Steps:
- Blend the tomato, garlic, and jalapeno in a blender.
- Separately, dice the onions and the cilantro.
- Add the tomato, garlic, jalapeno mixture to a frying pan with a small amount of olive oil.
- Heat over medium high heat until it begins to boil, and then remove from heat.
- Put the salsa in a bowl, add the cilantro and onion, and stir well.
- Add salt to taste.

SALSA ROJA

- Tear all the chiles into large pieces and toast them in a large dry skillet over medium heat until they change color a bit, about 2 minutes. Add the spices and continue to toast for 2 to 3 minutes until everything is fragrant. Remove from heat and carefully add about 1 cup of hot water to just cover the chiles. Turn the heat to low and simmer for about 15 minutes.
- Preheat the broiler. Put the quartered tomatoes, sliced onion, and whole garlic cloves onto a roasting tray, spreading out evenly. Drizzle with plenty of olive oil and season well with salt and pepper and sprinkle with cilantro sprigs. Broil until everything is nicely charred, about 10 minutes (you want lots of deep rich color so don't be afraid if some of the edges get pretty black).
- Add the chile mixture to a blender and puree. Remove the tomato/onion mixture from the roasting pan and carefully add it to the blender, (it will be hot). Blend until smooth (you may need to work in 2 batches). Once everything is pureed, pour the mixture back into the pot over low heat adding a little water if the salsa is too thick. Stir in the sugar and lime juice and season with salt and pepper, to taste. Transfer to a large serving bowl and serve.

A great enchilada or taco sauce. Can be made ahead and refrigerated for up to 1 week.

- Combine vegetable stock, ancho chiles, plum tomatoes, onion, red chile, garlic, brown sugar, vegetable oil, cumin, kosher salt, and black pepper in a saucepan; bring to a boil. Boil mixture for 2 minutes.
- Cover saucepan and remove from heat; let stand for 10 minutes.
- Pour mixture into a blender no more than half full. Cover and hold lid down; pulse a few times before leaving on to blend. Puree in batches until smooth. Transfer salsa to a bowl and stir in vinegar.

- Preheat grill to medium (if using a charcoal grill, coals are ready when you can hold your hand 5 inches above grate for just 5 or 6 seconds). Grill tomatillos, pineapple, and chiles, flipping once, until blackened and cooked through, about 4 minutes per side. Set aside.
- Using a mortar and pestle or the side of a large knife on a cutting board, crush together garlic and salt to form a paste. Pulse garlic paste, tomatillos, chiles, and honey in a food processor until coarsely combined; transfer to a bowl.
- Cut pineapple into 1/2-inch dice. Add pineapple, cilantro, and onion to the tomatillo mixture; stir until combined. Serve warm or at room temperature.

- Grill all veggies except cilantro and salt until they blacken, removing each one as they do.
- Remove stems froom veggies and also seeds from peppers, if preferred.
- Place ingredients in a food processor and pulse until desired consistency is achieved.

- Place chicken between 2 sheets of heavy plastic on a solid, level surface. Firmly pound chicken with the smooth side of a meat mallet to 1/2-inch thickness.
- Combine flour, salt, and ground black pepper in a shallow dish. Dredge chicken in flour mixture.
- Coat a large skillet with olive oil; heat over medium-high heat. Reduce heat to medium and add chicken; cook until golden brown, 5 to 6 minutes. Flip chicken and continue cooking until second side is golden brown, about 4 minutes more.

- Fire up. Preheat the grill to medium high, about 325°F in one single hot zone. When it is hot, clean the grates really well. You don't want any rancid meat grease in your salsa.
- Prep. Slice the tomatoes in half lengthwise. Slice the jalapeño lengthwise and scoop out the seeds, the white ribs, and the stem end with a spoon. Peel the onion, cut off the ends, and slice into 1/2" thick rings. Peel the garlic cloves and cut off the stem end.
- Cook. Put the tomato, onion, lime, and jalapeño on the grill cut side down. To keep the garlic cloves from falling through you can put them on a grill topper or a piece of foil or a frying pan. Turn the tomato, onion, and pepper when they start to get grill marks. Let the jalapeño and tomato skins blister and blacken so they will be easy to peel. Remove the lime when the cut side gets grill marks. Remove onion when it gets marked on the second side.
- Prep again. Let everything cool and peel the tomatoes and jalapeños (you may want to wear gloves when handling the jalapeños). Chop the tomato, onion, jalapeño, garlic, and cilantro in a bowl, squeeze in the lime juice through a strainer or your fingers to catch the seeds (some limes have seeds), and add salt and pepper to taste. Rub the lime skin on a zester to get about 1 teaspoon of lime zest into the bowl. Stir and chill. If you barehanded the pepper, wash thoroughly with soap or you can burn your eyes or other moist parts (use your imagination).

- Preheat grill to high heat. Place 12 of the tomatoes, stem side down, directly on the grill. Roast the tomatoes over the flame for 10 to 20 minutes or until they are very charred and blackened. Flip over and continue to grill until this side is also charred and blackened. Add jalapenos to grill after you flip the tomatoes for the first time. These will also blacken but make sure to turn them to get all sides charred.
- Take the tomatoes and peppers off the grill and place in a large zip lock. Let cool for about 10-15 minutes. When cooled dump tomatoes, peppers, and any liquid into a blender.
- Add the water and lime juice and blend again until mixed. The salsa darkens as it is chopped finer!
