GRILLED SALMON WITH SWEET CHILI SAUCE
This Grilled Salmon with Sweet Chili Sauce is easy with just 4 ingredients, and delicious with just a hint of spicy flavor. The salmon is marinated in a sweet chili, ground ginger and soy sauce mixture, grilled and then topped with a sweet chili, ginger and soy sauce glaze.

Steps:
- Make the marinade by combining the sweet chili sauce, soy sauce and ginger in a shallow dish.
- Spoon 1/4 cup of the marinade into a small dish and set aside. This will be the glaze for the cooked fish.
- Add the salmon fillets, skin side up, to the remaining marinade and marinate for 1 hour in refrigerator.
- Cut the green onion into diagonal slices and set aside.
- Preheat the grill for direct grilling over medium heat.
- Brush olive oil over the grill grate and spray a grill basket with non-stick spray. Click for a grill basket.
- Grill the salmon for about 3 - 5 minutes depending on the thickness of the fish.
- Flip the salmon over gently and continue grilling about 3 - 5 minutes or until browned in spots and opaque in the center.
- Transfer the salmon to serving plates and pour the reserved sauce over top.
- Garnish with green onions if desired and serve.

- In a small bowl, combine blackberries, cucumber, green onion and 1 tablespoon chili sauce; toss to coat. Sprinkle salmon with salt and pepper., Place fillets on greased grill rack, skin side down. Grill, covered, over medium-high heat or broil 4 in. from heat 10-12 minutes or until fish flakes easily with a fork, brushing with remaining chili sauce during the last 2-3 minutes of cooking. SWEET AND SPICY GRILLED SALMON

- Preheat an outdoor grill or grill pan on medium high.
- Mix together the hot sauce, brown sugar, paprika and cayenne in a small bowl. Transfer 1 tablespoon of the mixture to a large bowl and whisk in the mayonnaise; set aside the rest of the sauce. Add the chives, celery and onions to the bowl with the mayonnaise and toss well.
- Sprinkle the salmon with salt and pepper. Brush the grill grate lightly with oil. Lay the salmon on the grill, skin-side up, and cook until distinct grill marks appear and the salmon releases easily from the grate, 2 to 3 minutes. Turn and brush the fish with some of the reserved sauce. Continue to cook the fish, brushing the pieces periodically with the sauce, until the salmon fillets are glazed and just cooked through, 13 to 15 minutes more.
- Transfer the fillets to individual plates and serve with the celery slaw.

- Line rimmed baking sheet with foil. Coat with nonstick spray. Whisk chili sauce, soy sauce and ginger in small bowl. Place salmon fillets, skin side down, on prepared sheet. Spoon chili sauce marinade over and let stand at room temperature 30 minutes.

- Remove skin and scales from salmon. Season salmon fillets with lemon pepper and garlic powder. In a small bowl stir together soy sauce, brown sugar, water, and vegetable oil until sugar is dissolved. Place fish in a large zip bag with soy sauce mixture, seal and turn to coat. Refrigerate at least 2 hours, turn often (the longer it marinates the stronger the flavor, I marinate mine all day).
- Preheat grill for medium heat. Lightly oil grill grate. Place salmon on the preheated grill, discard marinade. Cook salmon for 6-8 minutes per side, until fish flakes easily with fork.

- To marinate the fish, combine the oil, ginger, garlic, shallots, fish sauce, soy sauce, and sugar in a medium bowl; stir until sugar is dissolved and everything is mixed well.
- Place the salmon fillets in the bowl and turn to coat with the marinade (or put the salmon in a zip lock bag, add the marinade, squeeze out air, and seal).
- Cover and set aside for 20 to 30 minutes, or cover and refrigerate for up to 1 day.
- To prepare the sauce, combine all ingredients listed for the sauce in a small bowl; stir to dissolve the sugar and mix everything well.
- To cook the fish, build a hot charcoal fire or preheat a gas grill.
- Place the fish carefully on the grill for about 5 minutes on each side, depending on the thickness of the fish and how well you like it done.
- Transfer to a serving platter alongside the Chili-Lime Sauce and serve hot or warm.
- Note: To bake in the oven, preheat oven to 375F and bake for about 15 minutes.
