GRILLED LEMON-GARLIC TURKEY

Steps:
- To make marinade, in blender, place all ingredients except turkey and Cajun seasoning. Cover and blend until smooth. Using meat injector, fill injector container to 1-ounce line. Inject marinade into turkey breasts, thighs and legs, every 1 to 2 inches, pushing plunger down slowly. Refill container and continue to inject turkey until marinade is used. (Or pour marinade over turkey in large glass dish.)
- Sprinkle Cajun seasoning inside cavity and over outside of turkey. Fasten neck skin to back with skewer. Fold wings across back with tips touching. Tuck drumsticks under band of skin at tail. Cover and refrigerate at least 8 hours but no longer than 24 hours.
- If using charcoal grill, place drip pan directly under grilling area, and arrange coals around edge of firebox. Heat coals or gas grill for indirect heat.
- Insert barbecue meat thermometer in turkey so tip is in thickest part of inside thigh muscle and does not touch bone.
- Place turkey, breast side up, over drip pan or over unheated side of gas grill and 4 to 6 inches from medium heat. Cover and grill 3 to 4 hours or until thermometer reads 180°F and legs move easily when lifted or twisted. Let stand 15 minutes before carving.

- In a large bowl, combine the first 10 ingredients. Pour 1 cup into a large resealable plastic bag; add turkey. Seal bag and turn to coat; refrigerate 8 hours or overnight, turning occasionally. Cover and refrigerate remaining marinade for serving., Drain and discard marinade from turkey. Grill, covered, over medium heat for 10-12 minutes on each side or until a thermometer reads 170°. Serve with reserved marinade.

- If using charcoal grill, place drip pan directly under grilling area, and arrange coals around edge of firebox. Heat coals or gas grill for indirect heat.
- Rub cavity of turkey with salt and pepper; place onion and lemons in cavity. Brush oil over turkey. Insert barbecue meat thermometer so tip is in the thickest part of inside thigh muscle and does not touch bone.
- Mix butter and thyme; brush over turkey. Cover and grill turkey, breast side up, over drip pan or over unheated side of gas grill and 5 to 6 inches from medium heat 2 hours 30 minutes to 3 hours 30 minutes or until thermometer reads 165° and drumsticks move easily when lifted or twisted. If using charcoal grill, add about 15 briquettes every hour. Let turkey stand 15 minutes. Remove onion and lemons before carving.

- Coat grill with nonstick spray; preheat to medium.
- Combine oil, parsley, oregano, pepper flakes, salt, and pepper in a large resealable plastic bag or pie dish. Add turkey and marinate 15 minutes.
- Sauté bacon in a small pan over medium heat until crisp, about 5 minutes; drain on paper towels. Pour off all but 1 tablespoons drippings. Add shallot to pan and cook until soft, about 1 minute. - Mix soy sauce, white wine, chicken broth, olive oil, pepper, basil, parsley, mustard powder, ginger, sugar, onion, sesame oil, lime juice, Dijon, and garlic together in a small bowl; pour into a resealable plastic bag. Add turkey, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for at least 30 minutes.
- Preheat the oven to 400 degrees F (200 degrees C). Remove turkey from the marinade and shake off excess; place turkey into a 2-quart glass baking dish.
- Bake in the preheated oven until no longer pink in the center and the juices run clear, about 25 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

GRILLED HERB RUBBED TURKEY BREAST WITH LEMON TARRAGON SAUCE
This is an easy, innovative way to grill turkey for summer entertaining. The trick to the delicious flavor is starting early: A day or two before your party, rub the turkey with herbs and salt, then chill.

- At least 1 day before serving, in a spice (or coffee) grinder or a blender, finely grind 2 tablespoons salt, the tarragon, thyme and peppercorns together.
- Rinse turkey breast and pat dry. Using poultry shears or kitchen scissors, cut off any ribs extending beyond edges of breast meat (to make breast easy to turn on the grill). Then, trim off any extra fat and skin. Rub herb mixture over both sides of turkey breast. Cover and chill for at least 1 day (see notes).
- Prepare barbecue grill and preheat for indirect heat cooking (the charcoal or gas flame is balanced on the sides, not directly under the food).
- Rub turkey breast with oil. Set breast skin side down on center of grill (not over direct heat). Cover charcoal grill and open vents; close lid on gas grill. Cook for about 30 minutes. Turn turkey breast over and continue to cook until an instant read meat thermometer inserted through thickest part of breast to bone reaches 160 degrees , 25 to 30 minutes longer.
- Meanwhile, in a blender, whirl mayonnaise, lemon juice, tarragon and garlic until smooth. Add salt and pepper to taste. Pour into a small bowl; cover and chill.
- Transfer cooked turkey to a clean platter or rimmed carving board and let rest in a warm place about 10 minutes. Thinly slice meat from the bone and serve with lemon tarragon sauce to add to taste (see notes).
