My husband and I both come from large families, so I'm always cooking up something in the kitchen. These hearty ham balls with a tangy sauce are a hit served over noodles.

1 pound ground fully cooked ham
1 pound ground pork
2 large eggs
1/2 cup crushed cornflakes
2-1/3 cups milk, divided
1/4 cup chopped onion
6 teaspoon prepared mustard, divided
Dash pepper
2 tablespoons vegetable oil
3 tablespoons butter
3 tablespoons all-purpose flour
1 cup sour cream
1 teaspoon salt
1/2 teaspoon dill weed

Steps:

  • In a bowl, combine ham, pork, eggs, cornflake crumbs, 1/3 cup milk, onion, 2 teaspoons mustard and pepper; shape into 1-in. balls. , In a large skillet over medium heat, brown ham balls in oil. Cook for 15-20 minutes or until juices run clear. , Meanwhile, in a saucepan, melt butter; stir in flour. Add remaining milk, stirring constantly. Bring to a boil; boil and stir for 2 minutes. Stir in sour cream, salt, dill and remaining mustard; heat through but do not boil. , Place ham balls on a serving platter and top with sauce.

A great use for your leftover Easter ham and the sweet mustardy sauce is delicious. Make smaller balls to serve on toothpicks as an appetizer or make larger ones to serve on rice as an entree. Adapted from Jean Pare, Millenium Edition.

2 lbs cooked ham
1/2 cup milk
1 egg
1/4 teaspoon seasoning salt
salt
1 -1 1/2 cup dried breadcrumbs or 1 -1 1/2 cup panko breadcrumbs
1 cup brown sugar (or use half Splenda for fewer calories)
2 teaspoons flour
2 teaspoons dry mustard
1/2 cup vinegar
1/2 cup water
2 teaspoons prepared mustard

Steps:

  • Grind ham in a meat grinder or food processor.
  • Mix ham with the next 5 ingredients (you may require more milk and/or bread crumbs for meatballs to hold their shape) and shape into 1 or 2 inch meatballs.
  • Place on a foil-lined and lightly oiled baking sheet and bake for 15 minutes at 375 degrees until firmed up and browned. Remove from oven and turn into a 3 quart (3 litre) casserole dish.
  • Stir together the sugar, flour and dry mustard. Add vinegar, water and prepared mustard and whisk until smooth. Pour over ham balls.
  • Bake at 350 degrees for 30 - 45 minutes, basting with sauce every 15 minutes, until sauce is thickened.

1/2 cup dry bread crumbs
1/4 cup finely chopped green onions
3 tablespoons finely chopped fresh dill or 3 teaspoons dried dill, divided
1/4 cup milk
1 large egg, lightly beaten
1 teaspoon Dijon mustard
1/2 teaspoon pepper, divided
1 to 2 tablespoons butter
1 to 2 tablespoons canola oil
2 tablespoons all-purpose flour
1 cup water
1 cup sour cream
Hot cooked noodles

Steps:

  • In a bowl, combine ham, bread crumbs, onions, 1 tablespoon fresh dill (or 1 teaspoon dried), milk, egg, mustard and 1/4 teaspoon pepper. Shape into 1-in. balls. , In a large skillet, heat 1 tablespoon butter and 1 tablespoon oil. Brown ham balls, adding remaining butter and oil as needed. Remove ham balls to a serving dish; cover and keep warm. , Pour ham drippings into a saucepan; blend in flour. Gradually add water and stir until smooth. This is my newest, favorite meatball recipe. If you like a sweet twist, you'll like this one. The meatballs will be slightly pink inside when done because of the pork, so do not overbake them!

1 ¼ pounds ground smoked ham
1 pound ground pork
1 pound lean ground beef
1 cup milk
2 eggs
1 ½ cups graham cracker crumbs
1 (10.75 ounce) can tomato soup
¼ cup cider vinegar
1 cup packed brown sugar
1 teaspoon mustard powder

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine the ham, pork OR sausage, and the ground beef. Stir in the milk, eggs and graham cracker crumbs and mix well. Form into large balls about 2 inches in diameter and place them in a 9x13 inch baking dish.
  • In a separate medium bowl, combine the soup, vinegar, brown sugar and mustard powder. Mix well and pour over the meatballs.
  • Bake at 350 degrees for 1 hour or until internal meat temperature reaches 160 degrees F (73 degrees C).

(I was given this recipe a few years ago). It is one everyone will ask for. I took it once to a Birthday Party and was asked for the recipe by at least 5 people including the host. These can be served for dinner on rice or taken to parties and kept warm in a crockpot until serving. They can also be made ahead of time and frozen.

1 lb ground ham (if needed you can get a ham steak or chunk at the deli counter to grind)
1 lb ground pork
2/3 cup crushed cracker crumb
1/2-3/4 cup milk
1 green pepper, very finely chopped
2 eggs
1 medium onion, very finely chopped
1 1/2 cups brown sugar
3/4 cup catsup
1 teaspoon dry mustard
1/2 cup molasses
1 teaspoon Worcestershire sauce

Steps:

  • (3 batches of sauce is best when filling a crockpot with a double batch of balls) Ham Balls: Mix all together, gradually adding milk at the end to moisten enough to form balls.
  • Bake balls on a cookie sheet for 20 minutes at 350 degrees, drain fat and cool.
  • Sauce: Mix togther, heat and simmer 10 minutes until well blended.

1 ½ cups cracker crumbs
3 eggs

½ cup chopped onion
½ cup all-purpose flour for coating
1 ¾ cups brown sugar
1 ½ cups water
⅔ cup vinegar
2 tablespoons dry mustard

Steps:

  • In a large bowl, mix together the ground ham, pork and beef, cracker crumbs, eggs, milk, and onion. Form 1/2 cupfuls of the meat into balls, and roll in flour. Place in a baking dish, and refrigerate for 2 hours or overnight.
  • Preheat the oven to 350 degrees F (175 degrees C). In a saucepan, combine the brown sugar, water, vinegar and mustard. Mix well, and bring to a boil. Pour over the ham balls before baking.
  • Bake for 1 hour and 20 minutes in the preheated oven, basting occasionally with the drippings.
