2 cloves garlic, peeled
1/2 cup packed fresh flat-leaf parsley
2 1/4 pounds ground chuck
3/4 cup (1 1/2 ounces) grated Parmesan
3 tablespoons tomato paste
1 1/2 teaspoons kosher salt
1/4 teaspoon freshly ground black pepper
9 small ciabatta rolls, sliced in 1/2
1/4 cup extra-virgin olive oil
9 slices (4 1/2 ounces) Taleggio cheese
9 large basil leaves

Steps:

  • Place a grill pan over medium-high heat or preheat a gas or charcoal grill.
  • Place the garlic and parsley in the bowl of a food processor. Pulse until finely chopped. Add the ground chuck, Parmesan cheese, tomato paste, salt, and pepper. Pulse until ingredients are combined. Form the mixture into 9 patties. Place the burgers on the grill and cook for 4 to 5 minutes each side.
  • Brush the cut side of each roll with the olive oil and toast on the grill for 1 to 2 minutes until slightly golden.
  • To serve, place 1 mini burger on the bottom half of each of the rolls. Place 1 slice of Taleggio cheese on top of the burgers. Place the basil leaf on top of the cheese and cover with the top half. Serve.

12 slices Italian bread, 1/2 inch thick
1/2 cup sun-dried tomato mayonnaise
1 cup shredded lettuce
1 medium tomato, thinly sliced

Steps:

  • Heat coals or gas grill for direct heat. Mix beef, sausage and bread crumbs in large bowl. Shape mixture into 6 patties, about 1/2 inch thick and 3 1/2 inches in diameter.
  • Cover and grill patties 4 to 6 inches from medium heat 12 to 15 minutes, turning once, until meat thermometer inserted in center reads 160°. Top patties with cheese. Cover and grill about 1 minute longer or until cheese is melted. Add bread slices to side of grill for last 2 to 3 minutes of grilling, turning once, until lightly toasted.
  • Spread toasted bread with mayonnaise; top 6 bread slices with lettuce, tomato and patties. Top with remaining bread slices.

1 1/2 pounds ground beef sirloin
1 teaspoon chopped fresh oregano
1 garlic clove, grated
Kosher salt and freshly ground black pepper
4 slices provolone cheese
1/4 cup mayonnaise
1 teaspoon balsamic vinegar
4 seeded hamburger buns, split
Fresh basil leaves, for topping
Giardiniera, for serving

Steps:

  • Prepare an outdoor grill for medium-high heat.
  • Gently mix the beef, oregano, garlic and 1/2 teaspoon each salt and pepper in a medium bowl until just combined.
  • Shape the meat into 4 6-ounce patties, about 5-inches in diameter. Make a slight indentation in the center of each patty and lightly sprinkle the outside of the patties with salt and pepper. Lightly oil the grill grates. Grill to desired doneness, about 4 minutes per side for medium, adding a slice of cheese to each burger during the last minute of cooking.
  • Mix the mayonnaise and balsamic vinegar together in a small bowl. Quickly toast the buns on the grill for about 1 minute and then spread with some of the mayonnaise mixture. Top with a burger and then some fresh basil leaves. Serve with giardiniera on the side.

2 -3 tablespoons italian seasoning

  • In a bowl mix ground beef and seasoning together add salt and pepper to taste. Form patties by shaping meat into a good size ball and smacking beef back and forth with your hands until a nice patty forms, then take yor two fingers and make a indentation in the center of the patty. This will help keep the patty shaped flat while it is cooking. Grill hambugers over a nicely medium hot heat on a charcoal grill 4-5 minutes a side. 1 large red bell pepper, quartered lengthwise
