This is a twist on traditional ham salad recipes for those of you who prefer dill pickles over sweet. Serve on pumpernickel bread with fresh alfalfa sprouts!

4 (1/4 inch thick) slices ham
4 hard-boiled eggs, peeled and chopped
3 stalks celery, minced
1 ½ cups light mayonnaise
½ cup dill pickle relish
¼ cup minced onion
2 tablespoons Dijon mustard
ground black pepper to taste

Steps:

  • Shred the ham using the shredding blade on a food processor.
  • Stir shredded ham, chopped eggs, celery, light mayonnaise, relish, onion, Dijon mustard, and black pepper together in a large bowl.
  • Refrigerate 2 hours before serving.

6 hard-boiled eggs
¼ cup mayonnaise, or more to taste
1 tablespoon mustard
1 dash hot sauce
1 pinch Salt and pepper to taste
1 (8 ounce) package Smithfield® Cubed Ham
1 shallot, chopped
2 ribs celery, chopped

Steps:

  • Halve the hard-boiled eggs and remove the yolks to a bowl. Coarsely chop the egg whites and set aside.
  • To the bowl with the egg yolks, add the mayonnaise, mustard, hot sauce, salt, and pepper. Using a fork, smash the mixture until smooth. Add the reserved chopped egg whites, ham, shallot, and celery. Toss to combine. If you like a creamier texture, add more mayonnaise.

Sunny's Quick Ham and Egg Salad image

Yield 2 cups or 4 sandwiches

Number Of Ingredients 13

1/3 cup mayonnaise
1/4 cup finely chopped red onion (about 1/4 small red onion)
2 heaping tablespoons English mustard
1/2 teaspoon sriracha seasoning (I like McCormick brand)
6 to 8 chopped hot cherry pepper slices (I like B&G brand)
3 finely chopped scallions (white and green parts)
Freshly ground black pepper
6 hard-boiled eggs, peeled, halved and sliced
2 cups 1/2-inch cubes ham
8 slices toasted white bread
Several leaves butter or Bibb lettuce
8 super-thin slices heirloom tomato
4 super-thin slices red onion

Steps:

  • For the salad: Add the mayonnaise, red onion, mustard, sriracha seasoning, cherry peppers, scallions and a few grinds of black pepper to a large bowl and fold together. Add the eggs and fold gently, then add the ham and fold in. Refrigerate for at least 30 minutes before serving.
  • For sandwiches: Make sandwiches on white toast with egg salad, lettuce, tomato and onion.

After Easter we always have left over baked ham and Easter Eggs, so I decided to make it into a salad for the family to enjoy the next day. This light salad has a great taste with the addition of dried apricots and celery. Be creative and add your own extras!

2 c. Left over baked ham, diced very small 4 hard boiled eggs, chopped 1 c. mayonnaise ½ c. chopped celery ¼ c. chopped sweet onion ¼ c chopped dried apricots Salt and Pepper to taste

  • Combine diced ham, eggs, celery, onion, and dried apricot. Add mayonnaise and mix. Salt and pepper to taste. If possible, allow to sit in refrigerator for 1 hour. Serve alone or on bread.

8 large hard-boiled eggs
2 tablespoons Dijon mustard
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon hot pepper sauce (optional)
1/4 cup mayonnaise
2 tablespoons capers, rinsed and drained
1/4 cup finely minced onion
1/4 cup finaly chopped celery
1 cup cooked ham, diced

Steps:

  • Either boil your eggs, cool them, and peel them, or continue on to the next steps.
  • Cut the eggs in half lengthwise, and remove the yolks, reserving the whites.
  • In a large bowl, mix the yolks with the mustard, salt, pepper, pepper sauce, mayonnaise, capers, celery and onions.
  • In a small bowl, coarsely chop the egg whites, add the ham, and then blend this mixture into the seasoned yolks.
  • Cover and refrigerate for several hours, until ready to serve.

This satisfying salad, crammed full of green vegetables, new potatoes and lean ham is low calorie and low fat

2 eggs, hard-boiled
500g baby potato
200g green bean
200g frozen peas, defrosted
175g lean ham, shredded
juice ½ lemon
1tbsp wholegrain mustard
1tbsp honey
crusty bread, to serve (optional)

Steps:

  • Peel and quarter the eggs. Cook the potatoes in a large pan of boiling water for 8-10 mins or until tender. Tip in the beans for the final 3 mins, then add the peas for the final min. Drain all the veg, cool under cold running water, then drain really well.
  • For the dressing, mix the juice, mustard and honey together. Season, then pour over the veg. Fold through the ham and top with the eggs. Serve with bread, if you like.

I'm always looking for recipes that sound something like what my grandma would've made. She was a wonderful cook and even the most average lunch or dinner seemed great. She made an egg salad that I haven't figured out yet. We made sandwiches with it. I found in my "300 Ways to Serve Eggs" circa 1949 a way to make Egg and ham salad that sounds interesting.

1 cup chopped celery
