Lemon Squares image

Lemon squares are so delicious, but classic lemon square recipes tip the scales with their calories and saturated fat. Our healthy lemon squares recipe shaves almost 200 calories and more than 5 grams of saturated fat per lemon square. For a variation, use lime juice in place of the lemon juice.

1 cup white whole-wheat flour or all-purpose flour
⅓ cup confectioners’ sugar
3 tablespoons cornstarch
¼ teaspoon salt
3 tablespoons canola oil
2 tablespoons butter, softened
½ cup granulated sugar
3 tablespoons cornstarch
¼ teaspoon baking powder
⅛ teaspoon salt
2 large eggs
⅔ cup water
⅓ cup lemon juice
Lemon zest for garnish
Confectioners’ sugar for garnish

Steps:

  • Preheat oven to 350 degrees F. Line an 8-inch-square baking pan with foil and generously coat it with cooking spray.
  • To prepare crust: Combine flour, confectioners' sugar, 3 tablespoons cornstarch and 1/4 teaspoon salt in a medium bowl. Add oil and butter; using your fingertips, blend into the flour mixture until evenly combined. The mixture will be a little crumbly. Firmly press the dough into the prepared pan. Bake the crust until just barely beginning to brown around the edges, 15 to 20 minutes.
  • To prepare filling: Whisk granulated sugar, cornstarch, baking powder and 1/8 teaspoon salt in a medium bowl until well combined. Whisk in eggs. Stir in water and lemon juice. Pour the filling over the crust.
  • Bake until just set, 18 to 20 minutes. (The center should still be a little jiggly--it will firm up as it cools.)
  • Let cool to room temperature in the pan on a wire rack, about 1 1/2 hours. Gently lift out of the pan all in one piece using the edges of the foil. Cut into 9 squares. Garnish with lemon zest and dust with confectioners' sugar, if desired, just before serving.

I'd lost my family recipe for lemon squares and spent a lot of time trying new ones that would measure up. None did, but thankfully I recently found the recipe again. Best lemon squares out there.

2 cups all-purpose flour
1 cup cold butter
½ cup confectioners' sugar
2 cups white sugar
4 eggs
¼ cup all-purpose flour
¼ cup lemon juice, or more to taste
1 teaspoon baking powder
1 teaspoon lemon zest, or to taste
confectioners' sugar for dusting

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Process 2 cups flour, butter, and 1/2 cup confectioners' sugar in a food processor until mixture resembles coarse crumbs; press into the prepared baking dish.
  • Bake in the preheated oven until the edges of the crust are golden brown, 18 to 22 minutes. Cool crust to room temperature.
  • Beat white sugar, eggs, 1/4 cup flour, lemon juice, baking powder, and lemon zest together in a bowl using an electric mixer until light and fluffy; pour onto the cooled crust.
  • Bake in the oven until custard is set, 25 to 28 minutes. Cool lemon squares completely; dust the top with more confectioners' sugar.

Normally my family balks at healthy recipes, but my husband was coming back for more of these, and today finished them off (so much for my evening dessert!). I'm posting this to keep handy for myself.

1 cup whole wheat flour
1/4 cup oat bran
1/4 cup sugar or 1/4 cup sucanat
1 dash sea salt
1/3 cup whole almond
1/4 cup unsalted butter
2 eggs
1/2 cup sugar
1 tablespoon grated lemon, rind of
3 tablespoons fresh lemon juice
1/4 teaspoon baking powder
1/8 teaspoon sea salt

Steps:

  • Preheat oven to 350°F For base: Chop almonds very fine.
  • Mix dry ingredients, and cut in butter until mixture resembles coarse meal.
  • Press into 8x8 pan coated with cooking spray.
  • Bake 18 minutes.
  • NOTE: I might add more butter next time I do this; the base was a bit too crumbly.
  • For topping: Beat all ingredients on high for 3 minutes or until light and fluffy.
  • Pour over baked base; bake 20 minutes; cool.
  • Dust with powdered sugar.

1/3 cup raspberry jam
2 eggs
1 (212 g) package lemon pie filling mix
1/2 cup ground almonds
1/4 cup sliced almonds

Steps:

  • Combine flour and sugar, then butter until the mixture clumps together.
  • Press firmly into 8" square pan.
  • Bake at 350 degrees 15-18 minutes or until lightly browned.
  • Remove from oven and spread with jam.
  • Beat eggs until light and creamy.
  • Beat in pie filling powder and ground almonds.
  • Pour over jam layer.
  • Sprinkle with sliced almonds.
  • Bake 20-25 minutes at 350 or until set and firm to touch.
  • Cool and cut.
  • For Lemon Coconut squares sub 1 1/2 cups flaked coconut for the ground almonds and sliced almonds.
