HARISSA GRILLED SHRIMP SALAD
Steps:
- Soak bamboo skewers in water for 30 minutes before using. Or you can grill shrimp directly with no skewers.
- Mix together olive oil, soy sauce and harissa paste in a mixing bowl.
- Add the shrimp to the bowl and mix until coated.
- You can cook straight away or leave to marinate the shrimp for between 30 minutes to 24 hours.
- Thread about 5 shrimp to each skewer (if using skewers)
- Preheat the grill (or charcoal grill) to medium heat, oil the grates and grill the shrimp for 2-3 minutes per side until opaque.
- Transfer grilled shrimp to a plate and set aside.
- Make harissa dressing by mixing all ingredients together.
- Assemble your salad and add shrimp to top.

- Preheat a grill to medium-high heat according to manufacturer’s instructions. (This should take about 30 minutes if using charcoal.) Alternatively, you can use a broiler on high or a grill pan on the stove over medium-high heat.
- Meanwhile, make the cucumber salad. Whisk olive oil, white wine vinegar, ½ teaspoon honey, and salt. Add cucumbers and chopped herbs and toss to coat in dressing. Cover and refrigerate until ready to serve and up to 6 hours ahead.
- Make the marinade. Add garlic, citrus juice and zest, harissa spice blend, and olive oil to a medium bowl and whisk to combine. Set aside.
- Make the shrimp. Season shrimp with salt and pepper. Add remaining honey and toss to evenly coat shrimp. Once grill is preheated, place shrimp 1” apart and cover. Cook for about 5 minutes on the first side, then flip and continue cooking until shrimp are completely cooked through, about 1-2 minutes more. Remove shrimp from the grill and add immediately to marinade, tossing to coat.

- Whisk together the harissa, lemon juice and zest, olive oil, salt and pepper. Add the prepared shrimp. Set aside while the salad is prepared.
- In a medium saucepan, combine broth or water, turmeric, cinnamon, cumin, ginger, salt, and pepper. Bring to a boil. Add couscous. If using quick cooking couscous, remove from heat, and cover. Check package instructions. Israeli couscous or my toasted couscous requires cooking and draining according to package instructions. Drain, then fluff with a fork. Allow to cool.
- Thread the marinated shrimp on skewers (or cook in a grill basket. Grill the shrimp on medium high heat for 1-2 minutes per side. Don't overcook!
- Add the apricots, almonds or pine nuts, zucchini, bell pepper, onion, and chick peas to a large salad bowl. Add the cooled couscous.
