Time 1h15m

Yield 6 to 8 servings

Number Of Ingredients 19

5 cloves garlic, sliced
2 tablespoons olive oil
1 medium yellow onion, sliced
1/2 cup sliced scallions
4 cups chicken broth
2 medium red-skinned potatoes, quartered
1 large or 2 small sweet potatoes, peeled and cubed
1 pound cassava (yuca), peeled and cubed
2 ripe plantains, peeled and quartered
2 ears sweet corn, cut into thirds
Two 13 1/2-ounce cans coconut milk
3 tablespoons adobo
1 tablespoon chile powder, such as cayenne, or to taste
1 teaspoon ground black pepper
3 sprigs fresh thyme
2 tablespoons cilantro
Salt
4 large eggs
5 ounces okra, trimmed

Steps:

  • Place the garlic and oil in a medium pot and cook, stirring, over medium heat until the garlic begins to turn golden. Add the onion and scallions to the pot and cook for 2 minutes. Add the chicken broth and 2 cups water and bring to a boil.
  • Add the red-skinned and sweet potatoes. Cover and boil for 5 minutes. Add the cassava, plantains and corn; cover and bring to a boil. Once boiling, add the coconut milk, adobo, chile powder, black pepper, thyme, cilantro and salt to taste. Simmer over medium heat until the corn is cooked, 20 to 25 minutes.
  • Gently place the eggs in the shell into the pot, cover and simmer for 6 minutes. Remove the eggs and place in a bowl of room-temperature water to cool slightly. Sprinkle the okra on top of the stew, cover the pot and reduce the heat to low. Peel the eggs while still warm. Add the peeled eggs back to the pot. Discard the thyme sprigs. Serve the stew hot.

PAN-FRIED OKRA

Pan-Fried Okra image

As one of the most respected cooks in America's Lowcountry region, Emily Meggett knows a thing or two about taking humble ingredients and transforming them into an irresistible plate of food. Such is the case for the matriarch's pan-fried okra, from her cookbook "Gullah Geechee Home Cooking: Recipes From the Matriarch of Edisto Island" (Abrams, 2022), a book that I co-wrote. Her recipe is constructed around the use of fresh, seasonal okra pods. Mrs. Meggett dismisses what she views as the excessive use of dairy-based cornmeal batters in restaurant versions of fried okra; instead, she lightly coats her okra, allowing the beauty and taste of the vegetable to shine in each mouthful.

Time 30m

Yield 4 servings

Number Of Ingredients 4

4 cups okra (about 1 1/3 pounds)
4 1/2 teaspoons salt (any type), plus more to taste
1 1/2 cups/340 grams fine or medium yellow cornmeal, plus more if needed
2 cups vegetable oil, plus more as needed

Steps:

  • Wash the okra, and place aside, leaving the okra slightly wet. Cut the okra crosswise into 1/2-inch pieces and place in a large bowl. Season the okra with the salt, adding more to taste.
  • Pour the cornmeal over the okra. Using both hands, firmly grip the bowl, and shake it until all the okra pieces are coated. If too dry, add a little water, 1 tablespoon at a time, and, if needed, more cornmeal can be added. Lightly press the okra with your hands, making sure that the cornmeal sticks to the okra. Toss the okra again. All the pieces should be coated evenly, with a light layer of cornmeal - but the okra shouldn't be obscured.
  • In a large cast-iron skillet, heat the oil over medium-high. You can determine if the oil is ready by dropping a pinch of cornmeal into it; the oil should sizzle, but not smoke. (If it's not hot enough, the okra will soak up the oil.)
  • Once the oil is ready, working in two batches to avoid crowding, drop half the okra into the hot oil and cook it, stirring occasionally, for about 5 minutes, until golden and crisp. Using a slotted spoon or spider, remove the okra to a plate covered with a paper towel to drain excess oil. Repeat with remaining okra, and serve immediately.

  • Cut okra into desired thickness (I cut mine to about 1/4 inch because I like them more on the crispier side. The thicker you cut them, the softer they will be once cooked)
  • Spread ochroes on a baking sheet (I had to use two sheets) and place near a window where you can get a lot of sunlight. Leave ochroes there for a minimum of 6 hours (I left mine by the window overnight). You can also place the ochroes outside on your patio table covered with a towel. The reason for this step is to dry out the "slime" that is inside the ochroes. The insides of ochroes have a very gelatinous fluid and when you cut into the okra, this fluid becomes more apparent and makes it harder to work with. If you skip this step, when you try to cook the ochroes, it will become soggy and mushy because of the gelatinous fluid.
  • Once okra is dried, you will notice that the seeds will look slightly brown, this is how you know it is ready to be cooked!
