GLAZED HAM WITH PEACH-GINGER SAUCE



Glazed Ham with Peach-Ginger Sauce image

A unique tangy and spicy chunky peach sauce perfectly complements traditional glazed ham for an outstanding holiday meal. Vary the amount of ginger and hot pepper to satisfy your own tastes. The Peach-Ginger sauce can be made ahead of time and reheated before serving.

1 (10 pound) fully-cooked, bone-in ham
2 teaspoons whole cloves
¼ teaspoon ground cinnamon
2 tablespoons brown mustard
½ cup packed brown sugar
¼ cup packed brown sugar
2 tablespoons apple cider vinegar
1 cup peach nectar
1 cup peach preserves
5 cups frozen peach slices
2 teaspoons minced fresh ginger root
1 hot cherry pepper, seeded and minced
1 (3 inch) cinnamon stick

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Use a serrated knife to score the top of the ham in a diamond pattern. Press whole cloves into the ham and place on a roasting rack in a roasting pan.
  • Bake for 1 1/2 to 2 hours in the preheated oven, or until the internal temperature of the ham has reached 140 degrees F (60 degrees C). Cover with aluminum foil if the ham starts to look dry.
  • While the ham is baking, mix together the cinnamon, mustard and 1/2 cup of brown sugar in a cup or small bowl. Set aside. In a saucepan over medium heat, mix together the remaining brown sugar, cider vinegar, peach nectar and peach preserves. Bring to a boil and then stir in the sliced peaches, ginger, cherry pepper and the cinnamon stick. Simmer until the peaches are tender and the sauce has thickened, 25 to 30 minutes.
  • Remove the ham from the oven and brush liberally with the mustard glaze. Increase the oven temperature to 350 degrees F (175 degrees C) and return the ham to the oven, uncovered.
  • Bake for an additional 20 to 30 minutes, or until glaze is bubbly. Allow the ham to rest for 15 to 20 minutes before carving. Serve with hot Peach-Ginger sauce.

3 tablespoons coarse grain mustard

Steps:

  • Remove skin and excess fat from ham. Score fat on ham in a diamond pattern.
  • Place the ham, fat side up, in a roasting pan (line with heavy duty aluminum foil for easy cleanup).
  • Stir together remaining ingredients. Pour mixture evenly over ham.
  • Bake at 325 for 30 minutes. Baste and then shield with foil after 30 minutes to prevent excess browning.
  • Continue baking for 1 hour or until a meat thermometer inserted in ham registers 140 degrees, basting every 30 minutes. Let stand 10 minutes before serving.

1 fully cooked bone-in ham (5 to 7 pounds)
Whole cloves
2 cans (8 ounces each) sliced pineapple, drained
Maraschino cherries with stems
1-1/2 cups packed brown sugar
1/3 cup peach or apricot nectar
3 tablespoons cider vinegar
1/8 teaspoon ground cloves

Steps:

  • Place ham on a rack in a shallow roasting pan. Score the surface of the ham, making diamond shapes 1/2 in. deep; insert a clove in each diamond. Secure pineapple slices and cherries on ham with toothpicks. , In a small bowl, combine the brown sugar, peach nectar, vinegar and ground cloves. 1/4 cup Bourbon
1 teaspoon ground cumin
1/2 teaspoon ground ginger
1/2 teaspoon ground coriander
1/2 teaspoon fresh ground black pepper
7 1/2 lbs smoked cooked low-sodium ham
20 whole cloves
cooking spray
1 cup water

Steps:

  • Preheat oven to 325.
  • Combine preserves and bourbon in a small saucepan. Bring to a boil; remove from heat. Stir in cumin, ginger, coriandar, and pepper. Cool slightly.
  • Trim fat and rind from ham. Score outside of ham in a diamond pattern; stud with cloves. Place ham on the rack of a broiler pan or roasting pan coated with cooking spray. Pour 1 cup water into pan; place rack in pan. Brush ham with 1/4 cup preserves mixture. Bake at 325 for 2 hours or until a thermometer registers 140, basting ham with remaining preserves mixture every 30 minutes. Transfer ham to a platter; let stand 15 minutes.   • Put the ham in a large stockpot, and fill the pot with enough cold water to cover the ham. Bring the water to 170 to 180 degrees (below the boil; if boiled, the ham will crack open at the joint). Cook at that temperature for 3 hours, then let cool in the cooking water.
  • When ready to proceed with the recipe, remove the ham from the water. With a knife, remove the skin from the ham, and trim the surface of the meat where it is brown and skinlike around the shank bone. To make carving easier later on, remove the pelvis or hip bone by running a knife around it. When the skin has been removed, trim off all but a thin layer of white fat from the surface of the ham.
  • Run the point of your knife in a crisscross pattern through the remaining fat on the top of the ham, cutting slightly into the surface of the meat. This scoring will help the glaze adhere to the meat while it cooks. Preheat the oven to 350 degrees.
  • For the peach-mustard glaze: In a small bowl, mix together the preserves, pepper, mustard, balsamic vinegar, and allspice. Spread this coating on the top surface of the ham, place it in a roasting pan, and bake in the 350-degree oven for 30 minutes. Reduce the heat to 325 degrees, and continue cooking the ham for 1 hour. Sprinkle the powdered sugar on top, and cook for another 30 minutes, until nicely glazed. Transfer the ham to a platter, and set it aside in a warm place while you make the peach sauce. Discard the accumulated fat in the roasting pan, and add the 1 cup of water to the drippings in the pan, stirring to loosen and mix in the solidified juices. Add the demi-glace, and bring to a boil. Reserve for use in the peach sauce.
