We're fans of any and all tostadas! But these easy, cheesy tostadas topped with ham and sliced olives are one of our faves.

4 tostada shells
12 slices OSCAR MAYER Smoked Ham
4 KRAFT Singles
1/2 cup shredded lettuce
1/2 cup chopped tomatoes
1/4 cup sliced pitted black olives

Steps:

  • Top tostada shells evenly with ham and Singles; place on 4 microwaveable plates.
  • Microwave, one at a time, on HIGH 15 sec. or until Singles begin to melt.
  • Top evenly with the lettuce, tomatoes and olives.

Oil for frying
6 flour tortillas (10 inches), quartered
3 packages (6 ounces each) thinly sliced deli ham (24 slices)
4-1/2 cups shredded cheddar cheese
1 cup picante sauce or salsa
Garlic salt
Sour cream and minced chives, optional

Steps:

  • In a electric skillet, heat 2 in. of oil to 375°. Fry tortillas wedges, a few at a time, until lightly browned and crispy. Drain on paper towels. , Place wedges in a single layer on baking sheets. Top each with a folded ham slice, 3 tablespoons cheese and 2 teaspoons picante sauce. Sprinkle with garlic salt. , Broil 4-6 in. from the heat until cheese is melted, about 2 minutes. Serve warm. If desired, top with a dollop of sour cream and sprinkle with chives.

Ham and Cheese Strata image

This hearty make-ahead breakfast is infused with Dijon mustard and bakes up to a fluffy, golden finish.

1 tablespoon unsalted butter, room temperature
10 large eggs
2 1/2 cups whole milk
1 tablespoon Dijon mustard
1 teaspoon smoked paprika
1 teaspoon salt
1 loaf bread, Pullman or sandwich style, cut into 1-inch pieces
1 pound boiled or baked deli ham, chopped
5 scallions, chopped (1/2 cup)
8 ounces sharp cheddar, shredded

Steps:

  • Butter a 2 1/2- to 3-quart baking dish. In a large bowl, whisk together the eggs, milk, mustard, paprika, and salt.
  • Place half of the bread in the bottom of a baking dish. Top with half each of the ham, scallions, and cheese. Repeat with a second layer of the remaining ham, scallions, and cheese, pressing down as necessary to fit in the baking pan.
  • Carefully pour the egg mixture over into the bread. Cover and refrigerate overnight.
  • Preheat the oven to 350 degrees Fahrenheit. Pull strata out of fridge and let come to room temperature for 15 minutes. Bake the strata, uncovered, until puffed and lightly golden brown, about 1 hour to 1 hour and 20 minutes. Let rest for 5 minutes before serving.

Cheese-Stuffed Tostadas image

Tostadas are a quick and easy way to add a little excitement to the usual taco night, and this meat-free version is no exception. Because between the crispy tortillas, creamy black bean mash, and smoky chipotle (oh, and did we mention plenty of melty cheese?) there's plenty of delicious fun to be had with this 30-minute dinner.

2 tablespoons extra-virgin olive oil, plus more for brushing
1 clove garlic, peeled and sliced
2 tablespoons finely chopped fresh cilantro, plus leaves for serving
1/2 teaspoon ground cumin
1 can (15 ounces) black beans, not drained
1 tablespoon chopped chipotle chile in adobo sauce
Kosher salt and freshly ground pepper
8 corn tortillas (5-inch)
5 ounces Monterey Jack, grated (1 heaping cup)
Shredded lettuce, sliced radishes, and salsa, for serving

Steps:

  • Heat oil in a skillet over medium-high. Add garlic and cook until just golden. Stir in chopped cilantro and cumin, then beans with liquid, chipotle, and 1/2 cup water. Season with salt and pepper. Bring to a boil, then reduce heat and simmer, stirring occasionally, until thickened, 6 to 7 minutes.
  • Preheat broiler. Place 4 tortillas on a rimmed baking sheet brushed with oil. Divide cheese among them, piled in centers, and top with remaining tortillas. Brush tops with oil. Broil, rotating sheet once, until tops are crisp, 3 to 4 minutes.
  • Flip and broil until second sides are crisp, 2 to 3 minutes more. Smash beans with the back of a spoon and spread mixture over tostadas. Top with lettuce, radishes, salsa, and cilantro leaves; serve.

I had leftover baked beans and ham to use up. So I came up with these. Very easy and healthy way to start the day.

2 low-fat flour tortillas (6 inch size)
1 cup egg substitute
1/4 cup 2% cheddar cheese (grated)
1/4 cup chopped ham
1/4 cup baked beans (I used Bush's)
1/4 cup salsa

Steps:

  • Scramble egg substitute with ham.
  • Place tortillas on broiler pan, top each one with 1/2 of the cheese, 1/2 of egg/ham mixture, 1/2 of baked beans.
  • Broil 3 in under broiler until cheese is melted and eggs etc are warm.
  • Transfer to serving plate, top with salsa and slice into forths.
