HAM AND FRUIT SALAD



Ham and Fruit Salad image

So refreshing and loaded with fresh fruit flavors. Ready in minutes. A quick and healthy lunch or great addition to your brunch table. Has a very colorful presentation. The recipe is also very interchangeable. You can exchange ham (I use black forest ham) for chicken or turkey and use a mixture of berries like raspberries blue berries and strawberries. If you prefer a different type of cheese use it.

Number Of Ingredients 10

1 1/2 cups cooked chicken or 1 1/2 cups cooked turkey
2 medium nectarines or 2 medium peaches, peeled, sliced
6 cups mixed salad greens
1 pint strawberries, hulled, sliced or 1 pint mixed berry, raspberries, blue berries and strawberries
1 cup swiss cheese, shredded
1/4 cup orange juice
2 tablespoons canola oil
1 tablespoon white wine vinegar
1/2 teaspoon poppy seed
1/4 teaspoon salt

Steps:

  • Mix all salad ingredients in serving bowl; toss well.
  • Whisk together all dressing ingredients in small bowl. Pour dressing over salad; toss to coat.

3 cucumbers, large
1 cup ham, cubed
1 cup American cheese, diced
2 cups apples, red unpeeled diced
1 tablespoon lemon juice
3/4 cup salad dressing
6 lettuce leaves

Steps:

  • Cut unpeeled cucumbers in half lengthwise; remove seed portion.
  • Scoop out pulp; leave firm shells; chop pulp coarsely.
  • Combine ham, cheese, and apples that have been tossed in lemon juice and salad dressing.
  • Add cucumbers to ham mixture when ready to serve; mix well.
  • Fill cucumber shells.
  • Serve on lettuce leaf.

1 teaspoon fresh lemon juice
1/4 cup fresh pineapple or 1/4 cup water-packed pineapple
10 small red seedless grapes
2 ounces ham, cubed (95% fat-free is recommended)
1 tablespoon lo-cal sweet and sour dressing

Steps:

  • In small bowl, combine banana and lemon juice.
  • Add remaining ingredients, mixing well.
  • Place in covered container.
  • Chill well.
