablespoon minced onion.
  • Blend until most sesame seeds are ground (stop motor several times and scrape down sides of container). Scrape contents into a small bowl, then whisk in the vegetable oil in a slow, steady stream. This makes 3/4 cup.
  • For the Salad: Cut the cooked and cooled chicken into 1/4-inch pieces and combine with 1/2 cup vinaigrette, the salad greens, diced tomatoes, avocado, sugar-glazed hazelnuts and 1/4 cup minced onion. Add more vinaigrette as necessary to reach desired consistency. Season with salt and pepper to taste.
  • To serve: Arrange additional salad greens on 4 plates, then divide salad mixture between them. Garnish with the pear slices, tomato wedges and sliced egg.
  • Sugar-Glazed Hazelnuts: Place a sheet of waxed paper on countertop. In a nonstick skillet, warm 1 cup coarsely chopped, lightly roasted and skinned hazelnuts over medium-high heat. Sprinkle on about 2 tablespoons sugar, stirring continuously with either a silicone spatula or flat-sided wooden spoon; cook until sugar melts around hazelnuts. Sprinkle on more sugar as necessary to glaze all hazelnut pieces. Remove from heat and quickly scrape hazelnuts onto sheet of waxed paper to cool.
