Steps:
- Slice baguette horizontally with a serrated bread knife. Spread preserves on both sides of bread. On bottom half of baguette, lay down overlapping slices of ham and top with slices of brie. Place top of baguette on sandwich. Cut into 1-inch pieces and secure with decorative sandwich picks.
- Optional: heat in a 400 degree F oven for 10 to 12 minutes.

- Scramble eggs with water, salt, and pepper in a medium bowl until well blended. Heat 1 tablespoon butter in a medium nonstick skillet over medium heat. Cook eggs, stirring frequently, until scrambled to desired consistency.
- Spread 1 teaspoon of butter over 1 tortilla and place butter-side down in a medium nonstick skillet over medium heat. Sprinkle 1/3 cup cheese over entire tortilla. Steps:
- To prepare the salsa: Pulse the cranberries in a food processor until very finely chopped.
- Transfer to a bowl.
- Stir in the green onions, jalapeno, sugar, salt, cilantro, lemon juice and ginger.
- Cover and refrigerate at least 4 hours.
- Stir occasionally.
- To prepare the whipped brie: Remove the rind from the brie and put the cheese into a food processor with the cream cheese, pepper and lemon zest.
- Process until nice and smooth.
- Transfer to a serving bowl.
- Cover and refrigerate.
- (This can be made 24 hours in advance.) Bring to room temperature about 1 hour before serving.

- NOTE: You could also substitute corn tortillas for the wheat tortillas.
- Preheat oven to 425 degrees.
- In skillet over medium heat, cook the onion in the olive oil for about 5 minutes or until soft and browned. Stir often.
- Set onions aside in small bowl to cool.
- Arrange four (or 8 small) tortillas on a large baking sheet. Divide the Brie cheese and sauteed onions among the tortillas. Sprinkle with cranberries and garnish with black pepper then place the other tortillas on top, pressing down gently but firmly.
- Bake for approximately 8 minutes or until the Brie melts.

- Preheat oven to 425 degrees. Spread one side of each tortilla with 1 tablespoon mustard. Divide the turkey over one half of each mustard-coated side; dress with cranberry chutney (about 2 tablespoons per quesadilla). Layer each with 2 Brie slices, and sprinkle with salt and pepper. Fold and press to seal edges. Brush on all sides with olive oil; transfer to two rimmed baking sheets.

- tear ham up, and grate cheddar cheese. other hams maybe used. after tearing ham and grating cheese mix together, with a drizzle of olive oil if using. olive oil just holds the filling together but works without.
- then sprinkle filling evenly on the tortilla making sure ham and cheese are evenly shared all over the tortilla.
- lay next tortilla on top and press down lightly.
- turn hob onto low heat and allow cheese to melt so tortillas are glued together.
- when golden brown, turn over and allow other side to cook to same colour.
- then cut into 4 seperate pieces, serve with guacamole and salad to finish off this british/ american take on an authentic mexican dish.
