Hanger Steak & Bacon Sandwich With Frisée & Red Onion Jam Recipe - (4.5/5) image

Provided by tomato

Number Of Ingredients 21

RED ONION JAM:
1 pound hanger steak
2 cloves garlic, minced
2 tablespoons rosemary, thyme, and sage, minced
8 ounces applewood smoked shoulder bacon, sliced thin
Frisée, washed and patted dry
Red onion jam (see recipe below)
8 thick slices rustic country bread
Sea salt
Fresh crack black pepper
1 pinch controne hot pepper flake
Extra virgin olive oil
2 red onions, sliced thin
1/2 cup red wine vinegar
1/4 cup sherry vinegar
1/2 teaspoon yellow mustard seed
1/4 teaspoon fennel seed
1/4 cup honey
Sea salt
Fresh cracked black pepper
Extra virgin olive oil

Steps:

  • Season hanger steak with salt, pepper, chili flake, herbs, and olive oil. Set aside, uncovered 1 hour up to 12 hours. Heat a grill on high heat. Sear steak on all sides, achieving a good crust. Cook steak to rare/medium rare. Remove from grill and let rest at least 15 minutes. Meanwhile, brush one side of the sliced bread with olive oil and season with salt and pepper. Grill bread, oil side down until nice and toasty. Remove and let rest grilled side up. In a small saucepan, drizzle olive oil. Add red onions and cook until well caramelized. Add the remainder of ingredients and bring to a boil. Turn down heat and allow to slowly simmer until all liquid has reduced. Will keep for several weeks in the fridge. Thinly slice steak, against the grain. To build sandwich: spread red onion jam on grilled side of bread. Arrange thin slices of shoulder bacon topped with frisée, and drizzle with with olive oil and season with salt and pepper. Arrange hanger steak on top and top sandwich with grilled bread. Enjoy with a dark English-style beer like a stout or porter.

Time 48m

Yield 4 sandwiches

Number Of Ingredients 9

3 tablespoons olive oil
1 large red onion, sliced
3 tablespoons brown sugar
1/4 cup red wine vinegar
3 tablespoons water
1/2 pound Taleggio, cut into 8 slices
1/4 pound Gorgonzola, cut into 4 slices
4 tablespoons butter, softened
1 loaf crusty rustic Italian bread, sliced

Steps:

  • Heat the olive oil in a large skillet over medium-low heat. Add the onions and cook until soft and translucent about 10 to 15 minutes. • Butter the outside of each slice of bread and arrange, butter side down, on a sheet pan. Put 1 piece of Taleggio onto a slice of the buttered bread, then a piece of Gorgonzola. Top with a heaping tablespoon of the onion jam, and another slice of the Taleggio. Cover it another slice of bread. Repeat with remaining ingredients.
  • Heat a large skillet over medium-low heat. Put the sandwiches into the skillet and cook until the bread is toasted and golden and cheese is melted, about 4 minutes per side. Slice each sandwich in half and serve.

SEARED HANGER STEAK WITH RED ONION RINGS

Seared Hanger Steak with Red Onion Rings image

This is a simple recipe that makes everyone hungry. It's a good feeling to make your own onion rings and watch as people crunch down on them as they cut into this tasty steak. I serve the meat with a little vinegar so the onion rings get a salt and vinegar vibe when you eat the two parts of the dish together. This is not the type of dish that can be made in advance and held, so get everything ready and cook the meat and onion rings when you are ready to eat!

Provided by Alex Guarnaschelli

Categories     main-dish

Time 30m

Yield 4 servings

Number Of Ingredients 13

One 12-ounce beer, preferably a pale lager
One 2-ounce "shot" of vodka
1 cup sparkling water
1 teaspoon baking soda
1/2 teaspoon hot paprika
1 1/2 to 2 1/4 cups all-purpose flour, plus a little extra if needed
4 cups canola oil
4 medium red onions, peeled, cut into 2-inch rounds and pulled apart into individual rings
Kosher salt
2 tablespoons canola oil
One 2-pound piece hanger steak, trimmed of sinew and cut lengthwise into 2 pieces
Kosher salt
1 tablespoon balsamic vinegar

Steps:

  • Prepare the batter: Pour the beer into a medium bowl and stir in the vodka and sparkling water. Slowly whisk in the baking soda, paprika and 1 1/2 cups of the flour. The batter should be fairly thick but also easy to stir. If it's a little loose, whisk in the remaining 3/4 cup flour, 1/4 cup at a time. If it's too thick, add a splash of water. Do not overmix. Set aside in a warm place for at least 15 minutes.
  • Get ready to fry: Pour the oil into a heavy-bottomed pot. Heat the oil slowly to 375 degrees F. Use a thermometer to monitor the temperature. Line a baking sheet with a kitchen towel to drain the onion rings once they are cooked.
  • Cook the steak: Heat a large cast-iron skillet over high heat. Add the oil. When it begins to smoke lightly, season the steak with salt and use a pair of metal tongs to gingerly place the steak in the hot oil. Cook, 4 to 5 minutes, on each side.
  • Doneness: If using a meat thermometer, rare registers between 125 and 130 degrees F. For medium rare, 130 to 135 degrees F; and between 135 and 140 degrees F for medium. If you like your steak a little more cooked, leave it in the pan a few minutes longer on each side. Let it rest on a flat surface and cover with foil to keep warm while you make the onion rings.
  • Fry the onion rings: Test the batter and the temperature of the oil at the same time by dipping an onion round into the batter, gently shaking off the excess batter and carefully plunging it into the oil. Fry until crispy, 1 to 2 minutes, and remove it from the oil carefully with a slotted spoon. Fry the onion rounds in small batches, draining them on the kitchen towel-lined baking sheet. Salt immediately.
  • Serve: Slice the steak into 1/2-inch-thick pieces, season with salt and drizzle with the balsamic vinegar. Arrange on a serving platter with all the cooking juices and serve with the onion rings in a bowl on the side.

SIMPLE ONION AND BACON JAM

Simple Onion and Bacon Jam image

Bacon jam isn't just for burgers, add it to grilled cheese, waffles or roasted veggies, the possibilities are endless. I prefer the ratio of more onion to bacon but feel free to add additional bacon. I've made the consistency thicker than a traditional jam.

Provided by Bren

Time 30m

Yield 8

Number Of Ingredients 5

5 ounces smoked bacon, diced
3 cups finely chopped onions
2 tablespoons high-quality balsamic vinegar
1 tablespoon real maple syrup
2 tablespoons water, divided

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until fat has rendered and bacon is evenly browned but not yet crisped, about 5 minutes.
  • Remove all but 2 tablespoons of bacon fat. Add onions to the pan with the bacon and cook, stirring frequently, over medium heat until onions are soft and lightly browned, 5 to 6 minutes. Lower heat to a simmer and add balsamic vinegar, maple syrup, and 1 tablespoon water.
  • Simmer until jam comes together, 15 to 20 minutes. Stir in remaining tablespoon water and remove from heat.

MAPLE BACON CHEESECAKE RECIPE - (4.5/5)

Maple Bacon Cheesecake Recipe - (4.5/5) image

Provided by ROBandSEAN

Number Of Ingredients 25

Crust:
1 box vanilla wafers, such as Nilla
1 cup pecans
1/2 cup sugar
2 tablespoons ground cinnamon
1 stick butter, at room temperature
Filling:
2 pounds cream cheese
1/2 cup sugar
1/2 cup sour cream
4 eggs plus 2 yolks
1/2 cup maple syrup
1 teaspoon maple extract
8 ounces bacon, cooked until crisp and roughly diced
Topping:
8 ounces sour cream
1/4 cup sugar
1 cup maple syrup
1 tablespoon vanilla extract
4 tablespoons bacon fat
Candied Bacon Garnish:
8 ounces bacon
1/2 cup maple syrup
1 teaspoon maple extract
1/2 teaspoon fresh cracked black pepper, plus more to season

Steps:

  • Preheat the oven to 350 degrees F. For the crust: In a food processor, pulse the wafers, pecans, sugar and cinnamon until they reach a consistency that can be pressed. Work the butter into the mix until crumbly. Press uniformly into 1 large or 6 mini springform pans. Bake for 5 minutes. For the filling: In a stand mixer or with a hand mixer, mix the cream cheese and sugar until light and fluffy. Add the sour cream and mix well. Add the eggs and yolks one at a time; mix well and scrape down the sides before adding the next egg. Add the maple syrup and extract. Pour into the pan with the baked crust, stopping 1/2 inch from the top of the crust. Bake for 12 minutes (if using mini pans) or 45 minutes (if using a large pan). After 5 or 10 minutes (depending on the size of pan), put the pieces of bacon into the cheesecake. For the topping: Mix the sour cream, sugar, maple syrup, vanilla and bacon fat in a bowl. Carefully pour spoonfuls of the topping on the cheesecake from the outside edges to the middle of the top. Be careful to not overfill the pan. Bake for an additional 5 minutes. Carefully remove from the oven and cool in the refrigerator until set. For the candied bacon garnish: Cook the bacon until crispy and place on a rack. Mix the maple syrup with the extract and pepper and paint the mixture with a pastry brush on both sides of the bacon. Broil the bacon for 1 minute on each side. Crack more pepper over the bacon and cool until set. Garnish the cheesecake with the candied bacon

HANGER-STEAK AND ONION SANDWICHES

Hanger-Steak and Onion Sandwiches image

Forget the usual roast beef sandwich and really indulge -- in thick, juicy steak for lunch.

Provided by Martha Stewart

Categories     Beef Recipes

Yield Makes 4

Number Of Ingredients 9

4 hanger steaks (each about 1 inch thick and 6 ounces)
1 teaspoon coarse salt
Pinch of freshly ground pepper
4 medium beefsteak tomatoes, cut into 1/2-inch-thick slices
2 tablespoons vegetable oil
2 teaspoons unsalted butter
2 large onions, cut into 1/4-inch-thick rings
1 long baguette (about 22 inches) cut crosswise into 4 pieces and split horizontally
3 tablespoons hot mustard

Steps:

  • Preheat a grill to medium-high (if using a charcoal grill, coals are ready when you can hold your hand 5 inches above grill for just 3 to 4 seconds). Alternatively, heat a grill pan over medium-high heat until hot.
  • Season steaks with the salt and pepper. Grill, turning once, 7 minutes total for medium-rare. Transfer steaks to a cutting board, and let rest 5 minutes.
  • Meanwhile, grill tomato slices, turning once, until soft, about 4 minutes total.
  • Heat oil and butter in a large skillet over medium-high heat until hot but not smoking. Add onions; cook, stirring occasionally, until golden, about 8 minutes.
  • Cut steaks against the grain into 1/4-inch-thick slices. Spread each of the 4 baguette bottoms with 2 1/4 teaspoons hot mustard. Top with steak slices, tomatoes, onions, and the 4 baguette tops. Wrap sandwiches in waxed paper; refrigerate until ready to serve.
