HATCH RED CHILE GROUND BEEF ENCHILADAS

1 pound extra lean ground beef
2 tablespoon olive oil
1 cup onion, chopped
2 cloves garlic, minced
1 teaspoon red chile powder
1 teaspoon taco seasoning
10 corn tortillas
1 (15 ounce) Hatch Red Chile Enchilada Sauce
8 ounces shredded cheese
Lettuce, diced tomatoes, cilantro leaves, and sliced black olives for garnish.

Steps:

  • In a large skillet add olive oil and ground beef.
  • Cook over medium high heat.
  • Add onion, garlic, red chile powder, and taco seasoning.
  • Mix well.
  • Cook until ground beef is fully cooked.
  • Once cooked remove pan from heat.
  • On a cutting board lay out one corn tortilla and fill with beef mixture and shredded cheese.
  • Roll enchilada and place in shallow casserole pan.
  • Repeat until your pan is lined with ten enchiladas. (Move quickly as the tortillas dry out quickly.)
  • Pour red enchilada sauce over enchiladas, making sure to cover evenly.
  • Bake in a preheated 350 degree F. oven for 20 minutes.
  • Sprinkle rolled enchiladas with cheese and put back into oven for additional 5 minutes to melt cheese.
  • Remove from oven and garnish with shredded lettuce, diced tomatoes, cilantro leave, and sliced black olives.
  • Serve two rolled enchiladas per person.

  • Remove the stems and seeds from the dried chile pods. Toast the chile pods in a heavy skillet over medium heat until they are warm and release their fragrance, 1 to 2 minutes per side. Remove the chile pieces and place into a sauce pan and cover with water. Bring to a boil, reduce the heat and simmer for about 10 minutes until the chile is soft. Remove the chile from the liquid and place into a blender or food processor. Blend until a smooth paste. Strain the paste, pushing through with the back of a spoon. This takes a few minutes. You just want to keep straining, pushing the puree through leaving behind any skin or seeds, adding a lilttle water if you need to. Warm the oil in a skillet, add the onion and garlic and cook until the onion is limp. Add the chile mixture to the onion mixture, along with the oregano and salt , adding more water. You want a pourable sauce, not a thick sauce. Cook for about 15 minutes, taste and adjust the seasonings. When ready the sauce will coat the back
  • Heat a large skillet with a little oil. When sizzling, place a corn tortilla in the oil for just a second to soften and remove to a paper towel. I place one side of the tortilla in oil, place the not oiled side up, repeat the process and put the oil side onto the unoiled previous tortilla. Sounds complicated, but not turning in the skillet and letting both sides into the oil helps with the tortillas holding together and to not fall apart...so basically your first tortilla is oil on the bottom, none on top but you'll top that with the oiled one, on and on. Set the tortillas aside.

  • Using a gas stove or broiler, roast peppers until they are charred on all sides. Place in a bowl and cover with plastic wrap or in a sealed ziplock baggie and steam. Let them steam for 10-15 minutes while you cook the beef. Peel the skin off the peppers and seed. Chop.
  • Heat a large non-stick skillet to a medium-high heat. Add olive oil. Once the oil is hot, add onion, garlic and ground beef. Saute until beef is brown and cooked through, about 7-8 minutes. Drain fat if necessary. Add in ½ cup of chopped peppers and ½ teaspoon of salt. Cook another minute. Remove from heat and season to taste with salt and pepper. Cool slightly and stir in one cup of pepper jack cheese.
  • Add half of the warm chicken stock to a blender along with ⅓-1/2 cup of the chopped hatch peppers. TASTE THE PEPPERS and see how hot they are in relation to your palate. I like to start with a 1/3 of a cup and then add more if needed. Blend until smooth.
