- Rub the steak with the cut sides of the garlic. Brush the steak on both sides with the worcestershire sauce. season with salt and pepper. Set Aside at room temperature. quarter the potatoes, then cut into 1/4 inch thick slices.
- In frying pan heat 2 tbs. of the oil over med-high heat. Add the onion and potatoes. Cook tossing for 1 to 2 minutes to lightly coat the potatoes with oil. Then continue to cook, turning only occasionally until the slices are nicely browned, about 5 minutes, Season with salt and pepper. Remove to a bowl cover with foil.
- Wipe the pan clean, no need to rinse. Add the remaining oil to the pan and heat about 1 minute. Add the steak, cover, and cook undisturbed for 3 minutes, until browned on the bottom. Turn over, cover, reduce heat to medium, and cook until browned on the second side and rare in the center. set steak on cutting board. Pour off oil and wipe out the pan.
- Add the butter to the pan and set over medium heat. Cook eggs as you like. Slice steak in wide slices on an angle. Plate steak, eggs, and potatoes.

- Whisk together the mayonnaise, vinegar, garlic, mustard, and tarragon and salt and pepper, to taste, in a bowl. Cover and refrigerate for at least 30 minutes before serving.
- Put the potatoes in a pot of cold water, add 2 tablespoons of salt and cook the over medium heat until tender, about 10 minutes. Drain, let cool and cut each potato lengthwise into 8 slices.
- Heat a grill to high. Brush the potatoes with the oil and season with salt and pepper, to taste, and grill until golden brown and cooked through, about 2 to 3 minutes per side.
- Transfer to a serving dish and serve with the aioli alongside.

- Make the sauce: In a medium saucepan over medium heat, melt the butter. Add the onion and garlic and saute until softened, about 3 minutes. Add the rest of the sauce ingredients; bring to a boil, then simmer until the sauce is reduced to 2 cups, about 30 minutes.
- Meanwhile, preheat a grill to medium-high. Season the steaks with salt and pepper and rub with the oil. Grill for 3 to 5 minutes per side for medium-rare. Let rest for 10 minutes before slicing. Serve with the beer-molasses sauce and the grilled eggs.

- For the green sauce: Add the parsley, oil, capers, vinegar, Worcestershire sauce, paprika and hot sauce to a food processor and pulse until smooth. Taste for seasoning and add salt, pepper and more hot sauce as needed.
- For the steak and eggs: Preheat a grill to medium-high. Sprinkle the steaks with salt and pepper and rub with 1 tablespoon oil. Grill 5 minutes per side for medium-rare and 7 minutes for medium. Let rest 10 minutes before serving. Slice the steak, if desired.
- While the steaks are resting, place a cast-iron skillet on the grill or side burner and add the remaining oil to the skillet. Crack in the eggs and sprinkle with the paprika, salt and pepper. Cook until the edges are crisp and golden but the yolks are still runny, 2 to 3 minutes. Grill the bread on both sides until crisp and golden, and serve with the steak, green sauce and fried eggs.

- Preheat the grill to medium heat.
- Add the potatoes to a large pot of cold water. Bring potatoes to a boil over medium heat, then reduce the heat and simmer until the potatoes are just slightly tender but not cooked through about 10 to 12 minutes. Drain the potatoes and dry well. Slice the potatoes into thick wedges, about 6 per potato.
- In a large bowl, whisk together the olive oil, dry rub, and salt and pepper, to taste. Add the potato wedges and toss. Grill the potatoes until golden brown and crisp all over, about 10 to 12 minutes. Transfer the potatoes to a serving bowl or platter and serve with Creole Mustard Dipping Sauce.
- Combine all of the ingredients in a small bowl.
GRILLED STEAK, EGGS, AND HOME FRIES

- Whisk all of the ingredients together in a large bowl and season with salt and pepper to taste. Remove the silver skin from the back of the steak and add the steak to the marinade. Combine the marinade and the steak in a resealable plastic bag. Let marinate for at least 1 hour, preferably over night.
- Preheat the grill to medium high. Oil the steak a bit and grease the grates of the grill. Cook the steak over medium heat until medium-rare, about 5 minutes per side.
- Par boil the potatoes until 2/3 of the way cooked, about 8 minutes. Cool the potatoes in an ice bath, and once cool cut into 6-8 wedges. Add the fries to a large mixing bowl and coat with 1-2 tablespoons of oil. Season the fries with the herbs and salt and pepper, to taste.
- Preheat the grill to medium-high. Grill the fries until cooked all the way through and slighty charred, about 3 minutes per side. While the fries are cooking, put a cast iron on the grill and heat 3 tablespoons of butter over medium-high. Fry the eggs in batches and place on a parchment paper-lined baking sheet until ready to serve.
- Slice the steak against the grain. Divide the fries and slices of steak amongst 10 plates, and add the eggs on top. Garnish with chopped chives and bernaise sauce, if using.
GRILLED STEAK FRIES
It's nice to have the option to deliver a full meal straight off of the grill, fries and all. Though not as crispy as the deep-fried variety, these hearty grilled steak fries are every bit as satisfying. It's vital to grill the potato slices with the skin on; the skin not only provides an extra textural dimension, but also keeps the potatoes from falling apart on the grill. You can simply season these with salt and pepper or use any of the seasoning mixtures for fries (pages 117 to 119), if you so desire.
