4 small boneless skinless chicken breasts (1 lb.)
1 small onion, cut into 4 slices
4 kaiser rolls, partially split
1/4 cup MIRACLE WHIP Dressing
4 KRAFT Big Slice Swiss Cheese Slices
4 drained canned pineapple rings

Steps:

  • Heat grill to medium heat.
  • Grill chicken and onions 12 to 16 min. or until chicken is done (165ºF), turning both after 6 min. and removing onions after 10 min. or when tender.
  • Spread cut sides of rolls with dressing.
  • Fill with chicken, onions, cheese and pineapple.

4 tablespoons honey
8 ounces thinly sliced turkey
4 slices monterey jack cheese
1 cup pineapple slice
4 leafy lettuce leaves

Steps:

  • Brush one side of each bread slice with oil. Place oiled side down. Spread with honey.
  • Top with turkey, cheese, pineapple and lettuce. Cover with remaining bread slices.
  • Grill 3-4 minutes or until cheese is melted and sandwich is golden brown.

3 tablespoons butter or margarine, softened
8 slices bread
4 slices Swiss cheese
8 slices thinly sliced cooked ham
1 (8 ounce) can crushed pineapple, drained

Steps:

  • Heat a large skillet over medium-high heat. Spread butter onto one side of each slice of bread. Place up to 4 of the slices of bread, butter side down in the skillet. Top each piece with one slice of cheese, two slices of ham, and about 2 tablespoons of the crushed pineapple. Place remaining slices of bread on top with the butter side up. When the bottom of the sandwich is golden brown, flip sandwiches, and cook until browned on the other side, about 1 minute. Repeat steps with remaining ingredients if all four sandwiches do not fit in your skillet.

4 slices fresh pineapple, about 1/4 inch thick
6 -7 slices ripe plum tomatoes, about 1/4 inch thick
4 slices Hawaiian bread
1 tablespoon salted butter
4 slices Fontina cheese
4 ounces sliced ham (thinly sliced)
3 ounces fresh mozzarella cheese, thinly sliced (note-use fresh mozzarella)
1 pinch red pepper flakes (optional)

Steps:

  • Preheat oven to 375 degrees. Line a baking sheet with parchment paper or foil.
  • Arrange the pineapple and tomato slices on the prepared pan and bake for 12 minutes, or until the surfaces appear dry but not yet browned, turning the pieces over halfway through. Remove from the oven; set aside.
  • Heat a cast iron or nonstick skillet over medium-low heat.
  • Spread the butter on one side of each bread slice, dividing it evenly. Place two of the bread slices, buttered side down, on a clean cutting board. Layer two slices of the fontina, half of the ham, three or four slices of the roasted tomato, one or two rings of roasted pineapple, and half of the mozzarella on top of each. Sprinkle with the red pepper flakes (if using). Finish with the remaining slices of bread, buttered side up.
  • Using a wide spatula, place both sandwiches in the pan, cover, and cook until the bottoms are nicely browned, about four minutes. Turn carefully and cook until the second sides are browned, the cheese is melted, and the other ingredients are heated, through, about four minutes longer.
  • Cut the sandwiches in half, if desired, and serve immediately.
