GRILLED GUACAMOLE

- In a large bowl, combine onion, tomatoes, pepper and 1 tablespoon oil; gently toss to coat. Grill, covered, over medium-high heat or broil 4 in. from heat until tender and charred, turning occasionally, 6-8 minutes. Brush avocados with remaining oil. Grill or broil avocados, cut side facing the heat, until charred, 4-6 minutes. Cool vegetables completely., Chop onion, tomatoes and pepper; set aside. Peel avocados; transfer to a large bowl and mash with a fork. Stir in vegetables, cilantro, lime juice, cumin and salt. Serve immediately with chips.

- Trim the a thin slice off the side of the whole, unpeeled onion. Set the onion flat on the cut surface for stability. Cut the onion into 4 (1-inch thick) slices. Remove the outer ring of skin from each slice. Drizzle the sliced onion with light colored oil and season both sides with steak seasoning or salt and pepper, to taste. Grill on hot grill or on a nonstick griddle for 5 to 7 minutes on each side until onion is tender and has begun to caramelize.

- Preheat a grill or a grill pan.
- Lightly brush the onion slices with olive oil. Place on the grill and cook about 6 to 8 minutes. Transfer to a cutting board and chop into bite-sized pieces or serve whole.

- In a small bowl, combine the oil, lemon juice, vinegar, pepper, cumin and 3/4 teaspoon salt. Place in a shallow dish, add the onion and let marinate for 1 hour. Heat a grill until hot. Drain the liquid from the onion and place on a grill. Grill for 3 minutes per side. Coarsely chop.
- Peel, seed and cut the avocados into 1/2-inch dice. Dice the tomato. Combine the grilled onion, avocados, tomato, garlic, chilies and cilantro. Season to taste with salt and lime juice. Keep at room temperature until ready to serve.

GRILLED RED ONION GUACAMOLE
This is guacamole with a difference. It comes from Dean Fearing of Mansion on Turtle Creek in Dallas, Texas. The important part which you must promise not to take any short cuts over, is the marinading of the onion first. Also, the toasting and grinding of the cumin seed from scratch is like night and day in this recipe. The prep time includes the marinading. Other than that it's as fast as normal guacamole.

Steps:
- In a shallow dish, combine first 7 ingredients and marinate for over an hour and up to 4 hours.
- Heat a grill until hot, preferably with some sort of wood smoke.
- Drain liquid from the onion and place on a grill.
- Grill for 4 minutes or so per side.
- Chop.
- Set aside and prepare guacamole while onion is cooling.
- Combine the avocados, tomatoes, garlic, chiles, cilantro and lime juice.
- Keep covered with Saran wrap until ready to serve.
- (Saran wrap is the only plastic wrap which won't let the air in to brown the avocado).
- Add the grilled onion and gently mix.
- Serve with good quality corn chips or baked pita bread triangles.
