BAKED HAM AND APPLES
WHEN Mother wanted to serve ham, she went to the smokehouse, took one down from the rafters and sliced off as much as was needed. The rest was hung up again. - Place ham in an ungreased 13-in. x 9-in. baking dish. Rub with mustard and sprinkle with brown sugar. Core apples and cut into 3/4-in. slices; arrange in a single layer over ham. Dot with butter and sprinkle with pepper. , Cover and bake at 400° for 15 minutes. Reduce heat to 325°; bake for 45 minutes. Uncover and bake 15 minutes longer or until apples are tender.

YUMMY FRITTER BATTER
Found this recipe online and I'm posting so I don't lose it before I get a chance to try it out. There are variations for ham, banana, and apple fritters here. Serving size is an estimate as none was given with the original recipe.

Steps:
- For basic fritter batter: Combine flour, baking powder and salt; stir to blend. Add egg and melted margarine; stir until well blended. Add milk (or fruit juice), mix well. Let stand 30 minutes.
- Ham Fritters: Add minced ham to basic batter. Drop by spoonfuls into hot oil and deep fry.
- Banana Fritters: Peel and quarter bananas. Dip bananas in batter and saute in margarine until golden brown on all sides.
- Apple Fritters: Stir apples into basic batter. Drop by spoonfuls into hot oil and deep fry.
- *Note* You can make peach or apricot fritters by using canned fruit. Use the fruit syrup for the liquid in the basic batter. Dice fruit and mix with batter. Deep fry as for the apple fritters.

HAM AND APPLE FRITTERS WITH CRANBERRY ORANGE CROWN AND ROYAL FIG DIPPING SAUCES
Steps:
- For Fritters:
- Heat oil in a Dutch oven or deep-fryer until it reaches 350 degree F.
- In a large bowl add the cornbread mix, garlic powder, milk, egg and onions. Mix well to combine. Add apple and ham and stir to combine.
- Using a tablespoon or small scoop, carefully slide tablespoon size amounts of the fritter batter into the hot oil. Fry about 6 at a time. Fry for approximately 2 to 3 minutes or until golden brown and crispy. Remove from oil and drain on paper towel lined baking tray.
- Serve alongside dipping sauces.
- For Cranberry Mustard Dipping Sauce:
- Combined all ingredients into a small bowl and mix well.
- For Creamy Fig Sauce:
- Combined all ingredients into a small bowl and mix well.
APPLE FRITTERS

- Heat a couple of inches of vegetable oil in a heavy pot or Dutch oven over medium to medium-low heat until a deep-fry thermometer inserted in the oil registers 340 degrees F.
- In a mixing bowl, combine the flour, granulated sugar, baking powder, cinnamon and salt. In a separate bowl, beat the eggs with a fork, then add the milk, melted butter and vanilla. Gently fold the dry and wet ingredients together until just combined (do not over-mix). Fold in the apples, adding enough to make a very chunky batter.
- Drop heaping tablespoons of batter into the hot oil, 6 to 8 at a time. Fry until golden brown, 4 to 6 minutes. Remove and drain on paper towels. Dust generously with powdered sugar and serve warm with sausage and bacon!

- Peel and core both apples, then grate into a bowl. Add pancake mix, water, ham, cinnamon, salt, and nutmeg; mix until fully combined.
- Heat 3 inches oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
- Working in batches, drop teaspoonfuls of batter into the hot oil and dry until golden brown and cooked through, 2 to 3 minutes. Try not to overcrowd the pan or let the fritters touch each other. Remove to a paper towel-lined plate and repeat to fry remaining fritters.
- Sprinkle with powdered sugar and serve.
