Pvw's Healthier Take on Chicken Cordon Bleu image

I like Chicken Cordon Bleu... but not as much as it likes to stick to my stomach, rear, and legs. I've created this healthier version to serve instead, and my family really enjoys it. I hope you do too!

4 boneless skinless chicken breasts
4 slices swiss cheese, thin slices
4 -8 slices deli ham, thin slices
salt free herb and spice seasoning mix, we use Mrs. Dash Table Blend
1 teaspoon garlic, minced (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Butterfly each chicken breast (cut it length wise with out cutting all the way through). Open it up and sprinkle the inside of the chicken with seasoning mix (Mrs. Dash).
  • Place one slice of cheese inside each of the chicken breasts along with 1-2 slices of ham. I like to fold the cheese in half so it fits better in the chicken and is not hanging out.
  • Sprinkle a little bit of the 1 teaspoon of garlic on each folded combo of ham & cheese. Then fold the chicken over to close like a packet. Secure the chicken roll closed by using a toothpick.
  • Sprinkle seasoning mix on outside of chicken (I also like to sprinkle the bottom as well). Place in an oven safe dish and cover with foil.
  • Bake chicken for 30-40 minutes or until fully cooked.
  • To get a nice golden brown color you can remove the foil after 15-20 minutes or so. Or you can broil the tops for 3-6 minutes when chicken is fully cooked.

Chicken Cordon Bleu Casserole - Easy/Healthy Version for Two image

This is one of my favorite healthy comfort foods. I use to make the cream sauce from scratch and boil the chicken then shread it...I found a way to simplify and make it healther...and it's just as good! I usually serve this over whole wheat noodles or brown rice but it's also good with mashed potatoes.

1 (8 ounce) can white meat chicken
3 -4 slices deli ham
1 tablespoon vegetable oil
3/4 cup cheddar cheese, shreaded sharp (Kraft's 2% is good!)
0.5 (10 ounce) can low-fat cream of celery soup (freeze the rest for later!)
2 tablespoons skim milk
1/2 teaspoon dill
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/8 teaspoon nutmeg
salt & pepper
3 tablespoons breadcrumbs

Steps:

  • Heat oven to 350
  • Pour oil in a large skillet and heat over med-high heat.
  • Drain chicken from can and add to heated oil.
  • Tear apart ham (bitesize pieces) and add to skillet.
  • Keep stirring chicken/ham mixture around in skillet until chicken is slightly browned and there should be no oil left - it should all be absorbed.
  • (appx 5 minutes total).
  • Transfer chicken/ham mixture from skillet to a 9x9 (or close to 9x9) baking dish, add 1/2 cup of cheese, and set aside.
  • Return skillet to stove and turn heat down to medium. Pour in the cream of celery soup and gradually add milk and stir to make smooth. Keep it bubbling for about a minute then turn down to low.
  • Add dill, garlic, onion, nutmeg, and salt & pepper to soup mixture and stir until blended. Pour soup mixture over chicken/ham/cheese mixture and gently stir until everything is covered.
  • Sprinkle bread crumbs on top then sprinkle on the remainder (1/4 cup) of the cheese. I usually then sprinkle on some more dill and black pepper but it's just for presentation.
  • Bake at 350 for about 20 minutes.

  • Preheat oven to 425°F. In a small bowl, mix together panko and olive oil until panko bread crumbs are coated. Set aside. Spray baking sheet with nonstick cooking spray and place chicken (butterflied open) on sheet. Season both sides of chicken with salt and pepper.
  • Spread ham slices (I cut mine in half to fit) over one half of each chicken breast. Layer cheese slices on top of ham slices.
  • Fold chicken over the ham and cheese. Brush the top of each chicken breast with about ½ teaspoon Dijon mustard. Cover with panko bread crumb/olive oil mixture.
  • Bake for 20 minutes or until cooked through. Internal temp with an instant read thermometer should be at least 165°F.

  • Cut a horizontal slit along the thin, long edge of a chicken breast, nearly through to the opposite side. Open up the breast and place 2 slices of ham and 1 slice of cheese in the center. Close the breast over the filling, pressing the edges firmly together to seal. (Secure with toothpicks, if desired.) Repeat with the remaining chicken breast. Sprinkle the chicken with salt. Hold each stuffed breast together and dip in the flour, then in the egg mixture, and then dredge in the breadcrumbs. (Discard leftovers.)

  • Preheat the oven or the air fryer to the temperature required for your cooking method (see below). Prepare the egg wash by beating the egg and water in a shallow bowl. Prepare the breading station by mixing the bread crumbs, parmesan, and seasonings together. Set aside.
