PERFECT HASH BROWNS

- Peel potatoes. Coarsely shred potatoes using a handheld shredder or a food processor with a coarse shredding blade.
- Place shredded potatoes in a large bowl; add enough cool water to cover potatoes. Stir well. Drain in a colander set in a sink. Repeat rinsing and draining two or three times until water runs clear. Drain again, pressing out as much water as you can with a rubber spatula. Line a salad spinner with paper towels; add potatoes and spin.* Repeat, if necessary, until potatoes are dry. Transfer potatoes to a large bowl. Sprinkle potatoes with salt and pepper, tossing to combine.
- In a 10-inch nonstick skillet** heat 1 tablespoon of the oil and the butter over medium-high heat until butter foams. Add potatoes to the skillet, spreading into an even layer. Gently press with the back of a spatula to form a cake. Reduce heat to medium. Cook, without stirring, about 12 minutes or until the bottom is golden brown and crisp.
- Invert a baking sheet or plate over the top of the skillet. Carefully invert the skillet with the baking sheet or plate to transfer the potatoes to the baking sheet or plate. If needed, add the remaining 1 tablespoon oil to the skillet. Using the baking sheet or plate, slide the potatoes back into the skillet, uncooked side down. Cook, without stirring, about 8 minutes more or until the bottom is golden brown. If desired, sprinkle with paprika before serving.

Steps:
- Gather the ingredients.
- Use the grater attachment of a food processor or a hand grater to shred the cooked and cooled potatoes.
- Heat your griddle or skillet over high heat and add the oil and/or clarified butter.

- Peel the potatoes and discard the skins, placing the potatoes in a bowl of cold water to keep them from discoloring.
- Meanwhile, bring 3 cups of water to a boil with the salt and sugar in a medium saucepan. When the water is boiling, grate the potatoes through the large hole of a box grater and add them to the boiling water. Cook for three minutes.
- Remove the potatoes to a strainer and run them under cold water to stop the cooking process.
- Transfer the potatoes to a cheesecloth-lined strainer and squeeze out most of the excess water. There should be some water remaining to help bind with the flour, but the potatoes should not be dripping wet.
- Place the strained potatoes in a medium bowl and mix with the rice flour, corn flour, onion powder, and white pepper.
- Form four patties about 1/4 cup each and shape them into large ovals.
- Freeze the patties for one to three hours, until they're hardened all the way through.
- In a large sauté pan, heat an inch of oil over medium-high heat until it's shimmering.
- Carefully add the potato patties to the hot oil, splitting them into two batches if necessary to avoid overcrowding the pan.
- Flip the hash brown halfway through, cooking for 4 to 5 minutes per side until they're golden brown and crispy on both sides.
- Remove the hash brown to a paper towel-lined plate.
- Serve hot.

- Heat a 12-inch nonstick skillet over medium heat.
- Toss the potatoes with the granulated garlic, paprika, cayenne and some salt and pepper in a medium bowl.
- Add half of the butter and half of the oil to the skillet. Let melt, and then add the potatoes, pressing them down with a spatula. Cook until crisp and golden brown on one side, 5 to 7 minutes.
- Set a baking sheet or a large plate over the skillet and carefully invert the potatoes onto the baking sheet. Add the remaining butter and oil to the skillet and slide the potatoes back in, un-cooked side down, and cook until golden and crispy on the second side as well, 4 to 5 minutes.
- Slide onto a cutting board and cut into wedges to serve.

- I recommend a really good cast iron skillet to make homemade hash browns. I absolutely love my cast iron skillet. Heat skillet over a med heat on the stove. Peel the potatoes with a sharp potato peeler.
- Using a cheese grater, grate the potatoes. This is the new one I bought just for this post and it is super sharp. Don't grate your fingers. This hurts. Trust me I know I found out the hard way.
