BEEFY JALAPENO CORN BAKE
You'll want a fork to dig into hearty squares of this beefed-up cornbread from James Coleman, Charlotte, North Carolina. Chock-full of ground beef, corn, cheese and jalapeno peppers, It's so filling, it can be served as an entree.

- In a large skillet, cook beef over medium heat until no longer pink; drain and set aside. In a large bowl, beat eggs, corn, milk and oil. Combine the cornmeal, flour, baking powder and salt; add to egg mixture and mix well., Pour half of the batter into a greased 13x9-in. baking dish. Sprinkle with 2 cups cheese; top with the beef, onion and jalapenos. Sprinkle with remaining cheese; top with remaining batter., Bake, uncovered, at 350° for 55-60 minutes or until a toothpick inserted into cornbread topping comes out clean. Serve warm. Refrigerate any leftovers.

BEEFY JALAPENO CORN BAKE
Taken from The Taste of Home Magazine --- This is a ground beef and corn bread recipe all in one casserole and made into a main dish meal --- I also add in corn nibets and some jalapeno peppers also, serve with gravy on the side, this is total comfort food! :)

Steps:
- Set oven to 350 degrees.
- Grease a 13x9 baking dish.
- In a skillet, cook beef with onion, garlic and bell pepper, until no longer pink, then season with salt and pepper; drain and add in Parmesan if using; set aside.
- In a bowl, beat eggs, corn, milk and oil.
- Combine the cornmeal, flour, baking powder and salt; add to egg mixture and mix well.
- Pour half of the batter into a greased baking dish; sprinkle with 2 cups cheese; top with the beef, onion and jalapenos.
- Sprinkle with remaining cheese; top with remaining batter.
- Bake, uncovered for 55-60 mins or until a toothpick inserted into corn bread topping comes out clean.
- Serve warm.
MEXICAN CORNBREAD CASSEROLE
I can't remember where I got this recipe but have had it for years. I always make this when I have cooked a big pot of pinto beans and ham. It's a nice change from your standard cornbread. My husband does not like cornbread or anything with cornmeal but always looks forward to me making this when we have beans. I have made it often and always get lots of compliments.

Steps:
- Brown together the ground beef, onion and jalapeno pepper; drain well.
- In a bowl mix together the cornbread ingredients.
- Lightly spray a 13 x9 in baking dish with Pam.
- Pour 1/2 of the cornbread mixture into prepared dish.
- Top with the meat mixture then sprinkle on the cheese to cover.
- Pour the remaining cornbread mixture on top.
- Bake in a 350 degree preheated oven for 45 mins or until the top is lightly browned.
