1 (6 ounce) can pink salmon, drained
½ cup Greek yogurt
¼ cup chopped celery
1 tablespoon Dijon mustard
½ teaspoon lemon juice
¼ teaspoon garlic powder
⅛ teaspoon salt
⅛ teaspoon ground black pepper
1 pinch paprika, or to taste
1 onion, halved, divided
4 slices gluten-free bread slices, toasted
½ avocado, sliced, or to taste
1 cup baby spinach leaves

Steps:

  • Combine salmon, Greek yogurt, celery, mustard, lemon juice, garlic powder, salt, pepper, and paprika in a medium bowl.
  • Preheat an outdoor grill for medium heat and lightly oil the grate. Grill 1 onion half until tender and beginning to caramelize, 5 to 7 minutes per side. Remove from grill; slice when cool enough to handle.
  • Spread salmon salad over each slice of bread. Top with grilled onions, avocado, and baby spinach.

⅓ cup mayonnaise
1 green onion (thinly sliced)
¼ cup finely diced celery
2 tablespoons fresh lemon juice
¾ teaspoon dried dill or 1 tablespoon fresh
½ teaspoon salt
8 slices of sturdy sandwich bread like focaccia, ciabatta, or sourdough
green leaf lettuce
thinly sliced cucumber
thinly sliced tomato

2 pounds fresh salmon fillets
Good olive oil
Kosher salt
Freshly ground pepper
1 cup good mayonnaise
1/4 cup sour cream
3/4 teaspoon white wine vinegar
12 fresh basil leaves
3/4 cup chopped fresh dill
1 1/2 tablespoons chopped scallions, (white and green parts)
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
3 teaspoons capers, drained
6 fresh white or brioche rolls (4-inch round)
1/4 pound mesclun mix or fresh basil leaves

Steps:

  • For the salmon, heat coals in an outdoor grill and brush the top of the grill with oil. Rub the outside of the salmon with olive oil, salt, and pepper, to taste. Grill for 5 minutes on each side, or until the salmon is almost cooked through. Remove to a plate and allow it to rest for 15 minutes.
  • For the sauce, place the mayonnaise, sour cream, vinegar, basil, dill, scallions, salt, and pepper in the bowl of a food processor fitted with a steel blade. Process until combined. Add the capers and pulse 2 or 3 times.
  • To assemble the sandwiches, slice the rolls in 1/2 crosswise. Spread a tablespoon of sauce on each cut side. On the bottom 1/2, place some mesclun salad and then a piece of salmon. Place the top of the roll on the salmon and serve immediately.

As like my recipe#116814 this is simple but big on flavor and also will work wonderful using cooked fresh cold leftover salmon in place of canned, once you taste this you will crave it all the time! ---plan ahead the salmon mixture needs to chill for at least 2 hours or more before using don't think about using it before that time the longer chilling time the better! --- two cans of salmon should give you three sandwiches but it will depend on how much salmon filling you use --- you may also add in 1/2 cup or more of finely chopped seeded cucumber if desired, all amounts may be adjusted to taste.

  • Cover and refrigerate for at least 2 hours or more.
  • Toast bread slices, then lightly butter 1 side of each slice or you may leave the bread dry.
  • Place a lettuce leaf over 3 slices of buttered toast.
  • Scoop the salmon mixture onto the lettuce then spread.
  • Top with 2 thinly sliced tomatoes.
  • Cover each with a bread slice.
  • Slice in half and enjoy!

4 slices bacon
1 (1 pound) fillet salmon, cut into 2 portions
1 tablespoon olive oil
⅓ cup mayonnaise
1 teaspoon dried dill weed
1 teaspoon freshly grated lemon zest
4 slices country-style bread, toasted
4 slices tomato
2 green leaf lettuce leaves

Steps:

  • Cook the bacon in a large, deep skillet over medium-high heat until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate. Evenly coat the salmon with the olive oil.
  • Cook the salmon on the preheated grill with the skin side down for about 5 minutes before flipping and cooking on the other side until the skin can easily be lifted off the flesh, about 5 minutes more. 6 fresh white rolls (4-inch round) or 6 brioche bread (4-inch round)
1/4 lb mesclun or 1/4 lb fresh basil leaf

Steps:

  • For the salmon, heat coals in an outdoor grill and brush the top of the grill with oil.
  • Rub the outside of the salmon with olive oil, salt, and pepper, to taste.
  • Grill for 5 minutes on each side, or until the salmon is almost cooked through.
  • Remove to a plate and allow it to rest for 15 minutes.

3 tablespoons packed light-brown sugar
1/2 teaspoon soy sauce
1 tablespoon olive oil
4 salmon fillets, about 6 ounces each
Salt and freshly ground black pepper
1/2 bunch arugula, leaves slightly wet
4 slices sourdough bread, crusts trimmed

Steps:

  • Combine mustard and sugar in a small bowl. Stir in 1 1/2 tablespoons water. Add soy sauce and 1 teaspoon oil. Set aside.
