2 pork and venison sausages (we like Waitrose)
4 parma ham slices
1-2 tbsp cold-pressed rapeseed oil
100g button mushrooms, halved
4 large free-range eggs (see tip)
2 sourdough slices

Steps:

  • Heat the oven to its lowest setting and the grill to medium. Grill the sausages for 10 minutes. Turn, add the ham, then grill for another 5 minutes or until cooked. Transfer the meat to a roasting tin and put in the oven to keep warm. (If you don't have a separate grill, put the roasting tin in the bottom of the oven, loosely covered with foil.)
  • Meanwhile, heat 1 tbsp of the oil in a large frying pan, then cook the mushrooms for 5 minutes or until softened and coloured. Keep warm.
  • Bring a medium pan of water to a simmer. Crack each egg into atea cup, then gently drop 2 into the water, keeping them apart(see tip). Poach for 2-3 minutes for runny yolks, then pat dry with kitchen paper. Repeat with the other 2 eggs (see Make Ahead).
  • Lightly brush the sourdough with the remaining oil, then grill for 2 minutes on each side. Serve each slice of toast topped with 2 eggs, half the parma ham and mushrooms, and a good grinding of pepper, with a sausage on the side.

This is the version I make most weekends, especially if there are guests or I've over-indulged with drinks the night before. You can leave out anything you don't have and can include other ingredients such as, black pudding, baked beans (the Heinz UK version) or even scrambled eggs.

¼ cup vegetable oil
1 link pork sausage
1 frozen hash brown patty
2 thick slices bacon
1 tomato, cut in half
4 mushrooms, sliced
1 egg
1 slice white bread
1 teaspoon butter, or as needed

Steps:

  • Heat the oil in a skillet over medium heat. Add the sausage and hash brown. Fry until browned on one side, about 5 minutes. Turn them over to fry on the other side and add the tomato, bacon and mushrooms. The idea is to start cooking with the things that take the longest.
  • When the tomato, bacon and mushrooms are just about cooked, crack the egg into the center and allow to cook. You might want to add a little more oil just to crisp the edges. Toast the slice of bread while the egg cooks and then spread butter on it. Serve everything on a plate with the toast on the side.

2 tbsp rapeseed oil
1 small onion , finely sliced
3 garlic cloves , 1 crushed, 2 whole
1 heaped tsp sweet smoked paprika
400g can cannellini beans , drained and rinsed
½ x 400g can chopped tomatoes with herbs
1 tbsp reduced-salt brown sauce
300g Portobellini or chestnut mushrooms , halved
3 thyme sprigs , plus extra to serve
400g cherry tomatoes on the vine
8 chipolatas
4 medium eggs

Steps:

  • Heat oven to 200C/180C fan/gas 6 and heat 1 tbsp of the oil in a small saucepan. Add the onion and fry over a medium heat for 8-10 mins, or until softened and starting to turn golden brown. Add the crushed garlic and paprika and cook for 1 min more, then add the beans, chopped tomatoes and brown sauce and bring to the boil. Lower to a simmer and cook for 10-12 mins, stirring occasionally. Cover to keep warm and set aside.
  • Meanwhile, toss the mushrooms, thyme and cherry tomatoes in a roasting tin with the remaining garlic and oil. Roast for 12 mins until the mushrooms and tomatoes are soft, then remove from the oven and cover to keep warm. Turn the grill to its highest setting. Put the chipolatas on a foil-lined baking sheet and grill for 4-5 mins on each side, or until golden brown and cooked through.
  • Crack the eggs into a small bowl. Bring a pan of lightly salted water to the boil and swirl vigorously with a wooden spoon to create a whirlpool. Once the whirlpool has almost subsided, tip in one egg, then lower the heat and gently cook for 3 mins. Scoop out with a slotted spoon, transfer to a plate and repeat with the remaining eggs. Serve the roasted veg with the sausages, eggs and beans, season and scatter with thyme leaves.
