- In a large bowl, whisk together the strawberry gelatin mix and 9 cups of boiling water. Set aside. In a large pot, bring the remaining 9 cups of water to a boil. Stir in the sugar until dissolved. Pour the sugar water into the gelatin water, then stir in the pineapple juice and lemon juice, mixing well. Pour into four 1-gallon size resealable freezer bags, or pretty Bundt pans to freeze.
- To make punch, place one of the frozen portions into a punch bowl, and pour 1 bottle of ginger ale over.

- Put cucumber spears in a large container. Stir pickling lime into 1 gallon water in a large pitcher until the lime is dissolved; pour over the cucumbers. Refrigerate for 24 hours.
- Drain cucumbers and rinse well; return to large container. Pour enough cold water over the drained cucumbers to cover. Soak at least 3 hours; drain. Transfer cucumbers to a large pot.
- Stir 1 1/4 cup vinegar and 1 1/4 cup water together in a bowl; add cinnamon red hot candies. Set aside to soak, stirring occasionally.
- Stir 1/2 cup vinegar, red food coloring, and alum together in a bowl until alum is dissolved; pour over the cucumbers. Put a lid on the pot, place the pot over medium heat, and bring the water to a boil. Reduce heat to low and simmer for 2 hours; drain and return cucumbers to the pot.
- Pour cinnamon candy mixture into a saucepan; add sugar and cinnamon sticks. Bring the mixture to a boil; cook and stir until the candies and sugar are dissolved completely into a syrupy liquid. Pour the liquid over the drained cucumbers. Refrigerate 8 hours to overnight.
- Drain liquid from the cucumbers into a heavy saucepan; bring to a boil and pour again over the cucumbers. Refrigerate 24 hours.
- Drain liquid again from the cucumbers into a heavy saucepan; bring to a boil and pour again over the cucumbers. Refrigerate another 24 hours.
- Heat cucumbers and syrup to a boil.
- Sterilize the jars and lids in boiling water for at least 5 minutes. Pack cucumbers into the hot, sterilized jars, filling to within 1/4 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids and screw on rings. Refrigerate until chilled before serving.

TOO HOT TO HOOT PUNCH
This splendidly summery concoction is proof that punch, often associated with fall and winter holidays, can be made seasonal with the delicate spring sweetness of strawberries, and summery with the tropical tang of limes. Sure, you could settle for a vodka base, but bourbon adds a marvelous backbone of vanilla richness. Or make it without alcohol and serve at a children's party.

- Several hours ahead, prepare strawberry syrup and the elderberry tea. For the syrup, cut the green tops off the strawberries and discard. Dice the berries until you have 1 cup. Reserve extras for garnish. In a saucepan, add the berries along with 1 cup water and the sugar. Bring to a simmer, stirring, and continue simmering until the sugar dissolves. Allow syrup to cool.
- Prepare the tea. Pour 12 ounces of hot water over the tea bags or the loose tea. Allow to steep until cool. Discard bags or strain loose tea.
- Juice enough limes to produce 9 ounces of juice.
- In a punch bowl stir together the lime juice, bourbon, bitters, 6 ounces cold water, the strawberry syrup and the tea. (If you have extra tea, juice and syrup, combine without bourbon for a pleasant soft drink for children.) Gently slide the ice, or an ice mold, into the bowl. Garnish with sliced strawberries. Serve in ceramic punch cups or glasses.
