3 cups Halloween shaped mini pretzels
2 cups oven toasted corn cereal
2 cups crispy corn bugles
2 cups whole grain Sun Chips
2 cups chow mein noodles
1/2 stick butter, melted
1/4 cup packed light brown sugar
1 teaspoon vanilla extract
1 cup candy corn
1 cup Halloween candy coated chocolate candies

Steps:

  • Preheat oven to 300 degrees F. Coat 2 rimmed baking sheets with cooking spray.
  • In a large bowl, combine pretzels, cereal, bugles, Sun Chips, and chow mein noodles; mix well.
  • In a small bowl, stir butter, brown, sugar, and vanilla. Pour butter mixture over pretzel mixture and toss until evenly coated. Spread mixture in a single layer on baking sheets.
  • Bake 35 to 40 minutes, stirring every 15 minutes. Remove from oven and cool completely.
  • Place mixture in a large bowl; add candy corn and chocolate candies; mix well. Store in an airtight container.

HALLOWEEN GROUND MEAT GHOUL-ASH

2 sweet red peppers (look for rectangular shaped field peppers as opposed to small round bell peppers)
2 tablespoons EVOO
2 pounds ground lamb or beef
Salt and freshly ground black pepper
About 3 tablespoons Worcestershire sauce
2 tablespoons sweet Hungarian paprika
2 teaspoons hot paprika, or ground red pepper or chili powder
2 tablespoons fresh rosemary leaves, finely chopped
1 tablespoon fresh marjoram leaves, chopped, or 1 teaspoon dried
3 to 4 cloves garlic, finely chopped
1 onion, finely chopped
2 tablespoons tomato paste
2 cups chicken or beef stock
1 cup tomato sauce, tomato puree or passata
1 pound extra-wide egg noodles
3 tablespoons butter, diced
1/4 cup chopped flat-leaf parsley
Creme fraiche, for garnish

Steps:

  • Char the peppers evenly under a hot broiler, or over an open flame on the stovetop. Place in a bowl and cover with plastic; cool to handle. Peel the peppers and chop.
  • Heat the EVOO, 2 turns of the pan, in a large Dutch oven or a deep skillet over medium-high heat. Pat the meat dry and add to the pan. Brown and crumble the meat, then season with the Worcestershire, sweet paprika, hot paprika, rosemary, marjoram and some salt and pepper. Add the garlic and onions, and cook until the onions are tender, another 7 to 8 minutes. Next, add the tomato paste and stir 1 minute. Add the roasted peppers, stock and tomato sauce. Simmer to thicken. Cool and store for a make-ahead meal. Reheat over medium heat stirring frequently.
  • To serve, heat water to a boil. Salt the water, and cook the egg noodles to al dente. Reserve 1/3 cup of the starchy water and drain. Then return the pasta to the hot pot. Add the butter, parsley and some salt. Toss to combine and melt the butter. Add some starchy water if the noodles begin to stick together.
  • Serve the goulash in shallow bowls, nested in the parsley egg noodles, and top with a dollop of creme fraiche.

MUENSTER MONSTER HASH BROWN FINGERS

Vegetable oil cooking spray, for the baking dish
3 1/2 cups (350 grams) frozen hash browns, thawed
3 tablespoons (24 grams) cornstarch
1 teaspoon kosher salt, plus more for sprinkling
1 teaspoon smoked paprika
1 large egg, beaten
3 tablespoons (42 grams) unsalted butter, melted and cooled
3/4 cup (75 grams) finely grated Muenster cheese
1/3 cup finely chopped Italian parsley
Neutral oil, for pan frying
Ketchup, for serving

Steps:

  • Spray an 8-inch square baking dish with cooking spray and line with parchment with an inch or so of overhang on all sides.
  • Put the hash browns in a large bowl. Sprinkle with the cornstarch, salt and smoked paprika and toss well to coat the potatoes evenly. Add the egg and melted butter and toss well to coat. Fold in the Muenster and parsley. Press the mixture firmly into the lined baking dish and flatten the top and sides evenly. Freeze until firm, about 30 minutes.
  • Pour about 1/2 inch of oil in a large nonstick skillet and heat over medium-high heat. Remove the hash browns from the baking dish and cut in half with a serrated knife, then cut each half into 5 "fingers."
  • The oil is ready when a shred of potato sizzles vigorously on contact. Slide half of the fingers into the oil and fry until deep golden and set on the bottom (you will know it's time to flip when they are easy to turn), about 3 minutes. Flip and fry the second side in the same way, about 3 minutes more. Drain on a cooling rack set over a baking sheet to drain excess oil. Repeat with the remaining fingers. Season with salt and serve with ketchup on the side.
